La presente investigación se realiza con la finalidad de poder diseñar una planta productora de vinagre a partir de la uva de descarte, por lo cual se consideraron tres objetivos principales, en el primero se determinó la demanda del producto a través de un estudio de mercado teniendo en cuenta la producción nacional e importación del vinagre y considerando un porcentaje del 35% de la demanda proyectada, así mismo se estableció el precio del producto el cual será de $/1,07/litro, siendo aproximadamente S/4,12/litro, el segundo objetivo consistió en realizar un estudio técnicotecnológico, para ello se realizó el análisis de manera macro y micro, dando como resultado que la planta estará ubicada en la región de Ica y el área que se va requerir es de 2,155,46 m, finalmente para el tercer objetivo se realizó la evaluación económico financiera considerando los costos y gastos del proyecto, en el cual se obtuvo un TIR de 40,16% y un VAN de S/611 321 soles, demostrando así la rentabilidad y viabilidad del proyecto. / The present investigation is carried out with the purpose of being able to design a vinegar production plant from discarded grapes, for which three main objectives were considered, in the first the demand for the product was determined through a market study having Taking into account the national production and importation of vinegar and considering a percentage of 35% of the projected demand, the price of the product was also established, which will be $/1.06/liter, being approximately S/4.12/liter. , the second objective was to carry out a technical-technological study, for which the analysis was carried out in a macro and micro way, resulting in the plant being located in the Ica region and the area that will be required is 2,155, 46 m2, finally for the third objective, the financial economic evaluation was carried out considering the costs and expenses of the project, in which an IRR of 40,16% and a NPV of S/611 321 were obtained, thus demonstrating the profitability and viability ity of the project.
