The aim of this thesis is to analyse lifestyle changes and their impact on tourism. Goal to zoom in on the changing trend in the area of lifestyle, nutrition and wellness toward health. The theoretical part explains the lifestyle as a term and characterizes the wellness concept and worldwide trends in the field of wellness. It also represents the alternative methods, therapies and wellness services. It also deals with the problems of nutrition and nutritional alternative styles and introduces some of the results of the World Health Survey in the Czech Republic. The main part of the thesis includes own research on the preferences of the Czech population in the area of lifestyle, which is based on a questionnaire.

Využití plazmových technologií ke zlepšení kvality krmiv / The Usage of Plasma Technologies to Improve the Quality of Feedstuffs

The dissertation thesis deals with the problems of the use of plasma technologies in agriculture for the purpose of improving the quality of feedstuffs for agricultural animals. The attention is focused above all on the use of low-temperature gliding arc plasma discharge generated by the atmospheric pressure for the elimination of model fungal pathogens (T. virens) and for the testing of the possibility of the use of plasma for the decreasing of mycotoxin load (DON and D3G). The professional orientation of the dissertation thesis is strongly interdisciplinary with the overlap to the area of the physics of plasma, microbiology, zootechnics and the proposal and construction of technical facilities. With that corresponds also the division of thesis into individual chapters. In the research part, there is a summary of actual pieces of knowledge from the area of fungal microorganisms and mycotoxins produced by these with the view on their presence in feedstuffs. There follows a research of pieces of knowledge of low-temperature plasma and its applications in the food industry and feeding. In the chapter Material and Methodology, the applicated methods of work, employed instruments and biological material are described. The resulting part is, for its clear arrangement, divided into five subchapters ? stating of selected parameters of plasma device, influence of plasma on nutritional parameters, influence of plasma on the model fungus Trichoderma virens and possibilities of the use of plasma discharge for the decreasing of concentration of mycotoxins in feedstuffs. The final part is dedicated to the description of system which enables the treatment of samples in continuous regime. The treatment of mycelial discs by plasma discharge lead to the decrease of germination capacity of spores of fungi, while there was experimentally proven the synergic effect of the influence of individual mechanisms by which the plasma interacts with the surface of biological material. At the same time, there was not observed a more significant change in the composition of feedstuffs, more significant is only the change of humidity of sample. In the laboratory conditions, the decreasing of concentration of mycotoxins spread on laboratory glass was proven. At the samples of feedstuffs contaminated by natural way, it was not successful to reliably provedecreasing of concentration of mycotoxins in a sample as a result of plasma activity.

Problematika výživy u dětí v rámci školní docházky je stále aktuální a upoutává pozornost. Obezita u dětí se stále zvyšuje. Je mnoho publikací na problematiku obezity u dětí a s tím spojený vyšší počet úrazů a vyšší problematika pozornosti (ADHD, ADD a jiné poruchy). V České republice se stále více vyskytují děti s obezitou, nezdravým životním stylem, který doprovází i nedostatek pohybu. Tyto faktory vedou ke zhoršení fyziologických funkcí, zatěžování statického a pohybového aparátu člověka a v neposlední řadě ke špatnému psychickému stavu jedince. V diplomové práci se zaměřím na stravování při školní docházce a možné stravovací návyky, které mohou přispívat k dětské obezitě, častějším zdravotním problémům. Pomocí anketního šetření práce zjistím, jak se stravují žáci základních škol na Slánsku (Základní škola Slaný, Komenského náměstí 618 a Základní škola Smečno, okres Kladno) při pobytu ve škole. Dětská obezita a její léčba v lázeňském prostředí / Childhood obesity and treatment of childhood obesity in the spa

The objective of this study was to find out if patiens with obesity were adequately educated in the area of the food composition since they were staying at Bludov Spa for the therapeutic program. In addition, determine whether family food consumption affects the percentile value of children, and whether frequency of breakfast and snack classification in children with optimal weight and children with overweight or obesity is different. Methodology: The practical part of this work is based on a questionnaires survey. The questionnaires were filled by 210 respondent in total. Pupils from primary school answered 104 questionnaires and patiens from the spa filled 106 questionnaires. Pupils from primary school were aged between 14 - 16 years, thein questionnaires were categorized according to percentile values per group below 90th percentile and above 90th percentile, based on age and calculated BMI. The patiens at the spa were aged between 7 - 18 years and all were in the group over the 97th percentile, but then question naires had to be categorized by age, in the 7 - 14 age group (younger and older schoolage), 15-18 years (adolescence), also a group aged 14 - 16 years was created to compareit with a group from the spa. Nutriční a mikrobiologická charakterizace sojového sýru tempeh / Nutritional and microbiological characterization of soya tempeh cheese

Tempeh belongs to the fermented probiotic soybean products. Tempeh is a valuable nutritional foodstuff due to its rich source of protein, content of unsaturated fatty acids essential for human and high amount of antioxidants. The theoretical part describes nutritional composition of tempeh and soybeans. In the thesis are discussed positive and negative effects of soy on human health. In the thesis were followed up changes in the nutritional components caused by the fermentation process and the action of microorganisms. The experimental part deals with the identification of microorganisms, which are contained in three types of tempeh. Microorganisms were detected using method polymerase chain reaction. DNA was isolated from the products by use phenol extraction, using magnetic microparticles F-kol 77ox and magnetic nanoparticles F79/L3 PLL. As part of the nutritional analysis changes in individual nutrients and other substances in soybeans after tempeh fermentation have been studied. In the chosen products total content of essential nutrients – carbohydrates, lipids and proteins were analyzed. Amount of antioxidants such as phenolics and flavonoids were analysed by UV-VIS spectrophotometry. Determination of vitamin E content which was analysed by HPLC and determination presence of fatty acids which was determined by GC was incorporated to this thesis.

Charakteristika výživových hodnot masa různých hospodářských zvířat. / Characteristic of nutrition values of meat from different animals

ABSTRACT In this thesis, there were assessed basic nutrition values of meat from different animals. Beef meat (bulls, heifers and veal), pork meat ( castrates, boars and gilts ), rabbit meat and chicken meat were included in the experimental part. There were moisture, lipids, proteins, ash and hydroxyproline determinated. Attention was given especially to the content of lipids and moisture. The animals were compared in terms of their type and on the basis of possible differences between sex (beef and pork meat), breed (beef and rabbit meat) or between different parts of animals` body (chicken and rabbit meat). Individual types were also compared with each other. For human nutrition it is possible to recommend veal meat, which contained the least amount of fat, MLD from rabbit meat and chicken breasts. Pork meat from young animals is comparable to chicken breast as regards the content of fat. We should also not omit beef meat in our bill of fare. Thanks to breeder technology the beef is now lower in fat than it used to be and contains valuable matters of red meat.

Title: Nutritional supplements as permitted doping Objectives: The main goal of this thesis is to find out for what specific reasons users of additional resources are willing to invest their money in the purchase of supplements, and also what is the decisive factor in choosing a particular type of product. Methods: To find out the knowledge of people sports at a professional or amateur level in the field of nutritional supplements, the method of questionnaire sociological survey was used. This method was used in order to determine the awareness of athletes about this topic, their possible influence by advertising or product prices, and also to ensure the complete anonymity of respondents. Results: This thesis describes the topic of nutritional supplements among athletes across all possible sports. We have found that the sports population has a very good overview of nutritional supplements, but at the same time it does not give as much of the right balance of their food.
