O trabalho apresenta uma retrospectiva histórica dos cursos superiores de hotelaria no mundo e no Brasil, e analisa pesquisas recentes que contemplam habilidades e competências inseridas nos currículos dos cursos superiores e sua valorização pelo empregador (mercado de trabalho). Busca identificar quais as habilidades e competências devem ser desenvolvidas nos alunos a partir do ponto de vista de três grupos distintos: coordenadores de curso, representantes das áreas de recursos humanos e representantes de empresas hoteleiras. A comparação dos resultados é então exposta às orientações oficiais constantes nas Diretrizes Curriculares Nacionais, a fim de verificar a possibilidade de aproximação entre os anseios do mercado e da academia na estruturação de um curso superior de Hotelaria. / This essay presents an historical retrospective of Hotel Management courses throughout the world and in Brazil, and analyzes recent researches that deal with skills and knowledge inserted in the course curricula and its valorization by the employer. It aims to identify which skills and knowledge must be developed in students by the point of view of three different groups: course coordinators, human resources representatives and hotel companies representatives. The results are compared, and then are exposed to the orientation of the official document Diretrizes Curriculares Nacionais, as to verify the possibility of approximation between university and employers expectations in structuring an Hotel Management course.

Význam ekocertifikace v oblasti udržitelného cestovního ruchu / The importance of eco-certification in sustainable tourism

The thesis aims to evaluate the benefits of applying environmental certification in the tourism sector within the context of sustainable development. The first part contains the key definitions in the tourism, and its effects on society are characterized. The gradual evolution of man's relationship to the environment we get to the concept of sustainable development and sustainable tourism. The second chapter introduces the eco-certification, as a tool for sustainable tourism development, from concept definition through historical development, typology to the international context. The third chapter is devoted to eco-certification in the Czech Republic from the beginning to the current situation, creating a basis for analysis of the importance of eco-certification for companies in the Czech Republic in the final chapter. In the fourth chapter a final assessment of the importance of eco-certification in the field of tourism is carried out, based on the results of investigations made, with proposed measures and the prediction of future trends.

This thesis focuses on the management of the four-star hotel in Catalonia, Spain. It mostly analyses marketing management and revenue management indicators. The main objective of the thesis is to find out the problems in management procedure and suggest measures and solutions that could repair the economic damage the business has suffered, with the objective of being profitable. The first part provides a theoretical point of view of the hotel management. The second part is a comparative of the Spanish, and more specific, Catalonian tourism and hospitality industry market, giving also specific characteristics of the hotel. The practical part contains the analyses of the hotel management indicators, the marketing mix and the situation on the local market. The final chapter shows de outcomes of the analysis and contains recommendations to improve the actual management.

The chapter is divided into two parts, each of them deals in detail with the latest trends in management first, then in marketing. An overview of the object highlighting the main points necessary to approach the character of the hotel. On company profile is established the detailed situation analysis that includes PEST analysis, analysis of competitive forces and SWOT analysis. The last chapter is a marketing research project focused on customer satisfaction with communications hotel via the internet. In conclusion, followed by interpretation of results situational analysis and marketing research and recommendations on marketing management hotel.

A comparative study on differences in sustainable development of hotels in Sweden and China

This study mainly compares and analyzes the sustainable development measures of hotels in China and Sweden. In this study, purposive sampling method is adopted to select hotels in China and Sweden, and the data of sample hotels are coded and classified and then compared and analyzed according to different categories. According to the results of the study, there are two major differences in sustainability measures between Chinese and Swedish hotels. First, the text information shows that Chinese hotels pay more attention to the establishment of overall hotel management system, such as energy management system and water resource management system, than Swedish hotels. Second, Swedish hotels have a more mature thinking on sustainable development, which is reflected in the fact that the hotel puts itself in the process of social sustainable development, instead of treating the hotel group itself as an island. This can be well reflected by the hotel's measures on food. The hotel not only pays attention to the consumption of food in the hotel, but also pays attention to the early procurement and the disposal of the leftover food, which is also a combination of environmental sustainability and social sustainability. The main reason for the difference in sustainable development measures between hotels in China and Sweden can be attributed to the different social development conditions in the two countries. As a developed country, Sweden has good welfare policies to ensure the interests of vulnerable groups, which gives the country room to think beyond its economic interests. As China paid attention to economic development in the early stage, although the overall economic development is now in good condition, the basic living needs of people in some areas still need to be improved. In such an environment, the society itself pays attention to economic benefits and somehow ignores sustainable development. Consequently, the national group, as consumers, has no requirement for the sustainable development of enterprises. As a result, the driving force for the sustainable development of Chinese enterprises only comes from national policies.

