Creation of A Local Specialty and Influence on its Added-value: A Case Study of the Donggang Sakura Shrimp(Sergia lucens) / 地方特產成型與在地價值變遷─以東港櫻花蝦為例

碩士 / 國立高雄餐旅大學 / 台灣飲食文化產業研究所 / 103 / “Three treasures of Donggang – bluefin tuna, sakura shrimp, and oilfish roe.” Donggang is famous for its fishing industry, which is why seafood dominates the majority of its local cuisines. In recent years, Donggang made its local tourism fame by its slogan the “three treasures of Donggang.” As culinary tourism continued to flourish, the local special cuisine tourism also became one of sightseers’ favorites, and caused the rise of the Bluefin Tuna Cultural Festival in Ping-Tung County, as one of the resources to develop leisure-tourism in Donggang. However, bluefin tuna’s price surge and yield decrease affected the Pingtung Bluefin Tuna Cultural Festival to reform. County Government then gradually moved the promotion focus of Cultural Festival from the tuna fish to the sakura shrimp, and therefore the sakura shrimp fishery in Donggang became the center of attention.
This study mainly focuses on the observation of sakura shrimp fishery actors in Donggang Township, and reviews the history and value shift of the sakura shrimp fishery in Donggang. Inhabited through the nature’s richly endowed location and grew under the effective management system of fishery production and marketing group, the sakura shrimp fishery thrived and becomes one of Donggang’s well known treasures. Follows by the value change of the sakura shrimp, its applications and impressions made in the local residents also gradually alternated. With the discussions of the influences by the sakura shrimp culinary festivals, the marine conservation idea, and the investigation of the production process from beginning to one’s dinner table, the author made connections between the culture formation of sakura shrimp industry, the industrial value shift, and local festival cuisines. Consider by the culinary tourism, Actor-network theory, Donggang’s distinctive industries, and study of the sakura shrimp, subjects were purposely sampled to conduct in-depth interviews.
This study finds that the value of sakura shrimp came from Donggang’s fishermen discovering Japan’s bulk buying of the sakura shrimp. The fishermen then, through the festival market promotion and actor-netowrk, developed sakura shrimp’s high economic value. This also influenced the behavior change for local residents’ sakura shrimp consumption, as well as Donggang’s sakura shrimp fishery development and cultural recognition.
