The Association between Diet Quality and Inflammatory Biomarkers among College-aged WomenLin, Luotao 02 July 2019 (has links)
Inflammation status has been associated with chronic diseases such as Type 2 Diabetes, cardiovascular disease and cancer. Previous studies suggested that healthful dietary patterns and dietary scores may have been associated with reduced concentrations of inflammatory biomarkers. However, studies have been usually conducted among middle- aged and older adults by examining commonly used biomarkers such as C-Reactive Protein (CRP) and Interleukin 6 (IL-6). For the current study, diet quality was measured by applying food frequency data to create the 2010 Dietary Guidelines for Americans Adherence Index (DGAI-2010). Concentrations of inflammatory biomarkers were obtained from fasting blood samples collected at the late-luteal phase of paticipants’ menstrual cycle. We used linear regression to analyze the association between each natural log-transformed inflammatory biomarker concentration and the continuous DGAI-2010 Score among 142 young, healthy women (aged 18-30 years) from the UMass Vitamin D Status Study. We found that as diet quality increased, concentrations of IL-7, IL-12p70, IL-13 and IFN- were significantly lower after adjustment for BMI, age, physical activity, smoking, race/ethnicity, multivitamin use, oral contraceptive use, and total energy intake per day. Following a diet that adheres to the Dietary Guidelines for Americans as a measure of dietary quality is associated with lower inflammation in healthy, normal weight and overweight young women.

How Well Do Parents Assess Their Children's Diet? Results from the New Jersey Child Health Study.January 2019 (has links)
abstract: Objective: Parents play a critical role in their child's diets, yet there is lack of research in
the US comparing parental perception of their child’s diet with quantitatively assessed diet quality. We examined the association between parent perception of their child’s overall diet and the child’s diet quality, as measured by frequency of consumption of key food categories.
Methods: Secondary analysis was conducted using data from two independent cross- sectional panels of surveys with parents of a 3-18 year old child. Data collection took place in 2009-2010 and 2014, the random sample was drawn from low-income cities. Well-established survey questions assessed parental perception of their child’s diet and frequency of consumption of fruits, vegetables, sugar-sweetened beverages (SSB), fast food and unhealthy snacks. Diet quality scores were calculated for each child, with higher scores reflective of healthier diets (max score= 40). Ordered logistic regressions examined associations between parental perception and consumption of food categories. Multinomial logistic regressions examined associations between levels of concordance in parent perception and diet scores by demographic sub-groups.
Results: Almost half of children were non-Hispanic black (46%) and 40% were Hispanic. Overall 52% of parents strongly agreed, 33% somewhat agreed, 10% somewhat disagreed, and 4% strongly disagreed that their child eats a healthy diet. The mean diet quality score for the sample was 20.58 ± 6.7. Children from our sample with the unhealthiest diet had a mean frequency of fruit intake = 0.8 times/day and SSBs = 2.2 times/day. Children with the healthiest diet had a mean consumption of fruit=1.7/day and
SSBs= 0.4/day. Parental perception of their child’s diet was significantly higher when their child consumed more fruit (p<0.001) and vegetables (p<0.001) and lower when their child consumed more fast food (p<0.001), SSBs (p=0.01) and unhealthy snacks (p=0.02). Over half of parents overestimated the healthfulness of their child’s diet (61%). Parent, child and household demographics did not moderate this association.
Conclusions: Although parental perceptions that their child eats healthy are associated when their child eats more healthy foods and less unhealthy foods, parents’ perceptions still do not align with their child’s diet. / Dissertation/Thesis / Masters Thesis Obesity Prevention and Management 2019

Temperature Driven Diet Quality Prediction for Free-Ranging CattleZhang, Yingjie 15 May 2009 (has links)
A rapid and accurate method to determine or predict cattle diet quality is essential to
effectively manage free-ranging cattle production. One popular tool currently available
for predicting cattle diet quality is fecal Near Infrared Reflectance Spectroscopy (NIRS)
profiling, which requires considerable time and financial investment. Two approaches
were taken to develop a replacement of NIRS fecal analysis for predicting real-time
cattle diet quality. The first approach took advantage of a standing forage quantity
monitoring and prediction model, and its animal diet selection sub model to model
cattle diet quality. The second approach tested if a direct relationship is present between
cattle diet quality and a simple temperature driven variable.
The model used in the first approach is Phytomass Growth Model (PHYGROW). Using
the Growing Degree Days (GDD) concept, forage crude protein estimation equations
were developed. Coupled with PHYGROW diet selection sub model, cattle diet quality
values were modeled. The validation study revealed good correlation between predicted
diet quality and observed diet quality (r2=0.84). The Grazing Animal Nutrition lab (GAN lab) commercial fecal NIRS analyzing data
for Major Land Resource Area 42 (MLRA 42) was used to analyze the relationship
between GDD and cattle diet crude protein (CP). Repeatable high quality regressions
were found for CP and GDD. A simple temperature based model was then developed to
predict cattle diet quality for regional use. Another independent dataset for MLRA 116B
from the GAN lab fecal NIRS data and a controlled grazing study were used to validate
the relationship. The study showed that using GDD to predict cattle diet quality is a
dependable tool, but regional specific relationships need to be developed.
The two developed models set the foundation for remotely predicting cattle diet quality
for effectively managing cattle production. The approaches also set the framework for
developing broader applications for other animal species.

