Applying lean agriculture in organic apple production: Case study in peru

El texto completo de este trabajo no está disponible en el Repositorio Académico UPC por restricciones de la casa editorial donde ha sido publicado. / In this document it was proposed to apply Lean Agriculture, using the five Lean principles focused on the production of organic apples, which would allow to achieve a differentiated product, through the reduction of waste, improvements in the quality of activities and the commitment of the farmers. For this, a review of the literature that corroborated the impact of the methodology was carried out. In addition, surveys were conducted, taking a sample of farmers, which evidenced the gap. Finally it was obtained as a conclusion that after the implementation of the Lean Agriculture methodology in the processes, an increase in production suitable for sale in traditional and organic markets is achieved. In addition, the increase in quality achieved a percent of production suitable for exporting.

La producción de manzanas ha crecido a un ritmo de 0.02% anual desde el año 2000, según el Ministerio de Agricultura y Riego (MINAGRI). Además, la superficie cosechada de la manzana muestra una tendencia creciente en los últimos 10 años, sin embargo, no todo lo que se produce son productos de calidad, ni se explota la capacidad total de la superficie. Esto se debe a que el sector no cuenta con el apoyo necesario ni desarrolla nuevas metodologías o herramientas que permitan la mejora de sus procesos. El caso de estudio sobre el cual abarca esta investigación es sobre la producción de manzanas orgánicas en la región de Mala-Cañete. Los productores de esta zona no tienen registros históricos de las campañas de producción, por lo tanto, no planifican la cantidad de los recursos que se requiere para una próxima campaña. Asimismo, no exporta sus productos debido a que su producción no supera el porcentaje considerable de calidad que se requiere. ​Por ello, se propone diseñar e implementar un modelo de planeamiento, control y ejecución de la producción en el sector agrícola, para asegurar, incrementar y mantener un nivel de calidad exportable. Se concluyó que para que el piloto sea viable y replicable, es necesario incrementar el producto de calidad exportable en un 5%, escenario estable, ya que a partir de este punto se cuenta con un retorno de la inversión mayor a 1. Esta simulación contempla como un precedente, la apertura del mercado de exportación. / Apple production has grown at an annual rate of 0.02% since 2000, according to the Ministry of Agriculture and Irrigation (MINAGRI). Therefore, it is proposed to design and implement a model of planning, control and execution of production in the agricultural sector, to ensure, increase and maintain a level of exportable quality. It was concluded that for the pilot to be viable and replicable, it is necessary to increase the exportable quality product by 5%, a stable scenario, since from this point, there is a return on investment greater than 1.
