The theoretical part deals with the description of each byproducts, their production, use in kitchen and health effects. There are mentioned products known, easily obtainable on the Czech market, but also products that are gradually getting into awareness of customers and begin to be sought. The practical part dealt with the production of wine jelly and compare the results with commercially available products. When comparing the content of alcohol, it was lower in the experimental samples, because of longer exposure to heat. In commercial products was measured content of alcohol and sugar and the results were compared with the values listed on labels. These values were different. Often we meet with bad naming of individual products. Grape jelly is produced from wine, and the wine jam is made of wine must.

Theoretical part of the diploma thesis contains basic morphology of grapevine berries, chemical structure, extraction, storing and reproducing of grapewine juice. Literature review does not forget about right possibilities of grapevine juice ana-lysis and technical equipments which are required for measuring of viscosity, density and sugar content. Practical part of this diploma thesis deals with specific set of samples which were created for this thesis. Its about six kinds of grapevine grapes, which were picked up after one week interval for three times. After analysis some differences were detected in me-asured parameters between particular varieties and viscosity relation with sugar con-tent of grapevine juice. Results were discussed and outcome were concluded.

The aim of this work was the determination of selected biogenic amines in selected varieties vine fruit. The literature review describes the characteristics of biogenic amines, their creation, It is specified formation of biogenic amines individual microbiological agents and their health effects on the human organism. Then work characterized the winemaking process, and possible effects creation and content of biogenic amines in its manufacture. Custom work is divided into several parts Were monitored randomly collected samples of wines from around the Moravian region and analyzed the contents of biogenic amines. During alcoholic fermentation, malolacical fermentation and purification process was monitored training and development of these substances. Was observed dynamics of biogenic amines during fermentation and BA were determined after malolactical fermentation . Investigate the possibility of elimination of biogenic amines in wine clarification - were studied reduction of biogenic amines using standard fining agents (bentonite, gelatin, PVPP, Tosil). Watch biogenic amines (histamine, tyrosine, tryptamine, cadaverine, spermidine, spermine and putrescine) will be analyzed in a sample of chromatographic separation and quantified by comparison with standards.

Možnosti využití vybraných materiálů pro výrobu bioplynu

This work deals with the anaerobic treatment of grape marcs. In this work we tested two varieties of wine. Veltlínské zelené and Zweigletrebe. Tests were carried out in the Republic reference laboratory at Mendel University in Brno under mesophilic anaerobic conditions for 24 days in 0.003 m3 reactors and for 26 day in 0.120 m3 reactors. Biogas production and methane content were monitored daily during the test. The measurement results of testing variety Veltlínské zelené were: Substance loads ratio 0.496 kg.kg-1 - specific production of biogas 0.415 m3.kg-1, specific production of methane 0.246 m3.kg-1 and average concentration of methane in biogas was 59.3%. Substance loads ratio 0.099 kg.kg-1 - specific production of biogas 0.656 m3.kg-1, specific production of methane 0.262 m3.kg-1 and average concentration of methane in biogas was 39.8 %. The measurement results of testing variety Zweigeltrebe were: Substance loads ratio 0.496 kg.kg-1 - specific production of biogas 0.378 m3.kg-1, specific production of methane 0.234 m3.kg-1 and average concentration of methane in biogas was 61.9 %. Substance loads ratio 0.095 kg.kg-1 - specific production of biogas 0.544 m3.kg-1, specific production of methane 0.262 m3.kg-1 and average concentration of methane in biogas was 48.9 %.
