Study on the Effect of Drying Conditions to the Contents of Decanoyl Acetaldehyde in Houttuynia cordata / 乾燥條件對魚腥草素成份影響之研究

碩士 / 國立宜蘭大學 / 食品科學系碩士班 / 98 / Houttuynia cordata (HC) was one of common Chinese medicine herbs inAsian. The essential oil of HC contained bioactive constituent (Decanoyl acetaldehyde). The chemical property of Decanoyl acetaldehyde was unstable, it oxidized easily to Methyl-n nonylketone. Decanoyl acetaldehyde and Methyl-n-nonylketone were used as the bioactive constituent on HC, and could be criterion of quality determination. Besides, this study discussed the influences of bioactive constituent for various seasons (spring, summer, fall and winter), drying methods (room temperature drying, hot air drying and freeze drying) and the sections of plant (leaf, aerial stem and subterraneous section). First, essential oil were extracted and concentrated by Likens-Nickerson apparatus and Kuderna-Danish concentrator. Then, the constituents of essential oil were separated and compared by using the gas chromatography and mass spectrometry. The experimental results exhibited the essential oil of HC had complex ingredients. The retention time of Decanoyl acetaldehyde and Methyl-n-nonylketone were 104 minute and 76 minute, respectively. The
relative content of HC bioactive constituents were higher after drying, highest on freeze drying, higher on hot air drying, and lowest in room temperature drying. Relative content of HC bioactive constituents were highist at subterraneous section, higher at aerial stem, lowest at leaf of plant. And relative content of bioactive constituents were higher at summer and fall. The best pocess were used freeze drying at summer (48.80%) and fall (50.72%) at subterraneous section. The oxidation on bioactive constituents of HC were 50% at leaf, 75%-90% at aerial stem, and 90%-95% at subterraneous section. Hue angle of HC of leaf were green, brown at aerial stem, yellow at subterraneous section, and it showed that browning of HC was due to the drying process. Chroma of HC increased by freeze drying, decreased by room temperature drying and hot air drying . The Hue angle of HC was increased at freeze drying. According ot the relationships between bioactive constituents of HC and color, the color of HC the could be a criterion of fast test in the bioactive constituents of HC.
This study used the HC powder to test the perilla britt houttuynia cordata tea bag. The results of sensory cvaluation indicated the tea bag was best for the coarse and low temperature low humidity drying process. It could be the reference for the product design of perilla britt-houttuynia cordata tea bag in food stuff industry.
