Food insecurity is defined as “a household‐level economic and social condition of limited or uncertain access to adequate food” (USDA Economic Research Service 2009). Low‐income households tend to be food insecure for many reasons. The first and most obvious would be the access to monetary resources. If a household does not have a sufficient income, it is difficult to keep an adequate amount of food for all household members at all times. Another reason would be that many low‐income households cannot afford a car and/or do not have easy access to public transportation or reliable private transportation.

A LESSON FROM THE URBAN GARDEN

Purpose: In 2008 the world’s urban population surpassed the rural population; furthermore, the United Nations estimates by 2025 the world’s urban population will increase by about one billion people. Given recent population shifts and the interconnectedness between food and health, this research examines the role of agriculture in addressing urban food insecurity by reviewing urban interventions with a goal of food production.
Methods: Using the Sustainable Livelihoods Framework, an adjusted theoretical framework was developed which accounted for negative implications of these interventions as well as sustainability. Ultimately, the framework generated a food security score respective of each project. Using this score, statistical tests were conducted to confirm characteristics of more effective projects.
Results: Statistical analysis indicates food security score has a strong correlation with physical, future and social capital (0.72, 0.73 and 0.80 respectively). Food security score has a moderate correlation with duration of project and a strong correlation with number of project components (0.60 and 0.83). Furthermore, mean food security score of projects which used participatory methods was statistically different than mean food security score of projects which did not use participatory methods (p=0.01).
Conclusions: Participatory methods prove an important aspect of an urban agricultural intervention. Statistical results affirm urban food insecurity should be addressed through an integrated strategy which considers long-term viability of the project. Food security score, developed for this research, can help identify valuable components of interventions; however, this system is fairly subjective with some limitations.

The majority of people in North America have lost not only the knowledge of how to successfully sustain themselves from the land but, even more troubling, the basic knowledge of where the food comes from, what real food is, or even what to do with it. It is not only basic knowledge of food that is being lost in the consumer culture; many of the private and public spaces that were central to the social fabric of the city, street, and family are changing and losing their significance. The mass marketing of the consumer lifestyle has led to the disappearance of home gardens, local restaurants, neighbourhood coffee shops, and farmers’ markets. It has altered the fine grain of our city, streets, and homes, thereby reducing the social interactions that once created lively streets in the past.
This thesis examines both the historical and current relationship and influence of food in cities, streets and homes in relation to the growing issues of access to fresh whole food and the dispersed city form. In addition, it will investigate how food orientated developments such as Community Food Centres can act as a catalyst for urban revitalization in failing urban cores and provide a resiliency to the economies of the city. The analysis of the influence of food, challenges that midsized cites are facing, and a series of precedents will provide a set guidelines for architects and planners developing urban projects. Three main themes are explored as a means to revitalization of urban neighbourhood through food: reuse of under used or abandoned land, our cultural connection to food, and the activities and culture that the two create together. These themes will explore the use and cultural significance of kitchens, markets, and restaurants and public space as architectural spaces that create community as a means to better understand what mechanisms of these aspects are the keys to the building of vibrant communities. This concept will be explored through the design of a community food centre in St. Patrick’s Ward in Guelph, Ontario.

Agroforestry Community Gardens as a Sustainable Import-Substitution Strategy for Enhancing Food Security in Remote First Nations of Subarctic Ontario, CanadaSpiegelaar, Nicole 25 April 2011 (has links)
The high prevalence of food insecurity experienced by remote First Nation (FN) communities partially results from dependence on an expensive import-based food system that typically lacks nutritional quality and further displaces traditional food systems. In the present study, the feasibility of import substitution by Agroforestry Community Gardens (AFCGs) as socio-ecologically and culturally sustainable means of enhancing food security was explored through a case study of Fort Albany First Nation (FAFN) in subarctic Ontario. Agroforestry is a diverse tree-crop or tree-livestock agricultural system that has enhanced food security in the developing world, as low input systems with high yields of diverse food and material products, and various ecological services.
Four study sites were selected for biophysical analysis: two Salix spp. (willow)-dominated AFCG test plots in an area proposed by the community; one “no tree” garden control test plot; and one undisturbed forest control test plot. Baseline data and a repeatable sampling design were established to initiate long-term studies on the productive capacity of willow AFCGs as a means to enhance food security in subarctic FN communities. Initial soil and vegetative analysis revealed a high capacity for all sites to support mixed produce with noted modifications, as well as potential competitive and beneficial willow-crop interactions.
Identification of barriers to food security and local food production in FAFN revealed a need for a locally-run Food Security Program (FSP) in partnership with the AFCGs to provide the personnel, knowledge and leadership necessary to increase local food autonomy and local food education and to manage the AFCG as a reliable food supply. Continued research on AFCGs and the FSP may allow wide-scale adoption of this strategy as an approach to enhance community food security and food sovereignty in remote FNs across Canada. An integration of conventional crops and native species in the AFCGs is recommended as a bicultural approach to enhance social, cultural and ecological resiliency of FN food systems. As an adaptable and dynamic system, AFCGs have potential to act as a more reliable local food system and a refuge for culturally significant plants in high-latitude FN socio-ecological systems, which are particularly vulnerable to rapid cultural and ecological change.

