Perfil de ácidos graxos e qualidade da carne de novilhos terminados em confinamento e em pastagem / Fatty acid profile and meat quality of steers finished in feedlot or in pasture

Para avaliar o efeito do sistema de terminação sobre o desempenho, a qualidade da carne e o perfil de ácidos graxos da gordura intramuscular (GIM) de bovinos de corte foi realizado um experimento, utilizando 30 novilhos cruza Aberdeen Angus x Charolês, abatidos aos 24 meses de idade com níveis semelhantes de acabamento e peso de carcaça. Os sistemas de alimentação foram níveis de oferta (0; 0,4; 0,8 e 1,2% PV) de suplemento energético a base de milho, em pastagem hibernal de aveia preta (Avena strigosa Schreb) e azevém anual (Lolium multiflorum L), e confinamento com relação volumoso:concentrado de 50:50. Os abates foram realizados à medida que os animais atingiram um grau de acabamento pré-determinado, monitorado por ultrassonografia. Não foram observadas diferenças significativas sobre o ganho de peso médio diário (1,60 kg/dia), peso de carcaça quente (229,45 kg) e espessura de gordura subcutânea (3,0 mm). O rendimento de carcaça quente e o ganho de peso médio diário de carcaça aumentaram linearmente com o nível de suplementação em pastejo. Quanto aos parâmetros de qualidade da carne avaliados, não foram observadas diferenças significativas, observando se valores médios de maciez (3,15 kg/cm2), marmorização (5,72 pontos), pH (5,64), Cor L* (36,84) e b* (12,89) e perdas por cocção (14,34%) e exudação (4,33%) nas amostras do Longissimus dorsi compatíveis com carne de boa qualidade. O parâmetro a* diferiu entre as amostras do nível intermediário (16,27) e do maior nível de suplementação (14,44), o qual não diferiu das demais amostras, que apresentaram media de 15,30. O perfil de ácidos graxos da GIM foi afetado pelo sistema de alimentação. Os teores dos AG mirístico, palmítico, esteárico e linoleico não diferiram entre os tratamentos apresentando teores médios de 3,08; 25,80; 20,15 e 1,87%, respectivamente. A GIM de animais suplementados até o nível de 0,8% PV apresentou maiores teores de CLA (0,473%) e ácido linolênico (0,798 %), em relação ao maior nível de suplementação e ao confinamento, que não diferiram entre si, apresentando teores médios de CLA e ácido linolênico de 0,292 e 0,600% respectivamente. Os tratamentos em pastejo apresentaram níveis superiores de AG n-3, em relação ao confinamento, não diferindo quanto aos níveis de AG n-6, produzindo relações n-6:n-3 menores (P<0,05) de 1,89; 2,31; 2,50 e 2,89 para os níveis de 0; 0,4; 0,8 e 1,2% PV comparados ao confinamento (4,11). O nível de suplementação reduziu linearmente os teores de AG n-3, CLA e aumentou linearmente a relação n-6:n-3. O engorde de novilhos em pastagens hibernais utilizando suplementação energética não afeta a qualidade da carne, entretanto determina alterações no perfil lipídico da gordura intramuscular sem comprometer os valores recomendáveis para a saúde humana. / With the aim of evaluate the effect of different feeding systems on the performance, meat quality and fatty acid profile of intramuscular fat an experiment was conduced with 30 Aberdeen Angus x Charolais crossed steers slaughtered with 24 months of age at similar levels of subcutaneos fat and carcass, in a completely randomized design experiment. The evaluated systems were levels of feeding (0; 0,4; 0,8; 1,2% BW) of a corn based supplement in a winter pasture os annual ryegrass (Lolium multiflorum L) and oats (Avena strigosa Schreb), or a feedlot, using a 50:50 concentrate/silage Animals were slaughtered as they reached a planned end point, monitored by ultrassonografic evaluation. No differences were observed in daily weight gain (1,60 kg/dia), carcass final weight (229,45 kg) and subcutaneous fat depth (3,0 mm). Supplementation in pasture linealy increased carcass killing out proportion and estimated carcass daily gains. No differences were observed on meat quality parameters, wich showes average values for ternderness (3,15 kg/cm2), marbling (5,72 points), pH (5,64), Color L* (36,84), b* (12,89) and in cooking (14,34%) and drip (4,33%) losses in the Longissimus dorsi samples, that are compatible with good quality meat. Color parameter a* differed between the intermediate (16,27) and the highest level of corn supplementation (14,44), wich didn´t differ from the other samples, wich averaged 15,30. The fatty acid profile was affected by the feeding systems. The levels os the FA myristic, palmitic, estearic and linoleic didn´t differ among treatments averaging 3,08; 25,80, 20,15 e 1,87% respectively. Supplementation up to the level of 0,8% BW allowed a higher CLA (0,473%) and linolenic (0,798%) FA levels in the intramuscular fat, in relation to the highest level of supplementation and the feedlot, wich didn´t difer each other, presenting average levels ov CLA and linolenic acid of 0,292 and 0,600 respectively. Treatments in pasture had higher n-3 FA compared to feedlot but didn´t differ on the content of n-6 FA, producing lower (P<0,05) n- 6:n-3 of 1,89; 2,31; 2,50 and 2,89 for the levels of 0; 0,4; 0,8 e 1,2% BW compared to feedlot (4,11). Supplementation level was linearly reduced FA n-3 and CLA and linearly increased n-6:n-3 relation. Fattening animals in winter pastures using increasing levels of energy supplementation doesn´t produces differences on meat quality but produces changes in FA profile without compromising the recomendable values for human health.

