Isolamento e seleção de leveduras produtoras de fator "killer" para aplicação na produção de bebidas alcoolicas

Seiscentos e vinte e três linhagens de leveduras foram isoladas de amostras de frutas, caldo e mosto de usinas produtoras de álcool e testadas quanto a produção de fator "killer". As linhagens Y-161-1, Y-167-5, Y-500-4L, Y-500-7R, Y-548, Y-769-9R, Y -769-9RL e Y-769-11 L, identificadas como Saccharomyces cerevisiae foram capazes de produzir fator "killer" que mata as leveduras comerciais Fleischmann e Itaiquara. As linhagens Y -66-1 e Y -1131 identificadas como Hansenula sp e Candida sp respectivamente, foram capazes de matar a levedura Torulopsis glabrata ATCC 15126 (padrão "killer" K11) e não apresentaram atividade "killer" contra as leveduras Fleischmann e Itaiquara. Quando avaliadas quanto à capacidade fermentativa em melaço de cana contendo 24% de açúcares totais a 25°C, as leveduras S.cerevisiae Y-167-5 e Y-500-4L apresentaram maior rendimento de etanol que a levedura Fleischmann enquanto as linhagens S. cerevisiae Y-161-1, Y548, Y-769-11L apresentaram rendimento de etanol similar a levedura Fleischmann. A levedura S. cerevisiae Y-500-4L apresentou maior espectro de ação, maior atividade "killer" e maior rendimento de etanol entre as leveduras testadas / Abstract: The objective of this research was to screen yeast cultures for the production of the killer factor and fermentative capacity for the production of alcoholic beverages. Six hundred and twenty three yeast strains were isolated from fruits and from sugar cane juice and must from alcohol producing plants and tested for their production of killer factor. The strains Y-161-1 Y-167-5 Y-500-4L Y-500-7R Y-548 Y-769-9R, Y-769-9RL and Y-769-11L, all identified as Saccharomyces cerevisiae, were shown to produce the killer factor, capable of killing the commercial yeasts produced by Fleischmann and Itaiquara. The strains Y -66-1 and Y -1131, identified as Hansenula sp and Candida sp respectively, were shown to be capable of killing the yeast Torulopsis glabrata ATCC 15126 (standard killer K11) but did not show killer activity against the Fleischmann and Itaiquara yeasts. With respect to their fermentative capacity, using sugar cane molasses containing 24% total sugars as raw material and a temperature of 25°C, the yeast S. cerevisiae Y -167 -5 and Y-500-4L showed greater alcohol production than Fleischmann yeast whilst the strains S. cerevisiae Y-161-1, Y-548 and Y-769-11L showed alcohol yield similar to the Fleischmann yeast.
