The wild mullet, cultured mullet, oilfish, bigeye tuna caught in Taiwan were sampled and their roe lipids were extracted with Folch method and analyzed by column chromatography, thin-layer chromatography with flame-ionization detection and gas chromatography. The total lipid content of wild mullet roe ranged between 21.89~22.09%, cultured mullet roe 19.87%, oilfish roe ranged between 16.43~19.45%, bigeye tuna roe ranged between 9.09~9.87%, bigeye tuna ripe roe ranged between 4.62~7.26﹪. The major components of lipids in five roes are the same, i.e.wax ester, cholesterol ester, triglyceride, cholesterol and phospholipid. The major fatty acids of examined wild mullet roe, oilfish roe, bigeye tuna roe and bigeye tuna ripe roe were C16:0, C18:1 and C22:6. The high proportion of fatty acids of C16:0, C18:1 and C18:2 were observed in cultured mullet roe. The major fatty acids of netural lipids of wild mullet roe, oilfish roe, bigeye tuna roe and bigeye tuna ripe roe in the cholesterol ester mixed with wax ester and triglyceride were C16:0, C18:1 and C22:6, but in cultured mullet roe, the cholesterol ester mixed with wax ester were C20:0, C18:1 and C22:6 ; the triglyceride were C16:0, C18:1 and C18:3.
By using spectrophotometry at 400-550nm for detection carotenoid composition of five roes. The results showed that wild mullet roe, maybe existence of zeaxanthin、cryptoxanthin,α-carotene, lutein and astacin ; cultured mullet roe maybe existence of lycopene,α-carotene and astaxanthin ; while the oilfish roe has no carotenoid ; bigeye tuna roe maybe existence of cryptoxanthin, lutein, flavoxanthin andβ-carotene ; bigeye tuna ripe roe maybe existence of β-carotene, zeaxanthin and echinenon.
