碩士 / 國立臺灣海洋大學 / 水產養殖學系 / 94 / The purpose of this study was to understand in the aquaculture industry the application of quality systems, for instance, HACCP, to determine the food safety conditions, and develop strategies determining the safety gaps according to different international regulations, to help enhance or develop this important industry in Honduras. The survey was conducted with eleven aquaculture-processing plants from Honduras, Central America. Among them, nine are shrimp processors and the other two process tilapia fillet. A questionnaire was used for the collection of data and face-to-face interview was held among all the aquaculture processing plants.
The variables measured were background of the company, sanitation standards operating procedures and good manufacture practices, record keeping and hazard analysis and critical control points and training. For the analysis of the variables, a frequency analysis and the Chi-square of independence test was used.
The results reflected that there were significant differences, in the level of education toward the food safety systems and on the ability of elaborating training records, the existence of a HACCP team toward the processing procedures were carried out in accordance with the HACCP and on the companies that had set a food safety system in place, the keeping of formal records of all the monitoring data toward the food safety procedures/food safety systems documented. On the other hand, some results showed no significant differences, they were the rate of employees that had an acceptable standard as food handlers toward the different types of training needed in the companies, the methods which staff made aware of food safety procedures toward the supportiveness of the companies in the implementation of food safety procedures/system, the keeping of formal records of all the monitoring data toward the process applied in the companies. The frequency analysis showed that all the companies would like to receive more support from the food authority of Honduras. Also most of them were unsatisfied with the level of support/advice provided by the government’s officers for training.
Regarding these results, it’s concluded that the food safety systems implemented in the processing plants still needs several important things to improve, in this instance, types of training applied, keeping of formal records of all the monitoring data and supportiveness of the companies in the implementation of food safety procedures/system. Industry, government and academia should work by the hand to achieve this improvement.
