Exploring Business Model Innovation of Japanese Style Foodservice in Shanghai of A Japanese Restaurant / 上海地區日式餐飲商業模式創新之探討-以A日式餐廳為例

First-tier cities (Beijing, Shanghai, Shenzhen) and Guangzhou have unique food culture, which is not suitable for the development of cross-regional brands.
In familiar small cities, it is easier to improve the taste direction and retain the characteristics. For example: Suzhou, Hangzhou, Sichuan and so on.

This study is to explore "Exploring Business Model Innovation of Japanese Style Foodservice in Shanghai ". Among them, Wowprime group, the parent company of "Wu Yu", was founded in 1993.From the single operation of WangPin Steak to the current branch of Chinese food, western food, Japanese and other cuisine more than 20 brands. Under the strategy of three exhibition stores of Wowprime, which are small-scale, limited city and multi-brand, the business model involved is of great research reference value.

This research Through industry and consumer interviews, SWOT analysis, short - and long-term strategy analysis, white ground strategy analysis, blue ocean strategy analysis, and combined with the brand preparation and operation strategy of "Wu Yu". Aiming at innovation in business model of Japanese cuisine in Shanghai, we provide brand, product, service, decoration and other aspects of innovation direction and research reference. It also explains the limitations of this study and suggests possible future research directions.
