La société urbaine à Tours et l’animal (14e-17e s.) : approche archéozoologique / Urban society and animals in Tours (14e-17e C.) : zooarcheological approach

Ce travail de recherche a été réalisé à partir de l’étude de plus de 64 000 restes osseux provenant de 39 ensembles chrono-stratigraphiques issus de 7 sites répartis entre la ville et ses faubourgs. A l’aide de ce mobilier inédit, cette étude s’est attachée à appréhender, au travers des restes osseux, la ville dans ses dimensions économiques, culturelles et sociales entre les 14e et 17e siècles. Ainsi, au travers des études des proportions d’espèces, des âges et des sexes des animaux consommés, il a été possible de dresser les grandes tendances de l’approvisionnement de la ville durant ces quatre siècles tout en s’attachant à montrer la multiplicité des modes d’acquisition des animaux domestiques comme sauvages. Pour s’approvisionner en bétail, Tours met à contribution non seulement les élevages locaux consacrés à la production de viande mais aussi ceux qui produisent lait et laine. Ce travail a aussi mis en lumière aux portes de la ville le traitement industriel des carcasses de bœufs (traitement boucher et collecte de graisse). Cette étude a permis de caractériser le régime en viande des citadins et de différents contextes sociaux de la ville et notamment de mettre en évidence la grande différence dans le régime en viande qui existe à Tours entre les élites religieuses, qui se nourrissent de pièces de viande de qualité, et le reste de la population, plus particulièrement les commerçants et artisans urbains, dont l’alimentation est marquée par une forte consommation d’abats. / This research was conducted on the basis of over 64,000 bone remains from 39 chronostratigraphic units gathered from 7 sites located throughout the city of Tours and its immediate surroundings. The objective of this study was to use this unprecedented collection to size the economic, cultural and social dimensions of the city from the 14th to the 17th century through faunal remains. Thanks to the analysis of the proportions of species of animals eaten by age and gender, it is possible to define the main trends of meat supply in Tours over the period of time considered as well as to describe the many different ways of acquiring domestic and wild animals. In order to cater to its cattle need, Tours used local livestock bred for meat as well as milk and wool production. This research also sheds light on the industrial processing of beef carcasses (meat processing and fat collection). It is also possible to define the meat diet of city dwellers and of various social contexts of the city, highlighting for instance the difference in the meat diet of the religious elite, who ate prime cuts, and the rest of the population, more specifically city shopkeepers and craftsmen, whose diet mainly comprised of offal.

L'objectif de ce travail est d'appréhender les processus de la formation du tissu urbain de l'agglomération de Châteauneuf, créée autour de la collégiale Saint-Martin au cours du Moyen Âge à l'ouest de la cité de Tours. La complexité de cet espace, la densité et la diversité de la population à cette période ainsi que la richesse architecturale identifiée dans cette zone en font un terrain privilégié d'analyse de la fabrique urbaine, c'est-à-dire des relations entre l'espace urbain et les sociétés qui l'ont produit. L'étude des vestiges architecturaux médiévaux en pierre, associée à celle de sources complémentaires comme les sources textuelles, permet de proposer à la fois une synthèse typologique sur les constructions médiévales et une réflexion à l'échelle du parcellaire et de l'agglomération, pour mettre en évidence les formes urbaines et leurs transformations du 10e au 14e siècle / The purpose of this thesis is to understand the processes of the urban fabric in the town of Châteauneuf, created in the Middle Ages around the St-Martin's basilica, near the city of Tours. The complexity and density of the settlement together with the diversity of the inhabitants make this place a preferential area in order to study urban fabric and relations between space and societies which created it. The architectural analysis of stone buildings, combined with other data such as historical sources, allows the creation of a typological synthesis of the medieval buildings but also the analysis of the urban forms and their evolution between the 10th and the 14th centuries

Pratiques langagières et rapports aux identités linguistiques chez les enseignants et les élèves du Haouz : cas des lycées d'Aït Ourir (Maroc) / Language practices and relations with linguistic identities of teachers and students in high schools of Ait Ourir, Haouz, Morocco

