Cultural tradition and innovation of thread noodle supplying business in Taiwan-A case study on the offshore islands Penghu and Kingman / 麵線產業文化的傳統與創新--以澎湖、金門為例

Since the ancestors’ era, it has been one of the most important food ingredients used for ceremonies of long-life and birthday greetings, blessings praying, weddings, temple’s worship, as well as the local street foods. Recently, western-style diets and the trend of globalization have affected Taiwanese daily dietaries. Western-style pasta is getting more popular and that makes our life fulfilled with diversities. Meanwhile it also indirectly impacts the frequency and habit consuming Chinese-style pasta in Taiwan. Associating with the liberalizing market, in particular being a member of WTO, many overseas cuisine brands have been accessing to the Taiwanese market. Domestic owners of catering business are receiving serious challenges. Efficiency, convenience and dynamic tastes are critical factors for the survival of a public catering supplier. Therefore the business operating in tradition is less competitive in cost with the machine-produced foods. In consequence, the evolved dining habits among Taiwanese people have led the traditional catering business to the crises from sustainable operation.
In this study, we selected two Taiwanese offshore islands, Penghu and Kingman, to retrospectively survey the development of thread noodle supply. Techniques including literature analysis, visiting interview in depth, and observation along participation were employed. The thread noodle suppliers participated in the interviews of this study were selected in accordance with the investigational outcomes of dining tours, local characteristics, and hand-made procedures. In addition, we directly participated the practical processes producing thread noodle. Furthermore, we collected and analyzed the thread noodle-related literatures to examine the evolution of value and the connection of local foods. It was aimed to enhance the awareness of thread noodle supplying business.
The results of this study reveal that Taiwanese thread noodle supplying industry exhibits very rich cultural heritages. However, the younger generation is gradually losing their awareness of such cultural background and insight of hand-mad thread noodle. It becomes even worse that they have not yet perceived the crisis of the vanished traditional supply business. We found that the suppliers of thread noodle in Penghu and Kingman still retain the characteristics of their traditional heritages. Through acquiring the information, we have learned the features of hand-made thread noodle. We also become aware of how did the thread noodle suppliers leverage tradition and innovation to explore their niche resources and the customer-oriented market. To enhance customers’ awareness of the culture and uniqueness about the thread noodle supplying business, the government is suggested to develop marketing strategies for local tour in conjunction with support of sales promotion. Along with the implementation of quality control, good manufacturing practice and package design, the consumers will enjoy the convenience in food shopping, cooking and tasting. Recently, the issues of food safety have frequently raised the public concerns in Taiwan. If proper marketing strategies integrated with eco-friendly propaganda can be applied, it will be greatly helpful for boosting the growth of thread noodle supplying business in Taiwan. Ultimately the historical heritages and local cultural identity can be maintained.
