碩士 / 國立高雄餐旅大學 / 台灣飲食文化產業研究所 / 103 / This research aims to study the unique milkfish culture in Taiwan’s western coast, specifically focuses in the Tainan area. The research brings out Tainan’s unique food history of milkfish by emphasizing on local aquaculture background and people’s daily eating habits. Nowadays, tourism has greatly change Tainan’s food industry, and the popularity of milkfish plays a big part of it. The research then further discusses whether the symbolic consumption of milkfish changes local diet essence, or even weaken traditional food image.
Food culture carries ethnic history. Therefore, the review of local diet connotation benefits the study of people’s deep cultural origin. The research explored Tainan’s milkfish industry culture through literature review and participant observation. The in-depth interviews were conducted via selective sampling, including aquaculture farmers, venders and consumers. The findings indicate that Tainan’s coastal aquaculture was significantly influenced by Han Chinese migration. Furthermore, Tainan’s local cuisine and home cooking were also affected by the migration community and farmland products.
Compared to the other expensive meat and wild seafood, milkfish offers approachable option for protein obtainment in early agrarian society. Besides, Tainan is the specialized farming area for milkfish aquaculture, which does not only popularizes milkfish since early history, but also shapes the distinctive local food culture.
