碩士 / 吳鳳科技大學 / 餐旅管理與餐飲安全研究所 / 107 / This study is based on the female consumers in a school or a church in Chiayi city. A total of 95 female consumers participated in this pilot study. A structured questionnaire was used as a data collection tool and the analyses of the the female consumers’ satisfaction on Ruyi Cake with Alishan Oolong tea, English Black tea and Japanese Matcha were performed. The preliminary results are as follows: Female consumers were satisfied with the size, sweetness, taste, taste of the cake, the taste of the stuffing, and the overall taste of the cake, indicating that the research and development of Ruyi Cake had met the expectations from the female consumers. The combination of Ruyi Cake with Alishan Oolong Tea or Japanese Matcha also met the female consumers' expectations. It means that the Ruyi Cake with tea combination has its potential in the retail market.
