A Study of Implementing STS Instructional Model on Seafood Diet Nutrition Education for Eighth Graders / 國中八年級實施STS模式海洋食物營養教育教學活動之教學研究

碩士 / 國立屏東教育大學 / 數理教育研究所 / 100 / The purpose of this study was to analyze and evaluate the effects of Implementing STS instructional model on seafood diet nutrition education. Besides, the study was also to investigate what pragmatic difficulties may be encountered, and what can the teacher and students gain from this study. The subjects for the present study were 116 students from four classes in the eighth grade of junior high school in Pingtung county. These partici-
pants were divided into the experimental group and the control group. The experimental group implemented seafood diet nutrition education with STS instructional model; the control group, implemented with traditional in-
struction. The author conducted a research with mainly quantitative and partly qualitative methods. Quantitative data were collected from “The Knowledge, Attitude and Behavior of Seafood Diet Nutrition” used as the pretest and the posttest, supplemented by descriptive data collected from the class sessions. To compare the learning effectiveness between these two groups, statistical methods such as “One-Way ANOVA” and “t-test” were used. Additionally, the researcher also analyzed teaching journals, class-
room observations, interviews, and video tapes. These data were used to compare the learning effectiveness of the two groups, and to understand the difficulties that the teacher and the students face. The major findings were as follows:

1. In “The Knowledge of Seafood Diet Nutrition”, the results presented that both traditional instruction and STS instructional model can promote the students’ cognitive presentation of seafood diet nutrition effectively. But according to the total expression, STS instruction is more helpful for promoting the students’ cognition about seafood diet nutrition than traditional instruction. In cognitive domain, the experimental group could mainly reach the level of evaluation, the performance which exceeded the level of analysis shown by the control group.
2. In “The Attitude of Seafood Diet Nutrition”, the results presented that both traditional instruction and STS instructional model can promote the students’ attitude toward seafood diet nutrition effectively. But according to the total expression, STS instruction was more helpful for promoting the students’ attitude toward seafood diet nutrition than traditional instruction. However, there was no significant differences in the" attitude to concern about nutrition and marine resources constantly " sections. There was no significant difference between both groups’ also. In affective domain, the experimental group could mainly reach the level of characterization by a value or value system, the performance which exceeded the level of receiving or attending shown by the control group.
3. In “The Behavior of Seafood Diet Nutrition”, the results presented that both traditional instruction and STS instructional model can promote the students’ behavior of seafood diet nutrition effectively. But according to the total expression, STS instruction was more helpful for promoting the students’ behavior of seafood diet nutrition than traditional instruction. In psychomotor domain, the experimental group could mainly reach the level of adaptation, the performance which exceeded the level of complex overt response shown by the control group.

According to the results mentioned above, some suggestions for future studies and teaching were provided.
