Morfometria, rendimento de carcaça e composição do filé do beijupirá (Rachycentron canadum) cultivado em tanques-rede em mar aberto no litoral de Pernambuco

Morphometric data were taken to estimate the length-weight relationship, condition factor (K) and the yields of carcass and fillet. The proximate composition and the profiles of amino acids and fatty acids were determined in the fillet of at least six fish from each size class. With the exception of snout length, head height and eye diameter, morphometric measurements were not significantly different between size classes. There was no significant difference in the length-weight relationship between males and females (R² = 89.86). Yields of fillet (with and without skin) and carcass increased with fish weight and were higher in T4 (43.8, 38.8 and 59.3%, respectively). The proportions of fins, viscera and skin in relation to fish weight showed no significant difference, but the proportion of head and other wastes decreased with fish size. K was also found to increase significantly with fish size. The content of protein in the fillets decreased with fish size, while moisture and lipid contents were inversely related. High levels of lysine, arginine and leucine were detected, while the most abundant fatty acids were linoleic (18:2n-6), oleic (18:1n-9) and palmitic acid (16:0), as well as EPA (20:5n-3) and DHA (22:6n-3). The present results therefore confirm the high nutritional quality of fillets from cage-cultured cobia. / Exemplares de beijupirá (n = 223) cultivado em gaiolas instaladas em mar aberto no litoral de Pernambuco foram amostrados aleatoriamente e distribuídos em quatro classes de peso (T1 ≤ 1,0 kg, T2 = 1,01 a 2,0 kg, T3 = 2,01 a 3,0 Kg e T4 = ≥ 3,01 kg). A partir dos dados morfométricos, estimaram-se a relação peso-comprimento, o rendimento de carcaça (RCÇ) e de filé (RF), a proporção corporal e o fator de condição (K). A composição centesimal e o perfil de aminoácidos e ácidos graxos foram determinados em filés de, pelo menos, seis peixes de cada classe. As medidas morfométricas não diferiram significativamente, exceto no comprimento do focinho, altura da cabeça e diâmetro do olho. Não se observou diferença significativa na relação peso-comprimento para machos e fêmeas (R² =89,86). RF (com e sem pele) e RCÇ aumentaram de acordo com o ganho de peso dos peixes e foram superiores em T4 (43,8, 38,8 e 59,3%, respectivamente). As proporções de nadadeiras, vísceras e pele em relação ao peso dos peixes não apresentaram diferença significativa, mas a proporção da cabeça e demais resíduos diminuíram com o crescimento da espécie. K aumentou significativamente com o tamanho dos peixes. O conteúdo de proteína bruta nos filés decresceu com o peso dos peixes, enquanto a umidade apresentou relação inversa com o teor de lipídeos. Foram encontradas altas concentrações dos aminoácidos lisina, leucina e arginina, enquanto os ácidos graxos mais abundantes foram linoleico (18:2n-6c), óleico (18:1n-6) e palmítico (16:0), além de EPA (20:5n-3) e DHA (22:6n-3). Estes resultados confirmam a alta qualidade nutricional do filé do beijupirá cultivado em gaiolas.