Cette recherche a pour objet l’étude de la manifestation des langues au niveau du répertoire linguistique et au niveau du répertoire identitaire dans un milieu plurilingue, à savoir les lycées d’Aït Ourir au Maroc. Au niveau de la pratique, l’analyse des conversations a dévoilé que l’alternance codique est une pratique courante chez les enseignants et les élèves et que le poids de chaque langue dépend de son utilité. Au niveau identitaire, l’identité plurilingue est dominante et le poids de chaque langue correspond à celui de la biographie linguistique de nos enquêtés. Le rapport entre le répertoire linguistique et le répertoire identitaire est disproportionnel. En effet, la comparaison synchronique a dévoilé que les langues de notre étude n’ont pas le même poids aux deux niveaux. D'une part, les tours monolingues sont dominants par contre l’identité monolingue est faible. D'autre part, les tours mixtes n’ont pas de poids tandis que l’identité plurilingue est prépondérante. En outre, la comparaison diachronique a permis de déduire que le changement est continu au niveau de la pratique alors qu’il tend à être stable au niveau identitaire de l’adolescence à l’âge adulte. Ce qui indique que l’identification en une langue ne dépend pas de sa pratique. / This research aims at studying the different aspects of language use at the levels of linguistic and identity repertoires in a multilingual environment; namely high schools in Aït Ourir, Haouz Province, Morocco. The analysis of conversations in the daily usage of languages revealed that Code Switching is a common practice among teachers as well as pupils; and that the weight of each language used depends more on its usefulness to the purpose of speaking. At the identity level, multilingual identity is dominant and the weight of each language is dependent up on the linguistic biography of the person surveyed. Thus, the relationship between the linguistic and identity repertoires is disproportionate. Indeed, synchronically comparing the languages in study confirmed that they don’t have the same weight at the two levels. The monolingual turn-taking is dominating whereas the monolingual identity is weak. On the other hand, the mixed turn-taking is meaningless whilst multilingual identity is significant. Moreover, the diachronic comparison enabled us to deduce that the change is ongoing in practice while it seems steady from adolescence to adulthood which shows that identifying in a language doesn’t depend on its practice.

Au VIème siècle après J.-Ch., les structures de la langue latine ne correspondent plus tout à fait aux normes de la langue classique, aussi bien du point de vue morphologique et sémantique que syntaxique. A travers l’étude comparative des constructions absolues entre un corpus d’auteurs classiques et un corpus d’auteurs tardifs, nous montrons l’émergence de nouvelles valeurs du participe, particulièrement le participe passé actif de verbes non déponents, en latin tardif, ou plus exactement une fréquence accrue de valeurs parfois attestées en latin classique et archaïque. / In the 6th century A.D., the structures of the Latin language no longer entirelycorrespond to the norms of Classical Latin, from a morphological and semantic perspective aswell as a syntactical one.By means of a comparative study of absolute constructions in a corpus of classicalauthors and a corpus of later authors, we show the emergence of new participle values, inparticular the active passive participle of non-deponent verbs in Late Latin, or more precisely,a greater frequency of values sometimes attested in Classical and Archaic Latin.

