A study on fish scale removal for milkfish / 虱目魚魚鱗去除之研究

碩士 / 國立成功大學 / 工程科學系專班 / 101 / In view of the need of exquisite fisheries, this study focuses on the production capacity of aquaculture in Taiwan. It is mainly about a series of market analysis and fieldwork for milkfish. From fisheries to market three main processes are perform which include removing scales, split belly gutting and removing branchiae. By developing the new mechanism for automation, we hope to improve design and improvement the efficiency of scale removal.
This study uses water jet for scale removal. The nozzles (A、B、C、D、E、F、G、I、J、K、M、N) and the nozzle angles (20、40、60 degrees) are varied to identify the relationships among the opening area ratio of the nozzle impact force and nozzle angle. Further to the relationships of fish surface impact force, and nozzle angle and that between water and the opening area are evaluated.
The study showed that using nozzles F with nozzle angle of 40 degrees to the scales, better removal rates can be achieved. Also water utilization is the most economic and the surface of the fish is also in the acceptable range.
