No. of bitstreams: 1 Marili Gramolini Garcia Winckler.pdf: 4778306 bytes, checksum: fa545fdf2d3520b2589f607ad84a18c5 (MD5) Previous issue date: 2007-02-19 / The implantation of the prerequisites ones of the Program of Hazard Analysis and Critical Control Points (HACCP), Good Manufacturing Pratices (GMP) and the Sanitation Standard Operating Procedures (SSOP), is basic to supply the necessary basic operational and ambient conditions the innocuous and healthful food production. In this context, the gauging of the functioning of these prerequisites ones was effected through microbiological analyses of equipments and carcasses harvested in two slaughter house, located in the states of Mato Grosso and Rondônia. The study of the hygienically-sanitary conditions of the samples they had been carried through the analysis of Total count mesofiles aerobic microorganisms and Enterobacteriaceae. The two slaughter house presented results of Total count of viable microorganisms and Enterobacteriaceae on carcasses as microbiological criteria required by existing legislation. The microbiological analysis of the equipments showed that occurred as the consolidation of programs of quality and training of officials of the team for hygienisation, there was a tendency to call the microbiological criteria, as was evidenced during the last three months of research. Through the implementation of programs for pre requisite GMP and SSOP and maintenance of microbiological criteria to assure the safety of the final product, the two slaughter house were entitled to the Export Market. / A implantação dos pré-requisitos do Programa de Análise de Perigos e Pontos Críticos de Controle (APPCC), as Boas Práticas de Fabricação (BPF) e Procedimento Padrão de Higiene Operacional (PPHO), são fundamentais para fornecer as condições operacionais e ambientais básicas necessárias para a produção de alimentos inócuos e saudáveis. Neste contexto, a aferição do funcionamento desses pré-requisitos foi efetuada através de análises microbiológicas de equipamentos e carcaças colhidas em dois matadouros frigoríficos, localizados nos estados de Mato Grosso e Rondônia. Os estudos das condições higiênicosanitárias das amostras foram realizados através da análise de Contagem total de microrganismos aeróbios mesófilos e de Enterobacteriaceae. Os dois frigoríficos apresentaram resultados de Contagem total de microrganismos viáveis e de Enterobacteriaceae em carcaças conforme os critérios microbiológicos exigidos pela Legislação vigente. As análises microbiológicas dos equipamentos evidenciaram que conforme ocorria a consolidação dos programas de qualidade e treinamento dos funcionários da equipe de higienização, havia tendência de atendimento aos critérios microbiológicos,como foi comprovado durante os últimos três meses de pesquisa. Através da implantação dos programas de pré-requisitos BPF e PPHO e da manutenção dos critérios microbiológicos para garantir a inocuidade do produto final, os dois frigoríficos foram habilitados ao Mercado Externo.
