Studies on Species Identification of Moray Eel by Using Electrophoretic Techniques of Muscle Proteins / 利用魚肉蛋白電泳技術鑑定鯙鰻魚種之研究

博士 / 國立臺灣海洋大學 / 食品科學系 / 99 / Moray eels are commercially important fish species in Taiwan. These fishes are distributed in the tropical and subtropical coral reef and are edible. To obtain useful information for identifying the species of moray eel that might be used in processed fish products, eleven fresh meats of moray eels including Gymnothorax favagineus, G. fimbriatus, G. flavimarginatus, G. meleagris, G. pseudothyrsoideus, G. undulatus, G. albimarginatus, G. javanicus, G. kidako, G. formosus, and G. nudivomer were assayed by using the electrophoresis method of SDS-PAGE. The SDS-PAGE patterns of myofibrillar and sarcoplasmic proteins for the 11 species of fresh meats of moray eel showed species specific protein bands under 30 kD. The species of processed moray eel meat might also be identified through comparison of the myofibrillar and sarcoplasmic protein patterns revealed by SDS-PAGE electrophoresis.
Furthermore, IEF patterns of 11 moray eel muscle proteins also showed the species specific, especially for pI < 5.0. IPG-2DE was used to assay the different 5 patterns of moray eel muscle proteins. It was also found that the spots under 30 kD and pI < 5.0 showed species specific characteristic. Therefore IEF and IPG-2DE are also useful methods to detect the species of moray eels.