Le déambulatoire à chapelles rayonnantes a toujours été considéré comme un élément de luxe et de modernité pour les chevets des églises romanes. Défini comme un collatéral pourtournant le rond-point d'un sanctuaire d'église, il a généralement été associé à l'idée d'une circulation de pèlerins autour de reliques particulièrement insignes. Principalement concentrés dans les provinces de la Loire moyenne, les chevets très précoces (Xe-première moitié du XIe siècle) relevant de ce type architectural montraient des caractères encore peu aboutis. Afin de développer une lecture par le biais de l'archéologie du bâti, quatre collégiales ont retenu l'attention : Saint-Aignan d'Orléans, dont le chevet fut réalisé à l'image de la cathédrale de Clermont, Saint-Martin de Tours, Notre-Dame de Mehun-sur-Yèvre et La Madeleine de Châteaudun. Les perspectives ouvertes en synthèse révèlent de profonds changements dans les techniques de construction par l'emploi du moyen appareil. Le rôle de contrebutement de l'abside joué par le déambulatoire semble à prendre en considération dans la mise en place de cette architecture, tant pour la généralisation du voûtement que pour la recherche de lumière. Faute de preuves matérielles, on doit donc rejeter la lecture fonctionnelle d'un couloir conçu pour les pèlerins. Les relations entre les commanditaires indiquent enfin que le caractère novateur offert par ces œuvres a servi à la mise en scène du prestige royal, directement orchestrée par Robert le Pieux et son entourage.

«Et ferez justice» : le métier d’intendant au Canada et dans les généralités de Bretagne et de Tours au 18e siècle (1700-1750)

Cette thèse consiste en une étude comparative du métier d’intendant au Canada et dans les généralités de Bretagne et de Tours dans la première moitié du 18e siècle (1700-1750). Elle s’appuie sur l’intendant pour s’interroger sur l’existence de spécificités dans l’exercice du pouvoir en contexte colonial par rapport au contexte métropolitain. Considéré par la plupart des historiens de la France d’Ancien Régime comme le personnage clé de l’évolution politique qui aurait fait passer la monarchie de sa phase judiciaire jusqu’à sa phase dite « administrative », l’intendant de justice, police et finance ou commissaire départi est au coeur des débats sur l’absolutisme et son rôle de première ligne dans l’oeuvre de centralisation monarchique en fait le sujet idéal pour observer la portée réelle de ce régime sur le terrain. L’examen du fonctionnement de l’intendance est un préalable obligé pour qui veut comprendre les rapports entre administrateurs et administrés et mieux cerner la capacité de régulation de l’État. Dans le cadre des attributions définies par sa commission, quelles sont les tâches qui l’occupent concrètement ? Cette thèse s’intéresse à l’intendant du point de vue de sa pratique, en s’appuyant sur la description interne des sources produites par l’intendant pour décortiquer ses mécanismes d’intervention. Deux types de documents sont analysés successivement, soit la correspondance, incluant les pièces jointes et les documents de travail, et les actes de portée réglementaire, incluant les ordonnances et les arrêts du Conseil d’État. Chemin faisant, nous avons fait la rencontre des individus et groupes qui sollicitent l’intervention de l’intendant, levant le voile sur les rapports de pouvoir et les interactions qui le lient à ses supérieurs, aux justiciables et aux institutions locales. L’exercice permet de poser en des termes nouveaux l’action de ce personnage dont on connaissait les attributions et principales décisions, mais beaucoup moins leur logique sous-jacente. / This thesis consists in a comparative study of the intendant’s métier in Canada and in the généralités of Bretagne and Tours in the first part of the eighteenth century (1700-1750). The thesis relies on the intendant to consider the existence of specificities in the exercise of power in the colonial context by comparison with the metropolitan context. Considered by most of the historians of France Ancien Regime as the key person of the political evolution to push through the monarchy from its judicial phase to its « administrative » phase, the intendant of justice, police and finance or commissaire départi is in the core of the debates on absolutism and his front line role in working to centralize the monarchy makes him the ideal subject to observe the real impact of this Regime. The examination of the functioning of the intendancy is an absolute prerequisite to understand the relation between administrators and administered and identifies the State will to control. As part of the defined attributions by his commission, what are the tasks that occupy him concretely? This thesis is about the intendant from the point of view of his pratique, relying on the description of the material produced by the intendant to examine his mechanisms of interventions. Two types of documents are successively analysed, namely the correspondence including the appendix and the working documents, and judgments, including the ordinances and the arrêt du Conseil d’Etat. In this process, we met individuals and groups who require the intervention of the intendant, lifting the veil on the power relationship that ties him to his superiors, to the claimants awaiting justice and to local institutions. This exercise allows to set in new terms the action of this personage on which we knew the attributions and main decisions but much less the underlying logic.