Criopreservação seminal do tambaqui Colossoma macropomum / Cryopreservation of Colossoma macropomum sperm

da severidade produzida pela baixa temperatura no processo de criopreservação. Neste estudo o objetivo foi avaliar a qualidade do sêmen de Colossoma macropomum pós-descongelamento, utilizando dimetilsulfóxido (DMSO) como crioprotetor combinado com duas soluções diluidoras (tratamentos): T1 (Glicose – 90,0 g/L, Citrato de Sódio - 6,0 g/L, EDTA - 1,5 g/L, Bicarbonato de Sódio - 1,5 g/L, Cloreto de Potássio - 0,8 g/L, Sulfato de Gertamicina - 0,2 g/mL) e T2 (Glicose - 90,0 g/L e Água de Coco em Pó - ACP® - 10,0 g/L). O sêmen de 26 animais machos, previamente analisados foi criopreservado em cinco momentos diferentes dentro do período reprodutivo, constituindo cinco pools. Quatro fêmeas foram utilizadas para observação dos índices de produtividade (taxas de fertilização e eclosão). Foram avaliados nos tratamentos, motilidade (Mot), tempo de motilidade (TMot), patologias espermáticas, taxa de fertilização e eclosão, integridade da membrana espermática, funcionalidade da mitocôndria e do DNA espermático. A Mot e o TMot não diferiram (P>0,05) entre os tratamentos T1 e T2 e ambos foram inferiores ao sêmen in natura. O número de espermatozoides normais foi significativamente diferente (P<0,05) nos tratamentos T1 (15,1%) e T2 (21,9%), e ambos apresentaram uma redução no percentual de espermatozoides normais quando comparados ao sêmen in natura (57,4%).Quanto as taxas de fertilização e eclosão não houve diferença (P>0,05) entre os tratamentos avaliados (T1 e T2). Após a criopreservação dos espermatozoides, não foram verificadas diferenças (P>0,05) entre os tratamentos, na funcionalidade da mitocôndria e integridade do DNA espermático. Quanto a integridade da membrana, no T1 (53,4%) apresentou maior percentual (P<0,05) de espermatozoides com a membrana integra do que no T2 (43,7%). A solução crioprotetora composta com duas soluções testadas não foram efetivas na proteção estrutural da célula espermática. Porém, mantiveram integro em quase que toda sua totalidade o DNA dos espermatozoides de C. macropomum. / Cryoprotectant solutions aim to protect spermatozoa from injuries produced by low temperature in the cryopreservation process. In this study we evaluated the quality of Colossoma macropomum semen after thawing, using dimethyl sulfoxide (DMSO) as a cryoprotectant combined with two extender solutions (treatments): T1 (Glucose - 90.0 g/L, Sodium Citrate - 6 0 g/L, EDTA - 1.5 g/L, Sodium Bicarbonate - 1.5 g/L, Potassium Chloride - 0.8 g/L, Gertamicine Sulfate - 0.2 g/mL) and T2 (Glucose - 90.0 g/L and Powder Coconut Water - ACP® - 10.0 g/L). Semen from 26 males, previously cryopreserved was analyzed at five different times throughout the reproductive season, forming five pools. Four females were used for observation of reproductive indexes (fertilization and hatching rate). The following parameters were assessed: motility (Mot), motility time (TMot) sperm pathologies, fertilization rate and hatching rate, sperm membrane integrity, mitochondrial and sperm DNA function. The Mot and TMot did not differ (P> 0.05) between T1 and T2 and both showed lower values compared to fresh semen. The number of normal spermatozoa was significantly different (P <0.05) in T1 (15.1%) and T2 (21.9%) treatments, and both showed a reduction in the percentage of normal spermatozoa when compared to fresh semen (57.4%). Regarding fertilization and hatching rates, there was no difference (P> 0.05) between the treatments (T1 and T2). After sperm cryopreservation, no differences were evidenced (P> 0.05) between the treatments for mitochondrial functionality and sperm DNA integrity. T1showed a higher membrane integrity (53.4%) than that found in T2 (43.7%). The cryoprotectant solution tested in this study did not work effectively in protecting spermatic cells from structural damages. However, majority of the cells remained with intact DNA after thawing.

