Length of WIC participation and parental knowledge about child feeding practices

Because children eat better when their parents use appropriate feeding practices, this study examined WIC participation and parental knowledge about child feeding practices. A Child Feeding Questionnaire was developed to evaluate parental knowledge about these feeding practices. The questions evaluated parents' knowledge about their responsibilities and the responsibilities of their children in feeding situations, the role of parental modeling when eating, appropriate snack habits, management of dislikes/picky eating, and the use of coercive feeding practices. The directors of four WIC clinics, with clients of differing sociodemographic status, agreed to participate in the study. The questionnaire was tested with and revised following work with clients in two of the four WIC clinics. The questionnaire was then administered to 403 parents during WIC certification visits. Cronbach Alpha reliability measures indicated that the reliability of the instrument was low. Therefore, no real conclusions could be drawn from the results. However, the data analyses did suggest some possible findings that would need additional study to verify their existance. ANOVA measures indicated that increased length of WIC participation was not associated with an increase in the total number of correct responses. Parental responds suggested that the majority of respondents understood the responsibility of parents for deciding what foods to offer (88.3), and when to offer food (71.7 %), the importance of healthy snacks in the diet of children (79.4 %), the need to set a good parental example with eating (92.6 %), and the importance of exposing children to foods that the children dislike (80.1%). However, one-third of the parents did not agree or know that children should be resonsible for deciding how much to eat when foods are being offered. In addition, the majority of parents (68.7 %) indicated that it was acceptable to substitute a food for one that is disliked by children. With respect to the use of coercive feeding strategies to get children to eat, parental responses reflected that many parents (46.7 %) did not feel that the use of rewards to get children to eat was not advisable. Based on the researcher's professional knowledge that WIC staff generally provide only nutrition information related to immediate problems, it was recommended that WIC staff members who provide nutrition education might serve the participants better if the education that they provided was directed at broader nutrition issues that parents face in guiding their children to eat well. Perhaps this education will indirectly alleviate immediate nutritional needs of the individual child and prevent the occurance of other nutrition problems. Psychosocial and cultural predictors of dietary fat intake in African American women

The present study explored whether African American women's level of dietary fat intake could be predicted by the variables of food preferences and preparation methods, support for healthy eating from family and friends, attitudes toward health, and acculturation. The present study also explored whether African American women's level of dietary fat intake could be predicted by the variables of food preferences and preparation methods, support for healthy eating from family and friends, and attitudes toward health, as moderated by acculturation.Information was obtained from five hundred and nintey nine African American females between the ages of eighteen and forty four. The women were recruited from a Midwestern univeristy, an undergraduate and graduate chapter of an African American sorority, two African American professional organizations, and through the snowball method. Particpants completed a Demographic Questionnaire, The Eating Behavior Patterns Questionnaire, The African American Acculturation Scale Short Form, The Health Attitudes Scale, The Social Support Scale, and The Eating Patterns Subscale on the Eating Habits Questionnaire. The data was collected via hardcopy and InQsit, an online survey program.Numerous preliminary tests were run to screen the data for outliers, linearity, and multicollinearity. Then, two forced entry multiple regressions were performed. In the first analysis, the overall model was a significant predictor of dietary fat intake. African American women's preferred foods, positive and negative support from friends, overallconcern for health, and intentions to adopt positive health practices are significant predictors of their level of dietary fat intake. In fact, these variables acccounted for almost half of the amount of variance in dietary fat intake. The second model was not significant and acculturation was not a significant predictor or moderator of dietary fat intake. Although acculturation was proven to be influential to dietary behaviors in African Americans in previous literature, the findings were not confirmed in this study.Multiple possibilies may explain the lack of significant findings between level of acculturation and dietary fat intake. The women in the current study were of a higher educational and income status than women in previous studies indicating significant findings. This difference in education and income, among other factors, may account for the difference in significant findings. The information gained in this study can be used to develop pschoeducational and treatment programs aimed at helping African American women prevent or treat health problems associated with poor eating habits. Effects of the National School Lunch Program and the School Breakfast Program on cholesterol levels of children ages 11-15

This study looked at how cholesterol levels of students, ages 11-15, who participated in the NSLP and the SBP would be affected compared with those students who only participated in the NSLP. Fasting blood samples (lOmL) were analyzed from 15 students who ate lunch only (L) and 15 students who ate both breakfast and lunch (BL) from the Driver Middle School food service at least 3 times a week. Blood was analyzed for changes in total cholesterol, HDL, LDL, and Triglycerides from baseline to 4 months. Results showed a significant decrease in total cholesterol and LDL, and a significant increase in triglycerides from baseline to 4 months in both the L group and the BL group. This may be attributable to hormone levels during sexual maturation in prepubescent and pubescent students. / Department of Family and Consumer Sciences

Quality of life and nutritional risk in elderly home-delivered meal recipients and non-recipients

This study evaluated the impact of receiving a home-delivered meal on the quality of life and nutritional risk of elders who were unable to attend congregate meal sites and who were unable to safely prepare a hot meal. Forty-three subjects on a waiting list were matched with a group currently receiving home-delivered meals. Matching criteria were functional needs measure, age, gender, and living arrangement.Home visits were conducted to collect the data and verify demographic information. Nutritional risk was assessed by the Nutrition Screening Initiative's Determine Checklist. Quality of life was measured across various domains including a global quality of life self-rating, mental health appraisal, functional ability, and food enjoyment. Two tailed t-tests failed to show differences in quality of life and nutritional risk between the groups at the 0.05 level of significance.In addition, the study reviewed the resources for meal preparation and grocery shopping possessed by the meal non-recipients that allowed them to remain at home without a meal provided. A significant difference was seen in the number of resources reported for meal preparation assistance with the meal non-recipient group reporting more informal resources. / Department of Family and Consumer Sciences

Energy and nutrient intake from agency meals (AM), other meals (OM) and total daily intake (TDI) of 61 day care and homebound subjects was studied for differences associated with age, income, education, marital status, living arrangements, gender, race, vitamin-mineral supplementation, Body Mass Index (BMI), Health Assessment (HA), Activities of Daily Living (ADL) and Instrumental Activities of Daily Living (IADL).The AM provided more than one-third of the recommended allowances for all nutrients except vitamin B6 plus energy for men. TDI was low because of inadequate OM intake. TDI was less than 100 percent of recommended amounts for zinc plus fiber for women. were most significantly associated with intake from OM and TDI followed by education and income. No age, marital status or racial effects were noted.The ADLs and the IADLs were problematic for most of the participants.
