Caracteriza??o comportamental e avalia??o da qualidade de leite em caprinos da ra?a saanen no semi?rido nordestino

The quality and productivity of the goat s milk can be influenced by the dominance hierarchy. In this context, the objectives of our work were describe the social and food behavior of Saanen goats in a semi-extensive production system; characterize the social organization from the assessment of dominance hierarchies in two seasonal periods and correlate the physicochemical quality of the goats milk according hierarchical position. The experiment was conducted in the EMPARN s experimental station, located in the district of Cruzeta/RN. We utilized 17 multiparous goats of the Saanen race, with different age and weight. The observations were performed in precipitation and drought phases. The scan method recorded the trough permanence and agonistic interactions by method "all occurrences" in the pasture the alimentary behaviors of eat, ruminate on foot, ruminate lying, leisure on foot, leisure lying and walk, by the focal animal sampling method. The goats milk was submitted to analyzes of: density, protein, fat, lactose, CSS and total solids. The animals spend most of the time feeding themselves, and the activities that demand greater energy expenditure are done in the morning. The animals changed the hierarchical structure during the seasonal periods because of the withdrawal of some individuals of the group, having more aggressive behavior in the rainy season. The dominant animal the lowet production, the more CSS and the lesser fat, the goat in the middle of the hierarchy was the one that obtained the best production and quality. We conclude that the Saanen goats adapt to the environment and the conditions of the group to ensure better survival and its production is influenced by the internal dynamics of the group / Os caprinos s?o animais sociais, cujos grupos s?o organizados a partir de hierarquias de domin?ncia, em geral estabelecidas atrav?s de comportamentos agon?sticos. A qualidade e produtividade do leite de cabras pode sofrer influ?ncia da hierarquia de domin?ncia. Dentro desse contexto, os objetivos do nosso trabalho foram, caracterizar o comportamento social e alimentar dos caprinos da ra?a Saanen em um sistema de produ??o semi-extensivo, caracterizar a organiza??o social a partir da avalia??o das hierarquias de domin?ncia em dois per?odos sazonais e correlacionar a quantidade e qualidade f?sico-qu?mica ao posto hier?rquico. O experimento foi realizado na esta??o experimental da EMPARN no munic?pio de Cruzeta/RN. Utilizamos 17 cabras de peso e idade variada. As observa??es foram realizadas na fase de chuva e seca. Pelo m?todo scan registramos a perman?ncia no cocho e as intera??es agon?sticas pelo m?todo todas as ocorr?ncias . No pasto os comportamentos de comer, ruminar em p?, ruminar deitado, ?cio em p?, ?cio deitado e andar, pelo m?todo animal focal. O leite das cabras foi submetido a an?lises de densidade, prote?na, gordura, lactose, CCS e s?lidos totais. Os animais passam a maior parte do tempo no comportamento de comer e as atividades que exigem maior gasto de energia foram realizadas no per?odo da manh?. A estrutura hier?rquica durante os per?odos sazonais sofreu mudan?as em fun??o da retirada de alguns indiv?duos do grupo, tendo mais comportamentos de agress?o no per?odo da chuva. O animal dominante obteve menor produ??o, maior CCS e menor gordura, enquanto animais intermedi?rios na hierarquia obtiveram melhor produ??o e qualidade do leite. Conclu?mos que as cabras da ra?a Saanen se adaptam ao ambiente e ?s condi??es de grupo para garantir melhor sobreviv?ncia e sua produ??o ? influenciada pela din?mica interna do grupo