Relações planta-animal num sistema de integração lavoura-pecuária / Plant – animal relationships in an animal – crop integration system

Este trabalho buscou estudar um sistema de integração lavoura-pecuária com diferentes alturas de pastos, no período de inverno, e seus reflexos sobre a dinâmica da pastagem e o desempenho animal. O experimento foi conduzido em uma pastagem de aveia + azevém manejada sob diferentes intensidades de pastejo. O delineamento experimental foi de blocos ao acaso com quatro tratamentos (10, 20, 30 e 40 cm de altura de manejo) e três repetições. Utilizaramse terneiros de corte de cruzamento industrial com idade e peso médio inicial de 10 meses e 210 kg, respectivamente. O método de pastejo foi contínuo com lotação variável. A adubação de base foi de 400 kg/ha de superfosfato simples e de 90 kg/ha de N em cobertura. As alturas do pasto afetaram a massa de forragem (MF), onde para cada cm de aumento na altura acima de 10 cm, houve incremento na matéria seca da pastagem em cerca de 86 kg/ha de MS. O aumento no ganho médio diário (GMD) foi condicionado pelo incremento na qualidade e/ou na quantidade de forragem disponível, e o modelo de resposta do GMD em relação às alturas do pasto, resultou em valores de 0,73 e 1,14 kg/animal/dia nos tratamentos de maior e menor GMD, respectivamente, que foram de 10 cm e 30 cm de altura. No rendimento de carcaça não houve diferença (P>0,05) entre os tratamentos, uma vez que todos os valores ficaram em torno de 51%. Quanto ao peso de carcaça quente e fria, peso de costilhar, escore de condição corporal e grau de acabamento, observou-se comportamento muito similar à evolução do ganho médio diário dos animais. / This trial aimed to study an animal-crop system with pasture heights level, in winter season period, and its influence in the dynamics of the pasture and animal performance. The experiment was conducted in pasture with black oat + ryegrass in different grazing intensity. The experiment design was a randomized block with four pasture height treatments (10, 20, 30 e 40 cm) and three replicates. Beef steers weighting 210 kg were used and they were ten months old, castred, with no defined breed. The grazing method utilized was the continuos grazing with variable stocking. In the experimental area, 400 kg/ha (simple super phosphate) and 90 kg/ha of nitrogen were applied. The pasture height treatments affected the forage biomass. A linear increase for the herbage mass was observed: each cm on the pasture height above 10 cm means 86 DM Kg/ha. The animal daily gain (ADG) was 0.73 and 1.14 kg/animal/day for the treatments of lowest and highest ADG, which corresponds to 10 cm and 30 cm, respectively. Considering that the ADG was low, the highest gain/area observed on the 10 cm treatment was due to a higher stocking rate and both presented a negative linear response, decreasing with the increase in pasture height. There was not difference (P>0,05) on the carcass yield, among the treatments and the carcass yield was about 51%. Warm and cold carcass weights, rib weight, body condition score and thickness of fat showed a similar tendency to average daily gain progress.

Habilidade materna de ovelhas corriedale e sua relação com a sobrevivência e desenvolvimento de cordeiros / Ability and maternal of corriedale ewes and its relationship to survival and development of the lambs

Um dos grandes problemas na ovinocultura é a mortalidade de cordeiros, principalmente no periparto. Altas taxas de mortalidade entre o nascimento e o desmame aumentam os custos de produção e diminuem a oferta regular de animais. A mortalidade está diretamente relacionada com o cuidado da ovelha com o cordeiro. O cuidado maternal é entendido como todas as atividades assumidas após o nascimento pela mãe em relação à progênie, com o objetivo de elevar as chances de sobrevivência da cria e garantir o seu crescimento, favorecendo a perpetuação da espécie. Com o objetivo de descrever o comportamento materno de ovelhas e relacionar com medidas de temperamento e com características de desempenho do cordeiro foi conduzido um experimento com 37 ovelhas adultas da raça Corriedale, em pastagem de Brachiaria arrecta Napper em Viamão, RS. O delineamento experimental foi completamente ao acaso, sendo a unidade experimental a ovelha. Até 48 horas após o parto, as ovelhas foram avaliadas quanto ao escore materno filial, de acordo com sua distância em relação ao cordeiro no momento da aproximação de um avaliador. Avaliou-se a reatividade dos animais, no isolamento e na presença do observador, através do teste de arena e os parâmetros fisiológicos e físicos dos animais. Também foi avaliado o ganho de peso dos cordeiros do nascimento ao desmame e a taxa de sobrevivência. A maioria das ovelhas, 91,67%, apresentou pior escore de comportamento materno, com valor médio de 2,19. O escore de comportamento materno esteve correlacionado com o tempo de latência (r=0,35), número de defecações da ovelha em isolamento no encarneiramento (r=0,43), relutância da ovelha para sair da área teste no desmame (r=-0,36) e com o número de vocalizações de intensidade alta dos cordeiros na presença do observador (r=0,36). Cordeiros filhos de ovelhas que se afastaram menos na avaliação do escore materno-filial, quando em isolamento social e visual no teste de arena, vocalizam mais. Ovelhas classificadas como melhores mães no periparto mostraram menor medo em relação à presença humana no teste de arena. Os cordeiros ganharam em média 0,169 kg/dia até o desmame e a taxa de mortalidade foi de 27,03%. Esse trabalho demonstra que escore de comportamento materno apresenta baixa correlação com o temperamento de ovelhas e cordeiros avaliados através do teste de arena e que o desempenho e desenvolvimento dos cordeiros no desmame não depende do escore de comportamento materno da ovelha. / A major problem in the sheep industry is the lamb mortality, particularly in the peripartum period. High rates of mortality between birth and weaning increases production costs and decrease the steady supply of animals. Mortality is directly related to the care of the sheep with lamb. The maternal care is understood as all activities undertaken by the mother after birth in relation to offspring, with the aim of increasing the survival chances of establishing and ensuring their growth, favoring the perpetuation of the species. Ewes with high reactivity may abandon their lambs and increase mortality in peripartum. Aiming to describe the maternal behavior of sheep and correlate with measures of temperament and performance characteristics of the lamb was an experiment with 37 ewes wethers, a pasture of Brachiaria arrecta Napper in Viamão, RS. The experimental design was completely random, the experimental unit being a sheep. Until 48 hours after delivery, ewes were evaluated for maternal scores subsidiary, according to their distance from the lamb upon the approach of an appraiser. We evaluated the reactivity of the animals in isolation and in the presence of the observer through the test arena and the physiological and physical parameters of the animals. We also evaluated the weight gain of lambs from birth to weaning and survival rate. Most of the sheep, 91,67% had a score of maternal behavior and poor, with average value of 2,19. The maternal score was positively correlated with the onset time (r=0,35) and the number of defecations (r=0,43) of the ewe at mating time isolation, and negatively correlated with the reluctance of sheep to exit weaning (r=-0,36) and the number of vocalizations of high intensity of the lambs in the presence of observers (r=0,36). Lambs of sheep who have strayed at least evaluation scores from mother to child, when in social isolation and visual test arena, vocalized more, giving the impression that they try to communicate with their mothers. Ewes classified as the best mothers in the peripartum showed less fear in relation to human presence in the test arena. Lambs gained an average of 0,169kg/day until weaning and the mortality rate was 27,03%. This study demonstrates that maternal score has a low correlation with the temperament of sheep and lambs evaluated by testing arena and that the performance and development of lambs at weaning is not dependent on maternal score of sheep.