Prevalence and Determinants of Food Insecurity and Its Impact on Diet Quality in African and Caribbean School-Aged Children in OttawaTarraf, Diana January 2017 (has links)
Purpose: Food insecurity is an important social determinant of health and is linked with higher health care costs. There is a high prevalence of food insecurity among recent immigrant households in Canada. The aim of the present project was to evaluate the prevalence of food insecurity in immigrant and non-immigrant households in Ottawa, to explore determinants of food insecurity in that population and to evaluate the link between food insecurity, diet quality and weight status.
Methodology: A cross-sectional study was conducted with a convenience sample of 258 Ottawa households having a child between 6 and 12 years old, with a mother born in Sub-Saharan Africa, the Caribbean or Canada. Health Canada’s Household Food Security Survey Module was used to evaluate participants’ food access in the past 12 months. Children’s dietary intake was evaluated with the use of a 24-hour recall and a modified Healthy Eating Index diet quality score was calculated. Chi-square and logistic and linear regression analyses were used to determine correlates of food insecurity and its link with diet quality and weight status (n=249).
Results: A high rate of food insecurity (39%) was found among participants. Household food insecurity was associated with low education attainment, lone motherhood, mother’s visible minority status, recent arrival to Canada, limited English fluency, reliance on social assistance, and subsidized/temporary/COOP housing. Food insecurity was associated with consumption of sweetened beverages, lower consumption of saturated fat among children, and with obesity among mothers.
Conclusion: These findings suggest that food insecurity is associated with certain indicators of poor diet quality among children and with obesity among mothers. The findings also highlight the need for food insecurity to be explicitly addressed in immigrant integration strategies in order to improve the financial power of new immigrants to purchase sufficient, nutritious, and culturally acceptable foods. Enhancing immigrants’ access to affordable child care and well-paid jobs, improving social assistance programs, and providing more subsidized housing programs would be beneficial to help reduce food insecurity and increase diet quality.

Family Meal Influence on Dietary Quality of Students in Grade Six, Seven, and Eight from Ontario and Nova ScotiaWoodruff Atkinson, Sarah J. 17 May 2007 (has links)
In 2004, Ontario’s Chief Medical Officer of Health Report, Healthy Weights, Healthy Lives (Ministry of Health and Long Term Care, 2004) identified the family (as well as the government, food industry, workplaces, schools, and individuals) for recommendations for action. As a means to promote, achieve, and maintain healthy body weights for both parents and children, Healthy Weights, Healthy Lives (2004) recommended enjoying family meals whenever possible. Very little evidence, however, exists to justify the promotion of family meals within Canada. Therefore, the purpose of this thesis was to describe family meal frequency and meal environments, and to examine the associations with diet quality (as assessed using a Canadian adaptation to the Health Eating Index (HEI-C; Glanville and McIntyre, 2006), and other commonly reported food behaviours and attitudes.
The sample (males=1572 and females=1627) comprised students in grade six (n=1266), seven (n=1359), and eight (n=579) classrooms from Northern Ontario (Porcupine Region n=385), Southern Ontario (Peel Region n=1413, Region of Waterloo n=405, Toronto District n=216), and Nova Scotia (as part of the Physical Activity in Children and Youth (PACY) study n=804) participating in school surveillance-based studies. Data were collected using the web-based Food Behaviour Questionnaire, which included a 24 hour food recall, food frequency questionnaire, and specific questions relating to family meals.
The majority of participants reported frequent family meals (70% on 6-7 days/week, 19% on 3-5 days/week, and 11% on 0-2 days/week). Family meal frequency decreased with increasing grade (X2=30.629 (df=4), p<0.001), and was significantly higher among participants from Porcupine, and lower among participants from Peel (X2=46.815 (df=8), p<0.001). The mean HEI-C score across all participants was 65.1 (SD 13.2) and the majority (73%) were rated in the needs improvement category. Family meal frequency, particularly between 0-2 and 6-7 days/week, was positively associated with diet quality scores (adjusted p=0.045) and ratings (p=0.049). When investigating the person(s) with whom meals were consumed, participants who ate breakfast with family members (versus alone, p=0.012) and/or lunch with friends (versus alone, p=0.007 or with family members, p<0.001) had a significantly greater likelihood of having a better diet quality. Participants who skipped breakfast (p<0.001) and/or lunch (p<0.001) had a greater likelihood of having a worse diet quality than those that consumed each meal.
Cluster K-means procedures were used to classify observations about the four meal environment variables (where the meal was consumed, with whom the meal was consumed, who prepared the meal, and where the food was originally purchased) into groups. A total of 3, 8, and 6 clusters of meal environments were identified for breakfast, lunch, and dinner, respectively. Diet quality was negatively associated with consuming/purchasing meals outside of the home, and skipping breakfast and/or lunch. Meal skipping had a larger impact on overall diet quality than the environmental conditions under which the meal was consumed.
Finally, associations among family meal frequency and other commonly reported food behaviours and attitudes were investigated. Higher family meal frequency was significantly associated with less pop consumption, consuming breakfast on the day of the survey, having higher self-efficacy for healthy eating when at home with family and during social times with friends.
This research, in a large, geographically diverse sample of grade six, seven, and eight students from Ontario and Nova Scotia, found that family meal frequency and specific aspects of meal environments were positively associated with diet quality, and various healthy eating behaviours and attitudes. This research supports the growing body of literature in favour of family meals. Since the diet of most students in grade six, seven, and eight was suboptimal, strategies to promote healthy family meals should be widely encouraged.
