Variação sazonal da qualidade do leite cru refrigerado sob inspeção federal proveniente de indústrias e laticínios da região Nordeste / Seasonal variation of quality of bulk tank milk with Federal Inspection from of Dairy Industry in the Brazil Northeast

The data analyzed were obtained from 116.989 samples of bulk tank milk collected from industries that have an account at the Federal Inspection Service (FIS).The samples were separated into three periods (I,II,III), according in its first phase of IN-51. Was using PROC GLM to study the comparison of means by Duncan’s test and PROC CORR to analyzed the correlation coefficient (r). The fat varied more, with average of 3.66%, protein and lactose had amplitude of 0.04% between periods, and the average of 3.16 and 4.41%, respectively. Higher values of SCC were observed in the months from May to July (594.33 to 625.28 thousand cells/mL), while TBC the largest values occurring in May and June (1308.54 and 1333.83 CFU/mL). Was observed significant differences in milk components between states, especially with regard to hygienic quality. TBC showed significant and negative correlation with all constituents except fat and SCC. The chemical composition, SCC and TBC influenced between periods and months of the year. / O objetivo deste trabalho foi estudar a influência sazonal sobre a composição química, contagem de células somáticas (CCS) e contagem bacteriana total (CBT) de leite cru refrigerado na região Nordeste. Os dados de análise foram obtidos de 116.989 amostras de leite de tanques coletadas pelas indústrias que tem cadastro no Serviço de Inspeção Federal. As amostras foram separadas em três Períodos (I, II, III), de acordo com aplicação da IN-51 na sua primeira fase. A comparação de médias foi realizada através do teste de Duncan utilizando o PROC GLM e a correlação linear (r) entre as variáveis através do procedimento PROC CORR. O teor de gordura apresentou maior variação, com média de 3,66%; a proteína e a lactose tiveram amplitude de 0,04% entre os períodos e apresentaram médias de 3,16 e 4,41%, respectivamente. Maiores valores de CCS foram observados nos meses de maio a julho (594,33 a 625,28 mil cel/mL), enquanto para CBT os maiores valores ocorreram nos meses de maio e junho (1308,54 e 1333,83 UFC/mL). Observaram-se diferenças significativas nos componentes do leite entre os Estados, principalmente no que se refere à qualidade higiênico-sanitária. A CBT apresentou correlação significativa e negativa com todos constituintes, exceto gordura e CCS. A composição química, CCS e CBT, sofreram influência entre os Períodos e os meses do ano.
