The effects of different storage temperature and time cause on the serum physiological and biochemical parameters of grouper (Epinephelus coioides) were investigated. Ten Adult Epinephelus coioides were used. Epinephelus coioides were bleeded and put every two Epinephelus coioides blood into one test tube. Experiment is divided into A, B, C, D and E five groups. Blood samples were collected and stored in 4 ℃, -20 ℃ and –80℃ respectively. These blood samples were analysis at day 1, day 2, day 4, day 7, day 14, day 21 and the physiological biological index were measured by an automatic biochemistry analyzer, The items of the physiological biological index as follow: Ca2+、Mg2+、Glu、Alb、Chol、TP、TG、GPT、GOT、Na+、K+、Cl-. Storage at 4℃ Glu、GPT、GOT、TG、Chol、TP、Alb、 Mg2+、 K+ from day 1 to day 21 was no significant compare with the controls. Ca2+、Na+、Cl- was significantly higher (p<0.05) than in controls at day 4, day 7 and day 14 respectively. Storage at –20 ℃ Glu、GPT、GOT、 TG、Chol、TP、Alb、Mg2+、K+ from day 1 to day 21 was no significant compare with the control. GPT、Ca2+、Na+、Cl was significantly higher (p<0.05) than in controls at day 7, day 2, day 4 and day 2 respectively. Storage at –80 ℃Glu、GPT、GOT、TG、Chol、TP、Alb、Mg2+, K+ from day 1 to day 21 was no significant compare with the controls. Ca2+, Na+, Cl- was significantly higher (p<0.05) than in controls at day 21, day 4, and day 2 respectively.
