Utilizou-se a densidade inicial de 70 peixeslm3, em 18 tanques-rede (5,Om3), instalados no reservatório da Usina Hidroelétrica ITAIPU Binacional, no município de Santa HelenalParaná, durante 324 dias. O delineamento experimental foi inteiramente casualizado com dois fatores, Proteína Bruta (PB), em três níveis: 25, 30 e 35%; Energia digestível (ED), em dois níveis: 3.250 e 3.500 kcal, e três repetições para cada tratamento. A ração foi fornecida à vontade, mas mensurada diariamente. No início um lote de peixes foi sacrificado para determinar os parâmetros corporais e bromatológicos. A cada 28 dias, dois indivíduos de cada unidade experimental, foram abatidos e mensurou-se: comprimento total e padrão, pesos total, fígado, gônadas, cabeça, tronco limpo e gordura visceral, respectivamente. Posteriormente, cálculos do índice hepatosomático, índice gonadosomático, porcentagem de cabeça, rendimento de carcaça, e rendimento de tronco limpo (TL) foram realizados. A partir do mês de junho/2006 também, foram registrados o rendimento de filé e o sexo dos indivíduos. Para composição química da carne do jundiá foram realizadas as análises bromatológicas de umidade, proteína bruta, lipídios e matéria mineral. Pode-se concluir que, a dieta influência o rendimento de TL, sendo que a ração com 30% de PB proporcionou o melhor resultado. Quanto à composição bromatológica não houve influencia da dieta. / The aim of this study was to analyze the body performance and the chemical composition of jundia, Rhamdia quelen, fed with rations containing different protein and energy levels, cultivated in a fish cages system. An only density of initial storage of 70 fish/m3, in 18 cages (5.0m3), was used. They were installed in the Hidroeletric Plant of Itaipu Binational, in the county of Santa Helena, during 324 days. The experimental delineation was completely randomized with two factors (Crude Protein(RP), in three levels:25, 30 and 35%; Digestible energy(DE) in two levels:3.250 and 3.500 Kcal) and three replicas for each treatment . The ration was given with no limit but it was daily measured. At the beginning one portion of fish was sacrificed to determine the bodies and bromatologics parameters. Each 28 days, two individuaIs of the experimental unit was killed and the following was measured: total lengths and pattem, total weights, liver, gonad, head clean torso and visceral fat, respectively. Later, calculus of hepatosomatic index, gonadosomatic index, head percentage, carcass productivity and clean torso productivity, were done. Since June/2006, the performance of fiUet and the sex of the individuaIs were also registered. For the chemical composition of the Jundia meat, were realized the bromatologic analyses of humidity, crude protein, lipideos and mineral product. It could be observed that the diet influence on the TL performance, since the ration with 30% of PB provided the best resulto As for the composition bromatologic there was no influence of the diet.
