Como objetivos específicos investigamos as conexões entre a modernização da suinocultura e os diversos fatores da modernização agropecuária em geral no Paraná entre 1930 a 1995. As fontes primárias envolvem censos agrícolas e agropecuários do IBGE (1950, 1960, 1970, 1975, 1980, 1995), consulta a jornais do Paraná entre 1930 a 1970 (Hemeroteca Digital) e também entrevistas com antigos criadores de suínos (da época das chamadas safras de porcos). Apesar da criação de suínos datar de cerca de 10 mil anos de existência, a importância econômica da suinocultura no Brasil e em outros países nem sempre é devidamente reconhecida e explorada de um ponto de vista histórico e econômico. No sul do Brasil o suíno teve grande relevância econômica primeiramente com a banha, período este em que ela era utilizada praticamente em todas as refeições do dia, e também tinha finalidade de conservação de alimentos. Num momento subsequente, com o processo de refrigeração, os suínos tipo banha perderam espaço para as raças de suínos tipo carne, animal este com maior propensão a produção de carne, devido a demanda exigida pelo mercado consumidor e as indústrias de carnes. Esses animais antes criados soltos passam a ser produzidos no modelo de confinamento, espaço este com restrição de movimentos do animal, para obter a máxima conversão de cereal em carne. No Paraná, a suinocultura tem sido muito relevante na histórica econômica do estado no século XX. / This dissertation investigated the economic history of swine modernization in - Paraná, Brazil, mainly from 1950 to 1980. As specific objectives we investigated the connections between the modernization of swine farming and the various factors of agricultural modernization in general in Paraná between 1930 and 1995. The primary sources include agricultural and agricultural censuses of the IBGE (1950, 1960, 1970, 1975, 1980, 1995), consultation of Paraná newspapers between 1930 and 1970 (Digital Hemeroteca) and also interviews with former pig breeders crops of pigs). Despite the domestication of pigs dating to about 10,000 years of existence, the economic importance of pig farming in Brazil and in other countries is not always properly recognized and exploited from a historical and economic point of view. In the south of Brazil the swine had great economic relevance primarily with lard, a period in which it was used practically at all meals of the day, and also had food preservation purposes. At a later point in the cooling process, the lard-type pigs lost space to the meat-type pig breeds, which were more likely to produce meat, due to the demand by the consumer market and the meat industries. These previously created loose animals are produced in the model of confinement, with restriction of animal movements to obtain the maximum conversion of cereal to meat. In Paraná, swine farming has been very relevant in the historical economy of the state in the twentieth century.