Sal proteinado, sal mineral e oferta de forragem sobre o desempenho produtivo e comportamento ingestivo de ovinos em pastagem tropical / Protein-salt, mineral-salt and herbage allowance on productive performance and ingestive behaviour of ewes grazing tropical pasture

Este trabalho teve por objetivo relacionar a suplementação com sal proteinado ou sal mineral e duas ofertas de forragem com o desempenho produtivo de ovelhas no terço final da gestação em pastagem tropical no inverno. Os tratamentos foram: 10% de oferta de forragem + sal proteinado (10% SP); 10% de oferta de forragem + sal mineral (10% SM); 20% de oferta de forragem + sal proteinado (20% SP) e 20% de oferta de forragem + sal mineral (20% SM). A pastagem utilizada foi de Brachiaria arrecta de baixa qualidade (Proteína bruta: 6%, Fibra em detergente neutro livre de cinzas e proteína: 71%). Foram realizadas pesagens dos animais, avaliações de escore de condição corporal, consumo de suplemento, pesagem dos cordeiros e suas respectivas placentas no ato do nascimento. Avaliou-se também o comportamento ingestivo diurno, a taxa de bocados, estações alimentares, tempo de pastejo, ruminação, ócio e tempo em que o animal permanecia no cocho. Não se verificou efeito (P 0,05) da suplementação com sal proteinado no ganho médio diário (GMD) das ovelhas, no peso das placentas, no peso ao nascer dos cordeiros e do ganho médio diário dos cordeiros. Também não se verificou diferença significativa (P 0,05) entre os diferentes tratamentos no escore da condição corporal dos animais. Os tratamentos não afetaram (P 0,05) o comportamento ingestivo dos animais. O consumo de sal proteinado foi superior (P 0,05) em relação ao sal mineral, porém a suplementação com sal proteinado e alta oferta de forragem não foi suficiente para melhorar o desempenho de ovelhas no terço final da gestação e lactação e de cordeiros em pastagem tropical de baixa qualidade no inverno. / This study aimed to relate the protein-salt or mineral-salt supplementation and two herbage allowances with productive performance of ewes in the final third of pregnancy in tropical pasture in winter. The treatments were: 10% of herbage allowance (kg of dry matter/100kg of live weight)+ protein salt (10% PS), 10% forage allowance (kg of dry matter/100kg of live weight) + mineral salt (10% MS) 20% of herbage allowance (kg of dry matter/100kg of live weight) + protein salt (20% PS) and 20 % of herbage allowance (kg of dry matter/100kg of live weight)+ mineral salt (20% MS). The pasture used was Brachiaria arrecta of low quality (crude protein: 6%, neutral detergent fibre: 71%). The animals were weighed and the body condition score were assessed every days. It was evaluated the lamb birthweight, the daily intake of the supplement and the placenta weight. It was also assessed the ewe rate of bitting, grazing, ruminating and idling time, and the time in which the animal remained in the trough. There was no effect (P 0.05) of protein-salt supplementation on average daily gain (ADG) of sheep. It was not observed effect of the treatments on (P 0.05) placental weight and lamb birthweigh as well as on the lamb ADG. There was no significant differences (P 0.05) in body condition score, and on ingestive behavior of animals (P 0.05) among the different treatmens. Protein-salt intake was higher (P 0.05) than the mineralsalt, but supplementation with protein-salt was not sufficient to increase productive performance of ewes in the final third of gestation and lactation and lambs in low quality tropical pasture in winter.

