Adotou-se o delineamento experimental em blocos casualizados, com 18 tratamentos, distribuído em esquema fatorial 4x4+2, com quatro repetições. Os tratamentos resultaram da combinação de quatro doses de N-ureia (0, 75, 150 e 225 kg ha-1 de N) com quatro doses de esterco bovino (0, 10, 20 e 30 t ha-1) para o plantio de alface consorciada com rúcula e dois tratamentos adicionais referentes aos cultivos de alface e rúcula em monocultura. Realizaram-se dois experimentos, um no verão e outro no inverno de 2010, utilizando-se a cultivar de alface Vera e a cultivar de rúcula Folha Larga. As plantas de alface foram avaliadas quanto: nitrato, fenólicos totais, pH, acidez total titulável, sólidos solúveis totais, valor energético total, fibras, lipídios, glicídios e proteínas, umidade, e teores de P, K, Ca, Mg, S, Cu, Mn e Zn. Os maiores teores de nitrato encontrados foram 363,62 mg de NO3 - kg-1 no verão e 896,88 mg de NO3 - kg-1 no inverno, na dose de 225 kg ha-1 de N. Para todas as doses de N-ureia e/ou esterco bovino estudadas os valores são considerados baixos, quando comparados ao limite tolerável que é de 2.500 mg de NO3 - kg-1 de massa fresca. Para as demais variáveis de qualidade observaram-se teores adequados para o consumo humano. Diante dos resultados obtidos, concluiu-se que com a aplicação de até 225 kg ha-1 de N combinada ou não com até 30 t ha-1 de esterco bovino, foi possível a produção de alface com qualidade nutricional adequada para o consumo humano / This study aimed to evaluate some nutritional quality characteristics of lettuce under intercropping and single cropping, fertilized with different doses of N-urea and cattle manure. The experiment was conducted in a randomized complete block design, with 18 treatments and four replications. Treatments being arranged in a 4 x 4 + 2 factorial design. The treatments were the result of a combination of four N rates (0, 75, 150 and 225 kg ha-1) and four rates of cattle manure (0, 10, 20 and 30 t ha-1), plus two additional treatment, which corresponded to the cultivation of lettuce and rocket under single cropping. There were conducted two experiments, one in summer and one in winter of 2010, using the “Vera” lettuce cultivar and “Folha Larga” rocket cultivar. After harvest, the lettuce plants were analyzed for the levels of nitrate, total phenolics, pH, titratable acidity, soluble solids, total energy, fibers, lipids, carbohydrates and proteins, moisture, and levels of P, K, Ca, Mg, S, Cu, Mn and Zn. The higher nitrate levels were 363.62 mg of NO3 - kg-1 of fresh matter in the summer and 896.88 mg of NO3 - kg-1 of fresh matter in the winter, with the application of 225 kg ha-1 of N. For all tested doses of N-urea or cattle manure the nitrate results obtained were considered low compared to the tolerable level that is 2,500 mg of NO3 - kg-1. For other quality variables were observed levels suitable for human consumption. Based on these results, it was concluded that for doses until 225 kg ha-1 of N combineted or not with until 30 t ha-1 of cattle manure applied, lettuce leaves were obtained showed suitable nutritional quality
