that are characterised by low meat production. However, crossing these animals with
goats that are pure bred for meat production can improve their meat production
capabilities. The goal of this study was to evaluate the quantitative and qualitative
characteristics of meat from UDB goats and their hybrids with the Anglo Nubian and
Boer breeds. Thirty non-castrated goats, including 10 UDB, 10 ½ Anglo Nubian x ½
UDB and 10 ½ Boer and ½ UDB, with an average age of 150 days and an average
initial live weight of 19.05 kg were used. Genotype had no effect on the marbling of the
meat, as determined by real-time ultrasound. Cholesterol concentrations in the meat
from ½ Anglo Nubian x ½ UDB goats were lower than those in the other genotypes. We
also detected a higher percentage of saturated fat and, consequently, a lower percentage
of unsaturated fat in the UDB goats. The measurements of shear force, water-holding
capacity, weight lost due to cooking and chemical composition of the goat meat were
not affected by genotype. The goats that were part Anglo Nubian or Boer had a higher
intensity of red colour in the meat, both in the objective evaluation and the subjective
evaluation. The meat from the Anglo Nubian x UDB and Boer x UDB genotypes had
higher lipid quality than the meat from the UDB goats. Crossing the Anglo Nubian and
Boer breeds with UDB goats reduces the percentage of saturated fats and increases
unsaturated fat in meat. / Existe um efetivo expressivo de caprinos Sem Raça Definida (SRD) na região
Nordeste do Brasil, estes animais são caracterizados pelo baixo potencial em produzir
carne de qualidade. No entanto, seu cruzamento com animais de raça pura com de
aptidão para corte pode proporcionar melhorias na qualidade da carne. Este trabalho
teve como objetivo avaliar as características quantitativas e qualitativas da carne de
cabritos SRD e seus cruzamentos com as raças Anglo Nubiano e Boer. Foram utilizados
30 cabritos não castrados, sendo 10 SRD, 10 ½ Anglo Nubiano ½ SRD e 10 ½ Boer
½ SRD, com idade média de 150 dias e peso vivo inicial médio de 19,05. A
marmorização por ultrassonografia em tempo real e na carcaça não foi influenciada pelo
genótipo. A concentração de colesterol da carne dos caprinos ½ Anglo Nubiano x ½
SRD foi menor quando comparadas com os demais genótipos. O maior percentual de
ácidos graxos saturados e, consequentemente menor percentual de ácidos graxos
insaturados foram detectados na carne de caprinos SRD. Os valores da força de
cisalhamento, capacidade de retenção de água, perda de peso por cocção e composição
centesimal da carne caprina não sofreram efeito do genótipo. Os caprinos mestiços
Anglo Nubiano e Boer apresentaram maior intensidade para a cor vermelha da carne,
tanto na avaliação objetiva, quanto na avaliação subjetiva. A carne dos genótipos Anglo
Nubiano x SRD e Boer x SRD apresentaram qualidade lipídica superior a dos caprinos
SRD. A inclusão das raças Anglo Nubiano e Boer no cruzamento com os caprinos SRD,
reduz o percentual de ácidos graxos saturados e aumenta o de ácidos graxos insaturados
na carne.
