Quatro variedades de cana-de-açúcar foram testadas quanto à aceitabilidade sensorial, a saber: IAC86-2480; IAC 91-2195; RB72-454 e SP81-3250. A variedade RB72-454 foi a mais aceita entre os provadores em relação à acidez, doçura e em termos globais. Através da metodologia de planejamento fatorial, procurou-se a melhor combinação entre acidez (pH) e doçura (°Brix). A maior aceitação sensorial foi na faixa de pH acima de 4,0 e °Brix acima de 15. No processamento asséptico, o caldo formulado foi submetido ao binômio 141°C/10s . No enchimento à quente, o caldo foi submetido ao binômio 110°C/10s e envasado a quente (85-95°C). Os três lotes produzidos foram submetidos aos testes de esterilidade comercial, contagem microbiológica, análises físico-químicas e análise sensorial durante estocagem a temperatura ambiente. Os lotes produzidos pelo sistema asséptico apresentaram uma estabilidade de 30 dias, de acordo com os resultados obtidos nas análises sensoriais durante este período. O lote envasado à quente apresentou estabilidade de até 60 dias, onde não foi observada diferença estatisticamente significativa entre as amostras estocadas a temperatura ambiente frente às amostras controle. O sistema de envase à quente mostrouse mais eficaz, em relação ao escurecimento do produto, quando submetido às diferentes temperaturas de estocagem e ao reduzir em 100% a atividade das enzimas peroxidase e polifenol-oxidase / Abstract: The aim of this work was to evaluate two thermal processes in order to obtain stable sugarcane (Sacharum ssp) juice at room temperature in glass bottles. Firstly a sensory evaluation was carried out on four sugarcane varieties: IAC86- 2480; IAC 91-2195; RB72-454 e SP81-3250. Sensory evaluation was done by a group of 27 panelists. According to the evaluation, the best scores were obtained from variety RB72-454 in terms of appearance, sweetness and flavor. The experimental design methodology was applied to obtain the best combination between pH and °Brix based on the results. There was a tendency to a better sensory acceptance when the pH was > 4,0 and °Brix was > 15. Two thermal processes were applied to sterilize the juice. Firstly the juice was submitted to 141°C / 10 sec, then aseptically filled in glass bottles previously sterilized. In the second process, the juice was submitted to 110°C / 10 sec and filled into glass bottles at 85-95°C. Physical-chemical changes, microbiological counts and sensory acceptance were evaluated during its storage. The aseptically processed juice was sensorially stable for 30 days at room temperature and the hot filled juice was up to 60 days. These results indicated that the hot fill system was more adequate for sugarcane juice preservation in terms of sensory acceptance, physical-chemical changes and enzyme inactivity / Mestrado / Mestre em Tecnologia de Alimentos