Análise da comercialização de bezerros de corte no Rio Grande do Sul / Analysis of the commercialization of beef calves in the Rio Grande do Sul

O presente trabalho tem por objetivo avaliar as escolhas realizadas pelos compradores em leilões de bezerros no Estado do Rio Grande do Sul, bem como as variações de preços obtidas por estes animais. Para tanto, foram avaliados leilões durante o período de três anos em duas estações anuais de comercialização. Foi analisada a influência no preço final por quilograma de peso vivo de características relacionadas à genética animal (grupo genético, musculosidade e tamanho animal), peso vivo médio na comercialização e características relacionadas ao momento do leilão, como uniformidade, ordem de entrada e tempo de permanência em pista e estratégias de divulgação utilizadas nos lotes avaliados. A partir destes dados foi possível concluir que as variáveis que afetam qualitativamente os bezerros, como genética e uniformidade, por exemplo, tem um grande impacto em períodos onde a oferta de bezerros é muito alta, possibilitando ao comprador escolher por meio de outras variáveis que não o preço. Em períodos de baixa oferta e preços altos, o peso médio dos lotes ofertados, tem um maior efeito no preço final, sendo mais valorizados os animais mais leves em relação aos mais pesados, principalmente, por resultarem em um menor valor unitário, mas maior em relação à unidade de peso. Estas informações tornam-se valiosas aos produtores de bezerros que podem direcionar sua produção a animais de maior demanda no mercado, especialmente em épocas de preço muito baixo e grande oferta, onde estes critérios diferenciais entre os animais podem significar a efetivação ou não da comercialização. / The present work has as a goal to evaluate the choices accomplished by the buyers in auctions of beef calves in the State of Rio Grande do Sul as well as the variations of prices obtained by these animals. For such, auctions were appraised during the period of three years in two annual stations of commercialization. The influence was analyzed in the final price per kilogram of live weight of characteristics related to the animal genetics (group genetic, muscularity and animal size), medium live weight in the commercialization and characteristics related to the moment of the auction, as uniformity, entrance order and time of permanence in track and popularization strategies used in the appraised lots. From these data it was possible to conclude that the variables that affect qualitatively the beef calves, as genetics and uniformity, for instance, it has a great impact in periods where the offer of calves is very high, making possible the purchaser to choose through other variables but the price. In periods of low offer and high prices, the average weight of the presented lots, has a larger effect in the final price, being more valued the lightest animals in relation to the heaviest, mainly, for they result in a smaller value unitary, but larger in relation to the unit of weight. These information become valuable to the producer of beef calves that can address your production to you encourage of larger demand in the market, especially in times of very low price and great offer, where these criteria differentiate among the animals they can mean the effective or not of the commercialization.

Características pós-abate de novilhos terminados com silagem de girassol (Helianthus annus L.) / Characteristics after slaughter of steers finished on Sunflower silage (Helianthus annuus L.)

Objetivou-se avaliar as características da carcaça, da carne e do corpo vazio de novilhos terminados em confinamento submetidos a inclusões parciais na dieta de silagem de girassol (Helianthus annuus L.) em substituição à silagem de milho (Zea mays L.). Incluiu-se 0% de silagem de girassol (IG00); 33% de silagem de girassol (IG33) e 66% de silagem de girassol (IG66) com base na matéria seca (MS). Os animais foram abatidos quando a espessura de gordura subcutânea ficou entre 3 e 6 mm. A dieta consumida continha relação volumoso:concentrado de 60:40 (com base na MS), com 12,26; 12,51 e 12,79% de proteína bruta, 2,85; 2,88 e 2,93 Mcal de energia digestível/kg de MS, e 4,06; 5,29 e 7,15% de extrato etéreo, respectivamente. Novilhos IG33 apresentaram maior área de Longissimus dorsi (ALD) e menor percentagem de dianteiro do que IG00 e IG66 (64,87; 53,21 e 56,59 cm2 e 37,09; 38,45 e 37,97%, respectivamente). Os animais IG33 apresentaram maior ALD/100 kg de carcaça fria e percentagem de traseiro que IG00 (27,98 vs 23,31cm2/100kg e 49,79 vs 48,93%, respectivamente). Também apresentaram superior relação músculo:osso e músculo+gordura:osso que IG66 (4,94 vs 4,29 e 6,97 vs 5,90, respectivamente). A inclusão de silagem de girassol em qualquer nível não influenciou significativamente coloração (3,78 pontos), textura (4,33 pontos), marmoreio (6,78 pontos), maciez (7,32 pontos), palatabilidade (6,87 pontos) e suculência (6,09 pontos) da carne. Igualmente não foi verificada diferença estatística (P>0,10) na quebra ao descongelamento (4,16%) do músculo “Longissimus dorsi”, quebra na cocção (24,37%) e na força de cizalhamento (3,04kgf/cm3). Novilhos IG66 apresentaram maior relação peso de corpo vazio:peso de abate que IG33 (93,52 vs 92,03). Os animais IG33 apresentaram menor participação de componentes externos e couro em relação a IG00 e IG66. Enquanto animais IG66 apresentaram maior peso relativo de fígado do que IG33 e inferior peso relativo de abomaso do que IG00, IG33 apresentaram maior deposição de gordura no trato digestivo em relação a IG66. A inclusão de silagem de girassol não comprometeu as características da carcaça, não alterou as características qualitativas da carne; porém aumentou o peso do fígado, reduziu o acúmulo de gordura no trato digestivo e o peso do abomaso, sem entretanto, afetar o desempenho animal. / The objective of this study was to evaluate carcass, meat and empty body characteristics of steers finished in feedlot submitted to partial inclusions in the diet of sunflower silage (Helianthus annuus L.) in substitution of maize silage (Zea mays L.). Was included 0% of sunflower silage (IG00); 33% of sunflower silage (IG33) and 66% of sunflower silage (IG66), on dry matter base. The animals were slaughtered when the subcutaneous fat thickness was between 3 and 6 mm. The intake diet showed roughage:concentrate ratio of 60:40 (on dry matter base), crude protein of 12.26; 12.51 and 12.79% and digestible energy of 2.85; 2.88 and 2.93 Mcal/kg of dry matter, and ether extract of 4.06; 5.29 and 7.15%, respectively. IG33 steers showed higher “Longissimus dorsi” area (LDA) and lower forequarter percentage in relation to IG00 and IG66 (64.87; 53.21 and 56.59 cm2 and 37.09; 38.45 and 37.97%, respectively). The IG33 animals showed higher LDA/100 kg of cold carcass and higher hindquarter percentage in relation to IG00 (27.98 vs. 23.31 cm2/100 kg and 49.79 vs. 48.93%), respectively). They also showed higher muscle:bone ratio and muscle+fat:bone ratio that IG66 (4.94 vs. 4.29 and 6.97 vs. 5.90, respectively). The inclusion of sunflower silage didn’t influence significantly meat color (3.78 points), texture (4.33 points), marbling (6.78 points), tenderness (7.32 points), palatability (6.87 points) and juiciness (6.09 points) of the meat. Equally, no statistic difference was verified (P>.10) for chilling loss (4.16%) of the "Longissimus dorsi" muscle, cooking loss (24.37%) and for shear force (3.04 kgf/cm3). IG66 steers showed higher empty body weight:slaughter weight ratio than IG33 steers (93.52 vs. 92.03). The IG33 animals showed lower participation of external components and leather in relation to IG00 and IG66. While IG66 steers showed higher liver relative weight than IG33 and lower abomasum relative weight in relation to IG00 steers. IG33 showed higher digestive tract fat deposition in relation to IG66. The inclusion of sunflower silage didn’t implicate carcass and qualitative meat characteristics, however increases liver weight, decrease digestive tract fat deposition and abomasum weight, without affecting animal performance.

