Tracking the change of Vibrio parahaemolyticus in marine aquacultures of Taiwan / 腸炎弧菌在台灣海產養殖環境之變化

碩士 / 東吳大學 / 微生物學系 / 99 / Vibrio parahaemolyticus is the most prevalent food poisoning bacterium in Taiwan via the consumption of contaminated seafood. The FDA of United States has finished a draft on the Risk Assessment of V. parahaemolyticus in raw molluscan shellfish for public health and monitoring raw oyster. Such risk assessment contained the harvest, post-harvest and public health modules and the harvest module is based on the level of V. parahaemolyticus in relation to the environmental factors, such as temperature and salinity. Also, the appearance of new O3:K6 strains reveals that the introduction of foreign cultures and natural genetic variations are related to the change of pathogenic V. parahaemolyticus. Aim of this project is to provide data for the establishment of domestic risk assessment for this pathogen by monitoring the dynamic changes of pathogenic V. parahaemolyticus in sediment, seawater and seafood in local oyster and clam culturing farms. Three oyster farms and two clam farms were selected. Sediment, water and cultured animal were samples in September, December, March and June to determine levels of V. parahaemolyticus counts along with the determination of temperature, salinity and other environmental factors. The change of V. parahaemolyticus levels of the harvested seafood were also monitored from farm to markets. In the harvest module, levels of V. parahaemolyticus number varied seasonally. The number of V. parahaemolyticus in clam farms was higher than those in oyster farms. We found that the V. parahaemolyticus level showed a negative correlation with the salinity and the dissolved oxygen. In the post-harvest module, the number of V. parahaemolyticus was 20 times highter than those of harvest module. Results of this project provide important reference for the public health managent and monitoring the sanitation of raw seafood.
