This thesis describes methods of work and structural variants of wine presses used in modern wineries in detail. It summarizes strengths and weaknesses of technological solutions. The practical part of the thesis deals with the evaluation of two presses, each of which is based on a different principle. The effects of pressing were observed during the processing of three grape varieties -- Sauvignon, Chardonnay and Zweigeltrebe -- in 2011, 2012 and 2013. The amount of pressure, processing, most gain and productivity were assessed. The cost of processing one hectolitre of the product was fixed for both systems.
