碩士 / 中華大學 / 經營管理研究所 / 96 / This study investigates consumers who dine in Taoyuan、Shihmen、fresh fish restaurants and attempts to find out their expectation and satisfaction and finally provides suggestions to the managers or operators of the restaurants. The relation between consumers』 demographics、characteristic、expectation、and satisfaction was analyzed and then Importance-Performance Analysis (IPA) was applied. The result exhibited that 「cleanliness of the environment」、「courtesy and enthusiasm of the waiter」 and 「taste of the dish」 are the most important and should continue doing the items. Some items that are 「the speed of deals with the customer issue」 and 「fresh of the dish」 are the most important、but the consumers were unsatisfied them and the managers of the restaurants should be improved. Some advices are given to the fresh fish restaurant industry.
