Rheological Properties of Monostroma nitidum Crude Polysaccharides Aqueous Solution and Its Application in Vital Moisture Cream Containing Liposome / 海菜水溶性粗多醣之流變性質及其在含微脂粒活力滋潤霜之應用

碩士 / 國立海洋大學 / 食品科學系 / 90 / The objectives of this study are to explore the rheological properties of crude polysaccharide aqueous solution of Monostroma nitidum and its application in vital moisture cream containing liposome which is used to encapsulate vitamin C and vitamin E. The study includes 1. To explore the effects of shear rate, solute concentration, solution temperature, NaCl concentration, solution pH, and shearing time on the rheological properties of crude polysaccharide aqueous solution of Monostroma nitidum, 2. To characterize effect of crude polysaccharide on particle size and stability of coated liposome, 3. To prepare and characterize the vital moisture cream containing liposome. The characteristics of liposome containing vital moisture cream includes apparent viscosity, stability, skin moisture capacity, pH value, and safety test. The results obtained are:
The rheological behavior of crude polysaccharide aqueous solution of Monostroma nitidum are pseudoplastic fluids. Increasing the solute concentration enhanced shear thinning properties of these aqueous polysaccharide solutions. The apparent viscosity of different concentrations crude polysaccharide aqueous solution decreased with increasing solution temperature. The apparent viscosity of crude polysaccharide aqueous solution also decreased with increasing NaCl concentration. The apparent viscosity of crude polysaccharide aqueous solution increased with increasing solution pH, till pH > 7, then the apparent viscosity decreased. This may be due to conformational change in the alkali environment. The apparent viscosity of crude polysaccharide aqueous solution decreased slightly with increasing shearing time.
The particle size of liposomes coated with crude polysaccharide of Monostroma nitidum decreased with increased cycles of microfluidizing treatment then reached to a constant value.
The particle size of liposomes increased with increasing concentration of crude polysaccharide of Monostroma nitidum used. Liposomes coated crude polysaccharide of Monostroma nitidum are more stable than that without coated crude polysaccharide.
The stability of vital moisture cream containing with or without liposome were stable for more one month. The products pH are around pH 5.8. The apparent viscosities of vital moisture creams containing liposome coated with crude polysaccharide of Monostroma nitidum were higher than that without coated crude polysaccharide of Monostroma nitidum. The safety test results in no erythema based on the Daize score test. After applying vital moisture cream containing with and without liposome, the skin pH decreased to pH 4.62-5.01. Skin moisture capacity in terms of electrical capacitance increase ratio are higher for those containing without liposome.
