The interview style surveys were used to collect data and conduct data analysis for the consumer behaviors of middle- aged and elderly adults on the diet of fish rice noodle. The result shows that:
1.Consumers focus on the quality of the ingredients and nutrition value.
2.The fish rice noodles meet the consumer’s dietary habits, and the food acceptance is high.
3.The provision or demo of tasting and introducing in person can increase consumers’ willingness to purchase.
4.The smell of fish did not affect the willingness to purchase.
5.The best distribution channel is where consumers are easy to purchase.
6.It is possible that the fish rice noodle becomes the staple food in the future.
