The aims of this study were to investigate the effects of replacing fish meal (FM) with fermented soybean meal (FSB) on growth performance, body composition and blood parameters in orange-spotted grouper (Epinephelus coioides). In experiment 1, eight isonitrogenic and isoenergetic diets were tested. Diet 1 has 54% fish meal (control), 14% of fish meal in diet 1 was replaced by soybean meal (basal), from diets 3 to 8, 5% of fish meal in basal diet was replaced by different kinds of fermented soybean meal (FSB1-6). The experiment was conducted for 10 weeks. After 10 weeks, control diet showed better percent weight gain (PWG), feed conversion ratio (FCR), protein efficiency ratio (PER), feed intake (FI), specific growth rate (SGR), condition factor (CF), hepatosomatic index (HSI) and intraperitoneal fat (IPF) than basal diet but it was not better than basal diet in terms of superoxide dismutase (SOD). Even though there were no significant differences between basal diet and fermented soybean meal diets with regards to growth performances and body composition, but fermented soybean meal diets have better values of percent weight gain, feed intake, specific growth rate, condition factor and intraperitoneal fat especially fermented soybean meal diet 2 compare to basal.
In experiment 2, five isonitrogenic and isoenergetic diets were tested: basal and 4 diets derived from basal diets were replaced by 1.25, 2.5, 3.75 and 5% of fermented soybean meal diet 2 respectively. The results showed that 2.5% or 3.75% gave higher values than 5%, and the low values were obtained by basal or 1.25%. The addition of fermented soybean meal increased feed intake which consequently improve percent weight gain.
This study indicated: (1) replacing 14% fish meal by soybean meal decreased growth and it also caused poor body composition.
(2) All the fermented soybean meal diets increased percent weight gain and feed intake compare to basal diet especially fermented soybean meal diet 2 at 2.5%-3.75% replacement levels.

Key words: grouper, fermented soybean meal, blood biochemical value,
superoxide dismutase.