Perfil de ácidos graxos e qualidade da carne de novilhos terminados em confinamento e em pastagem / Fatty acid profile and meat quality of steers finished in feedlot or in pasture

Para avaliar o efeito do sistema de terminação sobre o desempenho, a qualidade da carne e o perfil de ácidos graxos da gordura intramuscular (GIM) de bovinos de corte foi realizado um experimento, utilizando 30 novilhos cruza Aberdeen Angus x Charolês, abatidos aos 24 meses de idade com níveis semelhantes de acabamento e peso de carcaça. Os sistemas de alimentação foram níveis de oferta (0; 0,4; 0,8 e 1,2% PV) de suplemento energético a base de milho, em pastagem hibernal de aveia preta (Avena strigosa Schreb) e azevém anual (Lolium multiflorum L), e confinamento com relação volumoso:concentrado de 50:50. Os abates foram realizados à medida que os animais atingiram um grau de acabamento pré-determinado, monitorado por ultrassonografia. Não foram observadas diferenças significativas sobre o ganho de peso médio diário (1,60 kg/dia), peso de carcaça quente (229,45 kg) e espessura de gordura subcutânea (3,0 mm). O rendimento de carcaça quente e o ganho de peso médio diário de carcaça aumentaram linearmente com o nível de suplementação em pastejo. Quanto aos parâmetros de qualidade da carne avaliados, não foram observadas diferenças significativas, observando se valores médios de maciez (3,15 kg/cm2), marmorização (5,72 pontos), pH (5,64), Cor L* (36,84) e b* (12,89) e perdas por cocção (14,34%) e exudação (4,33%) nas amostras do Longissimus dorsi compatíveis com carne de boa qualidade. O parâmetro a* diferiu entre as amostras do nível intermediário (16,27) e do maior nível de suplementação (14,44), o qual não diferiu das demais amostras, que apresentaram media de 15,30. O perfil de ácidos graxos da GIM foi afetado pelo sistema de alimentação. Os teores dos AG mirístico, palmítico, esteárico e linoleico não diferiram entre os tratamentos apresentando teores médios de 3,08; 25,80; 20,15 e 1,87%, respectivamente. A GIM de animais suplementados até o nível de 0,8% PV apresentou maiores teores de CLA (0,473%) e ácido linolênico (0,798 %), em relação ao maior nível de suplementação e ao confinamento, que não diferiram entre si, apresentando teores médios de CLA e ácido linolênico de 0,292 e 0,600% respectivamente. Os tratamentos em pastejo apresentaram níveis superiores de AG n-3, em relação ao confinamento, não diferindo quanto aos níveis de AG n-6, produzindo relações n-6:n-3 menores (P<0,05) de 1,89; 2,31; 2,50 e 2,89 para os níveis de 0; 0,4; 0,8 e 1,2% PV comparados ao confinamento (4,11). O nível de suplementação reduziu linearmente os teores de AG n-3, CLA e aumentou linearmente a relação n-6:n-3. O engorde de novilhos em pastagens hibernais utilizando suplementação energética não afeta a qualidade da carne, entretanto determina alterações no perfil lipídico da gordura intramuscular sem comprometer os valores recomendáveis para a saúde humana. / With the aim of evaluate the effect of different feeding systems on the performance, meat quality and fatty acid profile of intramuscular fat an experiment was conduced with 30 Aberdeen Angus x Charolais crossed steers slaughtered with 24 months of age at similar levels of subcutaneos fat and carcass, in a completely randomized design experiment. The evaluated systems were levels of feeding (0; 0,4; 0,8; 1,2% BW) of a corn based supplement in a winter pasture os annual ryegrass (Lolium multiflorum L) and oats (Avena strigosa Schreb), or a feedlot, using a 50:50 concentrate/silage Animals were slaughtered as they reached a planned end point, monitored by ultrassonografic evaluation. No differences were observed in daily weight gain (1,60 kg/dia), carcass final weight (229,45 kg) and subcutaneous fat depth (3,0 mm). Supplementation in pasture linealy increased carcass killing out proportion and estimated carcass daily gains. No differences were observed on meat quality parameters, wich showes average values for ternderness (3,15 kg/cm2), marbling (5,72 points), pH (5,64), Color L* (36,84), b* (12,89) and in cooking (14,34%) and drip (4,33%) losses in the Longissimus dorsi samples, that are compatible with good quality meat. Color parameter a* differed between the intermediate (16,27) and the highest level of corn supplementation (14,44), wich didn´t differ from the other samples, wich averaged 15,30. The fatty acid profile was affected by the feeding systems. The levels os the FA myristic, palmitic, estearic and linoleic didn´t differ among treatments averaging 3,08; 25,80, 20,15 e 1,87% respectively. Supplementation up to the level of 0,8% BW allowed a higher CLA (0,473%) and linolenic (0,798%) FA levels in the intramuscular fat, in relation to the highest level of supplementation and the feedlot, wich didn´t difer each other, presenting average levels ov CLA and linolenic acid of 0,292 and 0,600 respectively. Treatments in pasture had higher n-3 FA compared to feedlot but didn´t differ on the content of n-6 FA, producing lower (P<0,05) n- 6:n-3 of 1,89; 2,31; 2,50 and 2,89 for the levels of 0; 0,4; 0,8 e 1,2% BW compared to feedlot (4,11). Supplementation level was linearly reduced FA n-3 and CLA and linearly increased n-6:n-3 relation. Fattening animals in winter pastures using increasing levels of energy supplementation doesn´t produces differences on meat quality but produces changes in FA profile without compromising the recomendable values for human health.

