Health risk assessment of residents consuming heavy metal contamination in wild fish and vegetable near industrial areas in central Taiwan / 臺灣中部工業區附近野生水產動物與蔬菜中重金屬污染之人體健康風險

Heavy metals are less mobility and high residual in environments, they can be accumulated in environmental easily. The highly development is in central Taiwan, including coastal area (Dajia industrial park and Taichung industrial park, planting industry and surface treatment industry), Taichung fire power plant and smelting for steel industry. The major emission pollutants are metals.
Therefore, the present study aims to analyze the background levels of heavy metal in vegetables and fish, and fishery products of central Taiwan. Meanwhile, the metal contents in fish and vegetables were used for calculating health risk assessment. The levels of heavy metals (Pb, Cd, Cr, As, Hg, Ni, Zn, Cu) are measured by inductively coupled plasma mass spectrometry, (ICP-MS). Overall, 149 vegetables and 37 fish and fishery products have been collected in the present study for metals analysis fromnear industrial areas in central Taiwan.
In vegetables, the highest concentration was Zn in leafy vegetables (the average level: 8.96 μg/g, range: 0.465-76.5 μg/g), followed by Ni in the Brassica vegetables; In fish and fishery products, the highest level was Zn in shellfish (the average level: 16.8 μg/g, range: 11.6-21.7 μg/g), followed by the Ni in crustaceans. For Pb, 5.91% are over Taiwan permissible limited. For Cd, 4.3% are over Taiwan limited.
Pb, Cd, As and Ni are grouped as carcinogens, but only Pb and As are from ingestion pathway, therefore, Cd and Ni were excluded because of their carcinogenic target is lung, through inhalation pathway. For vegetables, the highest cancer risk of Pb and As in different area of central Taiwan is in Long-Jing (6.08×10-4), and for fish and fishery products, the highest is in Ho-Li regions (5.17×10-3). The non-carcinogenic risks are calculated in two ways. One is based on FAO, the hazard index (HI) is higher than 1, which exceeds the acceptable threshold and may cause adverse physical health effects. The other is based on provisional tolerable month/weekly/day intake, (PTMI/PTWI/PMTDI) of JECFA. The algorithm, the specifications of the metal is Cd, Hg, Cu and Zn, the total HI is less than 1, below than in the human body acceptable range. Conclusively, the total HI of vegetables in Changhua is close to 1, so it still needs to pay consideration for its risk.
The accumulation of heavy metals in different types of foods is different from the food intake after the calculation of the risk of ingestion. It is recommended that a balanced diet should not eat the same type of food, except that it can ingest different nutrients and at the same time disperse the dietary risk.
