Místní suroviny a jejich využití v restauračních zařízeních (případ Jablonce nad Nisou) jako příklad rozvoje venkova / Local staples and their use in restaurants (the case of Jablonec nad Nisou) as a rural development case

This diploma thesis discusses relationship between customers, restaurant owners and regional and local products and furthermore there use in food preparation.
The goal was to answer several research questions from customers perspective. The restaurant owners were also involved by answering interview questions, asked by thesis author. The research was conducted in Jablonec nad Nisou and its surroundings. The goal of the thesis was to analyze, whether the local staples are used at least as much so they would have an impact on rural development or not. Literature overview is pointing out the origins of gastronomy in the Czech Republic, abroad and the effect of globalization on gastronomy. Important role in the overview plays also deeper look into regional products and their importance in rural development
