Several school-based interventions aimed at increasing fruit and vegetables (FV) intake among children have demonstrated success in short-term interventions. The Fit Game is a school-based intervention aimed at encouraging children to consume increasing amounts of FV during a game, which is a narrative. Just as children are being encouraged to eat FV at school, so is it equally important for them to eat FV at home. Parents strongly influence the amount of FV children consume at home. The aim of this thesis is to examine associations between factors that influence consumption of fruits and vegetables at and away from school among children who are participating in a schoolbased intervention, which has been shown to increase fruit and vegetable consumption at school. Associations between factors of the home environment and FV intake of children at and away from school are also explored. The study population was 37 parent-child pairs who participated in the Fit Game intervention conducted at one elementary school in 2013 (n = 252).
This study showed that there was an increase in FV intake of children at school during the period they played the Fit Game; however there was no change in fruit and vegetable intake away from school during that same period of time. In addition, though parents and children’s intake of FV were correlated, parents did not change their FV intake during the period of time their child participated in the Fit Game at school. There was no significance between children’s intake and the factors in the home environment including family meals, FV accessibility and availability as well as parental knowledge. This study used rigorous methods to assess dietary intake. It is, however, important that this study is replicated with a larger sample that is more diverse.

Outcomes of the 2008 Georgia Senior Farmers' Market Nutrition ProgramLedford, Laurie 14 September 2009 (has links)
Background: The Georgia Senior Farmers’ Market Nutrition Program (GSFMNP) is intended to increase consumption of fruits and vegetables among Georgia’s low-income, older adults. The program provides $20 in vouchers with which participants may purchase Georgia-grown fruits and vegetables at approved farmers’ markets. Similar programs operate in other states, and studies suggest that these programs are successful in increasing fruit and vegetable intake among participants. However, because Georgia’s program operates somewhat differently, offering only a single market event at most locations, it may have different results. The purpose of this study was to determine whether or not produce purchased at GSFMNP events in 2008 contributed to an increase in the fruit and vegetable intakes of the participants and to identify factors that may have influenced those intakes. The study focused on purchase, consumption, preservation, waste, and sharing of fresh fruits and vegetables. Methods: For this qualitative study, a sample of 198 GSFMNP participants was surveyed from ten metro Atlanta senior centers where markets were held in August and September of 2008. Descriptive statistics were produced to summarize purchase behaviors, food utilization behaviors, and attitudes. Analyses of relationships between variables were performed using Pearson chi-square tests. Results: Twenty-seven percent of subjects reported consuming more fruits and vegetables than usual in the week following the farmers’ market event. There was a significant association between a larger than usual purchase amount and increased intake. There was also a significant association between increased intake and sharing purchased items. No significant associations with increased intake were found for variety of items purchased, preserving food, or discarding food. Those who purchased more fresh produce than usual appeared to be more likely to share their food with others but were not more likely to discard food. Ninety-seven percent of subjects said they would participate in the program again. Conclusion: Results of this study suggest that the majority of GSFMNP participants did not increase their intakes of fruits and vegetables. Sharing, preserving, and discarding food did not appear to be responsible for this outcome. More research is needed to discover what strategies could increase fruit and vegetable intakes among participants of the GSFMNP.

Consuming local produce may help communities by stimulating local economies and protecting the environment. This article outlines the benefits of buying locally grown foods. A recipe that is easy and affordable using some local produce is included. A calendar of seasonal produce in Arizona is included in the Appendix.

The goal of this study was to understand the relationship between food neophobia and bitterness in consumer liking. Fruit and vegetable consumption is necessary for elementary school children to build healthy habits. Free and reduced lunch programs (FRL) in schools provide nutritional opportunities to students. Bitterness sensitivity and food neophobia were examined as separate drivers of liking in acceptance testing (n=161, ages 6-12) from two local elementary schools (high and low %FRL). The food neophobia scale and the fruit and vegetable neophobia instrument (FNVI) were used to determine food neophobia. FNVI scores distinguished consumers in hierarchical cluster analysis of overall liking. FVNI scores correlated to texture liking and flavor liking in familiar and unfamiliar fruits and vegetables. Non-bitter sensitive participants unexpectedly exhibited more neophobia than bitter sensitive participants. Neophobic participants liked familiar products more than unfamiliar products. Bitter sensitive participants were less neophobic and preferred bitter vegetables

Changes in Fruit and Vegetable Household Food Availability Among Low-Income Families over a One-Month Period of TimeWells, Ann Alicia 16 December 2011 (has links) (PDF)
Objective: There is little evidence of how fruit and vegetable (FV) household food availability changes over a one-month period among low-income households. The objective of this study was to analyze how FV variety and sustainability changes over a 4-week period. Design: Inventories were conducted in low-income family households (n=49) once a week over a 4-week period. Trained researchers gathered the weights of all FV, including legumes, within the home. Previously determined mean container weights were subtracted to obtain the estimated weight of the FV. All weights were then converted to edible cups of FV, taking into account the weight that is removed when stems, peels, skins, and canning liquid are removed. Analysis: Variety was measured by analyzing the number of kinds of FV within the USDA subgroups (100% fruit juice, citrus fruits, other fruits, dark green vegetables, orange vegetables, dry beans and peas, starchy vegetables, and other vegetables) found in the home. In addition, sustainability was analyzed by the number of days into the future at which households can meet 100% of the FV recommendations. Data were combined for all households, according to the time points with the most amount of FV (HFV), the second-most amount of FV, the third-most amount of FV, and the least amount of FV (LFV) available in the household. Results: Vegetables, specifically canned vegetables, comprised the majority of all measurements taken throughout all inventories. When combined, the kinds of total FV decreased significantly from 25±1.1 kinds on HFV to 21.2±1.1 kinds on LFV (p<.0001). Days into the future at 100% of the fruit recommendation fell significantly from 11.4±0.1 days on HFV to 7.1±0.1 days on LFV (p<.0001). Total vegetables decreased significantly from 25.3±0.1 days on HFV to 19.1±0.1 days on LFV (p<.0001). Even at the peak of FV availability, dark green vegetables remained the lowest subgroup at 2.17±0.1 days and decreased to 1.6±0.1 days at LFV (p=0.01). Conclusions and Implications: Low-income households have greater variety of FV during the times when they have the most food resources compared to when they have the least food resources. The days into the future that the household FV supply could be maintained at 100% of the USDA's subgroup recommendation varies widely between subgroups, from about two days up to more than one month. Further research is needed to determine how to maintain subgroup variety and constancy of a FV supply throughout the month for low-income FV.

Use and Perspectives of a Social Marketing Campaign to Improve Fruit and Vegetable IntakePalmberg, Allison 01 January 2015 (has links)
The current study evaluated the development and acceptability of a social marketing campaign to improve emerging adults’ fruit and vegetable (FV) intake. A social marketing campaign was developed through focus groups with 24 college students. Materials were implemented in two dining locations at Virginia Commonwealth University. Sales of carrots, apples, and chips were collected in three phases: baseline, implementation of the campaign, and washout. In addition, surveys were collected from 303 diners across all phases and locations. Results indicated an increase in carrot sales, decrease in sales of chips sold with a meal, and mixed findings regarding sales of apples and chips sold alone. Intercept surveys indicated the marketing materials were perceived positively, and clearly understood. Statistical analysis of self-report measures revealed that perceptions of one’s health status and autonomy were associated with fruit and vegetable (FV) intake and overall nutrition knowledge. The implementation of a social marketing campaign to encourage FV intake appeared to influence sales of both healthy and non-healthy food items. It is vital for future campaigns and policies to highlight autonomy for health behavior decision-making.