Aspectos bioeconômicos da avaliação andrológica em touros de corte / Bioeconomic aspects of breeding soundness examination in beef bulls

Os objetivos do presente trabalho foram: 1) determinar o impacto bioeconômico do exame andrológico em sistemas de cria a fim de verificar sua importância como prática de manejo que auxilie na melhoria da eficiência reprodutiva do rebanho, 2) quantificar a variabilidade da circunferência escrotal, os efeitos da idade e raças e investigar as relações existentes entre o peso testicular (PT), a circunferência escrotal (CE) e o peso vivo (PV) em touros. Os resultados sugerem que, em touros jovens, a CE é a melhor forma de predizer o PT e, portanto, uma ferramenta útil para selecionar touros, 3) verificar as causas de descarte de touros de corte no Estado do Rio Grande do Sul com base nas etapas do exame andrológico. Foram avaliados 30.700 touros pelo Programa de Avaliação Reprodutiva de Touros durante os anos de 2001 a 2004. Dos 30.700 touros avaliados, foram descartados 17,12% deste total; o exame clínico geral, o seminal e o comportamental tiveram percentuais de descarte semelhantes (4,59%; 4,54;% e 4,29% respectivamente), diferindo do exame clínico especial (6,80%). O trabalho foi dividido em três artigos: 1) Impacto bioeconômico do exame andrológico dos touros em sistemas de cria, 2) Determinação da circunferência escrotal em touros de corte no Rio Grande do Sul e 3) Causas de descarte no exame andrológico em touros de corte no Rio Grande do Sul. No primeiro trabalho, concluiu-se que o exame andrológico é uma prática de manejo de baixo custo e uma importante alternativa tecnológica para auxiliar no aumento da rentabilidade da atividade de cria. No segundo trabalho, concluiu-se que os resultados obtidos nos dois experimentos demonstram a importância da medição da circunferência escrotal como método de avaliação de touros, pois, ao alcançar a puberdade, o touro já pode ser avaliado. No terceiro trabalho, concluiu-se que, com o aumento da idade, há uma maior predisposição de descarte de touros e que exames que omitam qualquer uma das etapas de avaliação da aptidão reprodutiva fazem com que touros inaptos permaneçam nos rebanhos de cria. / This work had the following aims: 1) to determine the bioeconomic impact of breeding soundness examination (BSE) in cow-calf systems in order to check its importance as management practice that can help improve a herd’s reproductive efficiency, 2) to quantify the variation in scrotal circumference, the effects of age and breeds and to investigate the relationships between testicular weight (TW), scrotal circumference (SC) and live weight (LW) in bulls. The results suggest that SC in young bulls is the best way to estimate TW and, therefore, a useful tool for the selection of bulls, 3) to quantify the reasons for the culling of beef bulls in the state of Rio Grande do Sul, Brazil, based on the BSE. A total of 30,700 bulls were assessed by the Bull Evaluation Program (BEP) between 2001 and 2004. Of this total, 17.12% were culled, and among the culled bulls, the general clinical examination, semen analysis and behavioral assessment showed similar culling rates (4.59, 4.54 and 4.29% respectively), contrasting with the results obtained by the special clinical examination (6.80%). The work consisted of three articles: 1) Bioeconomic impact of bull breeding soundness examination in cow-calf systems, 2) Measurement of scrotal circumference in beef bulls in Rio Grande do Sul, Brazil and 3) Reasons for the culling of beef bulls in breeding soundness examination in the state of Rio Grande do Sul, Brazil. The first article concluded that BSE is a low-cost management practice and an important technological alternative that aids in increasing the profitability of cow-calf production In the second article, the conclusion is that the results obtained in the two experiments show the importance of measuring SC in bulls, as this measurement can be made as soon as a bull enters puberty. The last article concluded that aging increases the probability of bull culling, and examinations lacking any stage of the breeding soundness assessment cause inapt bulls to remain in cow-calf herds.

