En el presente estudio se han aislado Staphylococcus aureus de quesos, embutidos y cremas chantilly, recolectados en la Ciudad de Lima, con el objetivo de identificar la presencia de enterotoxinas estafilocócicas a través de la técnica de la Reacción en Cadena de la Polimerasa (PCR). Mediante el método de la Comisión Internacional de Especificaciones Microbiológicas para Alimentos (ICMSF) se determinó que Staphylococcus aureus estaban presentes en 75% de las muestras de quesos, 44% de muestras de embutidos y ausente en cremas chantilly. El 46% de las muestras de queso presentaron recuentos de S. aureus mayores a 105 UFC/ g. Mediante la técnica de PCR multiplex para identificación de enterotoxinas SEA, SEB, SEC, SED, SEE, se encontró que el 5% de cepas portaban el gen sea, 5% gen seb, y el 5% gen sec, y el 85% resultaron negativas a algún tipo de enterotoxina clásica, se concluye que los quesos y embutidos comercializados en la ciudad de Lima se encuentran contaminados con S. aureus y algunos de ellos con cepas enterotoxigénicas. / In this study we have isolated Staphylococcus aureus in cheese, salami and whipped cream, gathered in the city of Lima, with the aim of identifying the presence of enterotoxins through the technique of the Polymerase Chain Reaction (PCR). Via the method of the International Commission on Microbiological Specifications for Foods (ICMSF) we found that Staphylococcus aureus were present in 75% of cheese samples, 44% of sausage samples but absent in whipped cream samples. 46% of cheese samples showed counts of S. aureus greater than 105 CFU / g. Using the technique of multiplex PCR for identification of staphylococcal enterotoxins SEA, SEB, SEC, SED, SEE, we found that 5% of the strains were carrying the gene sea, 5% were carrying the gene seb and 5% were carrying the gene sec, and 85% test negative of any classical enterotoxin, we can conclud that cold meats and cheeses sold in Lima are contaminated with S. aureus and some with enterotoxigenic strains.