Measurement of the strategy construct in the lodging industry, and the strategy-performance relationship

Performance improvement is at the heart of all strategic management. Thus, the principal objectives of this study were to develop an industry-specific instrument to measure lodging strategy, identify a set of strategic dimensions underlying such strategy, and relate performance differences among lodging units to varying strategic dimensions emphasized by such units. The study adopted the individual hotel as the unit of analysis, and realized strategy was measured as opposed to the intended. Five hundred and seventy nine hotels, which are part of the franchise systems of two industry-leading chains contributed information for this research. Following a comparative approach to the measurement of the strategy construct, this study developed a lOS-item lodging industry-specific strategy measurement scale, capturing a comprehensive set of strategic characteristics from the business strategy (porter, 1980) and service management (Gronroos, 1990; Zeithaml, Parasuraman, and Berry, 1990) literatures. Through factor analysis, a parsimonious set of seven strategic dimensions, Service Quality Leadership, Technological Leadership, Push, Cost Control, Pull, Group Channels, and Cross-Training, underlying this lOS-item scale was delineated. Using Yield Per Room, Market Share Index, and Return on Sales as the performance measures, the study indicated that strategies followed by high and low performing hotels were different. The empirical evidence showed that, in general, the Push, Service Quality Leadership, and Technological Leadership strategic dimensions tended to be associated with high performance. The evidence also indicated that strategies emphasized by high and low performing hotels differed by the four control variables studied: Location, (Service) Segment, (Ownership-Management) Affiliation, and Size. Additionally, similar differences were also obtained when the hotels studied were classified by the performance measure most used by them to evaluate themselves, and the age of the properties. Preliminary indications were also obtained to confirm the existence of a strategic time lag effect. The results from this study should be valuable not only for extending hospitality strategy research, but also for their normative implications. / Ph. D.

Sustainable strategy as a source of competitive advantage for hotels: A case study of Ørestad area with focus on the Crowne Plaza Hotel

The purpose of this Thesis is to conduct an analysis describing the sustainable strategy available for hotels, evaluating its potential to create competitive advantage and exploring how its implementation influences other actors in the industry specifically and the whole area development generally. The case study of Ørestad district has been chosen with focus on the Crowne Plaza hotel. The Crown Plaza is the first hotel in Ørestad area that has employed the sustainable strategy into its operational activities. According to the analysis, the sustainable efforts of the hotel include environment-friendly technologies, waste management, use of organic materials, organization of social benefits and events for their employees. The conducted interviews with Crowne Plaza’s employees showed the relationship between hotel’s strategy and employees’ satisfaction. Furthermore, the study has explored the ability of sustainable efforts to create unique reputation for the hotel. The latter, in turn, attracts the business customers who consider sustainable hotel as valuable partner for their own reputation. All in all, as the sustainable strategy enhances the profitability, it is considered a source of completive advantage.Despite the benefits of the strategy, the competing hotels are not willing to imitate the concept. Low demand from private guests, variety of alternative options, high risks and investments are main reasons of indifference to sustainability from their side. As a result, this reluctance restricts the sustainable spillover effect and corresponding urban development in the area. However, as the government and construction agencies are interested in “green” trend and the Crowne Plaza is willing to share its practices, the sustainable urban development opportunities are still possible in the future.The recommendations to the Crowne Plaza include providing the tangible evidence of the sustainability in the hotel and continuing the introduction of environmental and social efforts. In turn, other hotels should start employing the sustainability in its strategic activities because the demand for it will only grow in the future. Only when all players in the area will realize the need for a change, the sustainable urban development will be achieved in Ørestad district.

The antecedent factors and entry mode choice of multinational lodging firms: the case of growth strategies into new international markets

The primary objective of this study was to utilize an exploratory research methodology to determine relationships among the antecedent factors and entry mode choices of multinational lodging firms. A basic framework was developed based on the review of the literature of multinational strategy, international business theories and concepts and hospitality management strategy. A qualitative research approach, specifically a multiple-case study method was used. The data was collected through interviews and secondary resources of five multinational lodging companies, analyzed through summary tables and matrices. The findings from the research included sixteen propositions that explain the relationships among the antecedent factors and entry mode choices in the multinational lodging operations. A framework was developed to illustrate the antecedent factors which may support the entry mode choices of the multinational lodging companies. Factors in the framework include those from the external environment: taxation and repatriation in the political dimension, infrastructure and tourism related factors in the economic dimension, adaptation to local needs and expectations in the socio-cultural dimension, investment and sharing technology in the technological dimension and awareness of the natural environment in the ecological dimension. Antecedent factors in the internal environment include: local and regional competitors, international and local customers, gateway and commercial centers of property locations, the strengths and weaknesses in tangible and intangible assets and partner selection criteria. These factors were found to have an important influence on the entry mode choices of the five participating multinational lodging companies. / Ph. D.
