The present work seeks to analyze the research carried out in Arraial do Cabo during the decades of 1930 to 1960 and to understand the dynamics of the process of artisanal fishing - from the sea - and salting of fish practiced in Arraial do Cabo, in order to know the products used in the food of its inhabitants and to record the recipes and ways of preparing - at the table - the fish and other foods consumed by the population between those decades. Among the subjects of these narratives are fishermen, fish merchants, women salt processors and witnesses of this period who shared their stories and memories during the interviews conducted to carry out this work / De uma vila de pescadores dedicada quase que exclusivamente à pesca a sede de uma grande indústria química de interesse nacional: desde a criação da Companhia Nacional de Álcalis (CNA) por decreto, em 1943, até o efetivo início das suas operações, em 1960, Arraial do Cabo viveu um processo de transformação econômica e social que despertou o interesse de pesquisadores e instituições de pesquisa que buscavam conhecer mais sobre os hábitos e costumes da população local, que tinha a pesca como sua principal fonte econômica e como centro da vida social dos seus moradores. O presente trabalho busca analisar as pesquisas realizadas em Arraial do Cabo durante as décadas de 1930 a 1960 e entender a dinâmica do processo de pesca artesanal – do mar – e de salga de peixes praticados em Arraial do Cabo, com o intuito de conhecer os produtos utilizados na alimentação dos seus habitantes e de registrar as receitas e formas de preparo dos peixes e demais alimentos consumidos pela população – à mesa – naquelas décadas. Entre os sujeitos dessas narrativas, destacam-se pescadores, comerciantes de pescado, salgadeiras e testemunhas desse período que compartilharam suas histórias e memórias durante as entrevistas realizadas para a realização deste trabalho.