The Aggregated Influences of Poverty Impacting Dental Care Access and Oral Health among Migrant Farmworkers in Tampa, FloridaKline, Nolan 01 July 2010 (has links)
Oral health is an important aspect of overall health, but many vulnerable
populations such as migrant farmworkers are without access to oral healthcare. Although
some non-government organizations such as faith-based organizations have attempted to
fill gaps left by government and private sectors, a lack of a dental safety net creates
limited access to oral health services for migrant farmworkers. Access to care is further
constrained by structural factors including low wages, migration route, and high costs of
care. Building off a critical medical anthropology approach in understanding oral
healthcare access, I argue that limited oral health access for migrant workers in the
Tampa Bay area is the result of economic constraints and not cultural beliefs or
educational shortcomings. This research therefore demonstrates the social determinants
of oral health, and how social disparities can become embodied in marginalized groups
such as migrant farmworkers.

"Food desert" commonly describes food insecure areas with few fresh food outlets. Though used in a number of sources, the definition of "food desert" remains largely undeveloped and research is often deficit oriented, failing to account for community assets that may exist within food deserts but are underutilized or under-supported. Using an assets-based, ethnographic approach, this study combines GIS and survey methodology with participant observation and qualitative interviews to assess the potential positive effect of urban agriculture on food accessibility in Sulphur Springs, a USDA identified urban food desert in Tampa, Florida.
Ethnographic data suggest that within this neighborhood, residents are largely dissatisfied with the quality of goods and services provided by local food retailers and, in response, seek alternatives to local retail food options. GIS and food store survey results from this study suggest that urban agriculture has the potential to increase fresh food accessibility and availability. Qualitative interview data suggest that the most appropriate way to improve food accessibility in this particular community is through Community Supported Agriculture that fosters social connections, while increasing access to healthful, quality foods, and circulating money within the community.

Between the 1970s and 2014, Winnipeg experienced dramatic change in the distribution of healthy food retailers in inner-city neighbourhoods. Winnipeg’s “active core” neighbourhoods identified through Dr. David Gordon’s research on Canadian suburbs (Gordon & Jean 2011), have undergone a decline in accessible healthy food options and a rise in food deserts.
This practicum identifies the causes of food retail decline and possible strategies for improving accessible healthy food retail options within Winnipeg’s active core. The changes in the distribution of food retail over time in Winnipeg are displayed through a series of maps: one for 1971 and every five years thereafter until 2011, and the year 2014, using data collected through telephone directories. Spatial data of Winnipeg’s active core is compared with population density data, informational maps, and other statistical data. Finally, various stakeholders, including planners, current and former business owners and other experts are interviewed to discuss these trends, lessons learned, and possible solutions. / October 2015

This study describes the effects of climate change on food security in agricultural dependent country,Pakistan. Based on secondary sources of data, the study found out the evidences of climate change and itssevere implications on already inadequate and depleted natural resources of the country. The major effectsof climate change are in terms of rise in temperature, variations in precipitation pattern, increasing glaciermelt,and increasing evaporation and increased irrigation water requirements. In addition, the report focuseson Pakistan’s irrigation structure and existent capacity, irrigation water crisis, trans-boundary waterconflicts (internal and external), food shortage and high inflation rate in food components. This shortage offood is mainly because of low-cropped productivity due to irrigation water crisis. Although the country hasworld’s largest integrated irrigation system, however, the water scarcity has made minds of farmers to shiftcultivation from water intensive crops like rice, wheat, cotton and sugarcane to low water required cropsand vegetables putting pressure on food market. Moreover, the crops yield is also less due to strongevaporation and the severity of temperature during long summer season. The constantly rising temperaturefor over last forty years coupled with variations in rainfall pattern often results into uneven surface wateravailability throughout cropping seasons. Further, extraordinary rise in temperature in mountainous regionof Pakistan, causes extra melting of glaciers along with uneven annual precipitation which frequentlyresults into flash floods with millions of people dislocated and loss of billions of worth in food, standingcrops and infrastructure. Pakistan’s population is increasing with over two percent growth rate; therefore,the chief staple foods like wheat, rice, maize, sugarcane, and vegetables have become out of reach of poorpeople and have severe contingent social and economic implications in terms of further enhancing thevulnerability of poor marginalized segments of society.