Criopreservação seminal do tambaqui Colossoma macropomum / Cryopreservation of Colossoma macropomum sperm

Neste estudo o objetivo foi avaliar a qualidade do sêmen de Colossoma macropomum pós-descongelamento, utilizando dimetilsulfóxido (DMSO) como crioprotetor combinado com duas soluções diluidoras (tratamentos): T1 (Glicose – 90,0 g/L, Citrato de Sódio - 6,0 g/L, EDTA - 1,5 g/L, Bicarbonato de Sódio - 1,5 g/L, Cloreto de Potássio - 0,8 g/L, Sulfato de Gertamicina - 0,2 g/mL) e T2 (Glicose - 90,0 g/L e Água de Coco em Pó - ACP® - 10,0 g/L). O sêmen de 26 animais machos, previamente analisados foi criopreservado em cinco momentos diferentes dentro do período reprodutivo, constituindo cinco pools. Quatro fêmeas foram utilizadas para observação dos índices de produtividade (taxas de fertilização e eclosão). Foram avaliados nos tratamentos, motilidade (Mot), tempo de motilidade (TMot), patologias espermáticas, taxa de fertilização e eclosão, integridade da membrana espermática, funcionalidade da mitocôndria e do DNA espermático. A Mot e o TMot não diferiram (P>0,05) entre os tratamentos T1 e T2 e ambos foram inferiores ao sêmen in natura. O número de espermatozoides normais foi significativamente diferente (P<0,05) nos tratamentos T1 (15,1%) e T2 (21,9%), e ambos apresentaram uma redução no percentual de espermatozoides normais quando comparados ao sêmen in natura (57,4%).Quanto as taxas de fertilização e eclosão não houve diferença (P>0,05) entre os tratamentos avaliados (T1 e T2). Após a criopreservação dos espermatozoides, não foram verificadas diferenças (P>0,05) entre os tratamentos, na funcionalidade da mitocôndria e integridade do DNA espermático. Quanto a integridade da membrana, no T1 (53,4%) apresentou maior percentual (P<0,05) de espermatozoides com a membrana integra do que no T2 (43,7%). A solução crioprotetora composta com duas soluções testadas não foram efetivas na proteção estrutural da célula espermática. Porém, mantiveram integro em quase que toda sua totalidade o DNA dos espermatozoides de C. macropomum. / Cryoprotectant solutions aim to protect spermatozoa from injuries produced by low temperature in the cryopreservation process. In this study we evaluated the quality of Colossoma macropomum semen after thawing, using dimethyl sulfoxide (DMSO) as a cryoprotectant combined with two extender solutions (treatments): T1 (Glucose - 90.0 g/L, Sodium Citrate - 6 0 g/L, EDTA - 1.5 g/L, Sodium Bicarbonate - 1.5 g/L, Potassium Chloride - 0.8 g/L, Gertamicine Sulfate - 0.2 g/mL) and T2 (Glucose - 90.0 g/L and Powder Coconut Water - ACP® - 10.0 g/L). Semen from 26 males, previously cryopreserved was analyzed at five different times throughout the reproductive season, forming five pools. Four females were used for observation of reproductive indexes (fertilization and hatching rate). The following parameters were assessed: motility (Mot), motility time (TMot) sperm pathologies, fertilization rate and hatching rate, sperm membrane integrity, mitochondrial and sperm DNA function. The Mot and TMot did not differ (P> 0.05) between T1 and T2 and both showed lower values compared to fresh semen. The number of normal spermatozoa was significantly different (P <0.05) in T1 (15.1%) and T2 (21.9%) treatments, and both showed a reduction in the percentage of normal spermatozoa when compared to fresh semen (57.4%). Regarding fertilization and hatching rates, there was no difference (P> 0.05) between the treatments (T1 and T2). After sperm cryopreservation, no differences were evidenced (P> 0.05) between the treatments for mitochondrial functionality and sperm DNA integrity. T1showed a higher membrane integrity (53.4%) than that found in T2 (43.7%). The cryoprotectant solution tested in this study did not work effectively in protecting spermatic cells from structural damages. However, majority of the cells remained with intact DNA after thawing.
