The experiment was carried out in Francisco Beltrão (PR), in a vineyard of Niagara Rosada variety (Vitis labrusca L.) conducted in a trellised system during the 2016/2017 and 2017/2018 harvests. The experimental design was randomized blocks, in a 5 x 2 factorial scheme (0, 10, 20, 30 and 40% of defoliation x with and without cover) with three blocks of three plants per experimental portion. The temperature, air humidity and the incidence of mildew on the curls and leaves were registered. When ripe, the clusters were harvested, duly labeled and transported to the Unioeste post-harvest laboratory, where three clusters per plant of each portion were evaluated, thus determining the fresh biomass, length and width of the clusters, soluble solids content, pH, number of clusters per plant, production and productivity. It was concluded that the plastic cover consorted to the environmental conditions and the phytosanitary management can favor the physical-chemical quality and reduce the severity of mildew in the Niagara Rosada grapes, thus providing greater production and productivity. The use of defoliation does not favor the cultivation of Niagara Rosada in the southwestern region of Paraná.