Thesis deals with secondary school teachers traveling abroad in the first third of the 20th century. The main theme of the particular path of teachers, which includes a selection of the country you wish to visit, motives, during the journey, and ultimately outcomes, or if the use of knowledge acquired in the classroom. Teachers focus on natural sciences, humanities and vocational subjects influenced the selection of the target country and its further learning, so teachers are divided according to the following criteria into three groups. On the basis of articles and reports that teachers had left on the road, the focus inter alia on the following themes: everyday life, local residents and Czech countrymen. Teachers also noticed foreign schools and compared them with schools Czech. To a lesser extent, the work deals with the possibilities of traveling in general at this time, the development of transport and tourism, which contributed to increased people's interest in exploring foreign countries.

This thesis deals with Iran as a tourist destination. As is implied in the title, the definite aim of the thesis is to evaluate the potential of tourism in this country and its attractiveness for Czech tourists. Initially, there is a general characterization of Iran of the population and the land from geographical, economic and other facets. The general characterization is followed by an analysis of tourism in Iran -- the current situation and the anticipated development. The very important part of this thesis is represented by the analysis of the tour offers provided by Czech tour operators to this destination and evaluation of the questionnaire research, which was aimed to find out how Iran is perceived by the Czech public and also to examine the interest in travelling to this country among Czech tourists.

Beer, Tourism and Regional Identity: Relationships between beer and tourism in Yorkshire, England

Beer, brewing, and the public house have been celebrated institutions in English culture for centuries. The drink occupies a venerable position in the gastronomy of most regions and is an integral component in the lives of many. There is an emerging literature on culinary tourism as an increasingly important element of cultural tourism. Local cuisine can be used to distinguish unique tourist regions from their competitors in an ever-globalising world. While wine tourism in particular has been studied quite thoroughly in recent years, beer tourism has been largely neglected. The purpose of this study is to explore the current state of, and potential for beer tourism in Yorkshire, England. Beer tourism can be described as “visitations to breweries, beer festivals, and beer shows for which beer tasting and experiencing the attributes of a beer region are the prime motivating factors for visitors” (Plummer et al. 2003). Through the use of a mail survey, short interviews, participant observation and secondary data collection techniques the author explored the extent to which local breweries use beer tourism practices; the specific beer tourism techniques being used by breweries in Yorkshire, and their perceived benefits and limitations; the partnerships, alliances and cooperation that may exist between the brewers themselves, and the tourism and hospitality industries; if and how tourism stakeholders draw upon beer and brewing to promote and market the region to tourists, and the role that brewers may play in this process. The author also made recommendations for brewery managers and regional marketing boards based upon relevant academic literature and the specific findings of this study. The author makes note of numerous findings on participation rates for breweries in tours and beer festivals, the perceived benefits and limitations that beer tourism has for brewers, and research on the branding and marketing of Yorkshire beer. A detailed typology of breweries based upon their relationship and degree of integration with the tourism industry is introduced. Furthermore, a tentative hypothesis based upon a brewer’s rationale for involvement in tourism and the size and success of that brewery is presented. This hypothesis must be empirically tested in future research to determine its acceptability. The author also presented a detailed review of the relevance of wine tourism literature for the field of beer tourism. It was found that although the two forms of beverage tourism share many commonalities, there exist as many differences. This comparison ultimately emphasises the importance of developing a specific beer tourism literature. It is hoped that the findings of this beer-specific research may be used by others with a keen interest in beer and tourism to undertake additional studies in the field. This study solely investigates the links between beer producers and the tourism and hospitality industry in Yorkshire, England. A similar study in an alternative setting would most likely yield interesting results. Furthermore, additional studies on beer and tourism should take the size, brewing output capacity, and possibly the revenue of a brewery into account in order to investigate potential differences between breweries’ tourism strategies based upon their size and success in their market.
