The lipid composition and seasonal changes of main cultivate shellfishes for economic purposes in Taiwan / 台灣主要養殖經濟貝類脂質成份

The lipid content of three mainly cultivate shellfishes in Taiwan hard clam, oyster and small abalone in Taiwan are in the range of 1.17-1.88%, 1.43-3.20% and 1.31-2.12%. The major compounds in lipids of three species are the same. Triacylglycerol, cholesterol, hydrocarbon, diacylglycerol, monoacylglycerol, sterol ester and free fatty acid are the mainly compositions of neutral lipid. The major contents in polar lipid include phosphatidylcholine, phosphatidylethanolamine, phosphatidylinositol and phosphatidylserine. According to the experiment, the seasonal change of neutral lipid contents is more than polar lipid. In neutral lipid, the change of total triacylglycerol is the major effect of lipid variation.
The major fatty acids of examined hard clam and oyster were 16:0, 18:1, 20:1, 20:5 and 22:6. The high proportion of fatty acids 16:0, 18:1, 20:0, 22:3 and 20:4 were observed in small abalone. Unsaturated fatty acid was abundant in the three species. The polar lipid composition contains higher proportion of unsaturated fatty acid, but in neutral lipid include higher saturated fatty acid. In view of nutrition, abundant EPA, DHA and phosphatidylcholine were observed in hard clam and oyster. Small abalone was rich in phosphatidylcholine, but lack in EPA and DHA.
