The purpose of this dissertation is to draw an entrepreneurial plan with the intent to increase the occupancy rate of a recreational object in Bílé Poličany. In the theoretical part, first I deal with drawing an entrepreneurial plan (importance, principles of preparation, structure), then I present a brief overview of organisations dealing with tourism. A big part also pays attention to internet marketing. In the practical part the theoretical knowledge is applied in the entrepreneurial plan to increase occupancy rate of the recreational object in Bílé Poličany.

Horská chata na Kralickém Sněžníku / Cottage in Kralický Sněžník

The master’s thesis topic is a project of a low-energy cottage. The cottage is situated in Kralický Sněžník near Jeseník and it is designed for forty customers. The house is designed as a detached house with two floors and with one basement and with a gable roof. A substructure is from a system blockpanel of a concrete and a heat insulations. The structural system of a superstructure is designed from a timber frame and a heat insulations. The indoor shell is formed from a plasterboard. The house shell is covered by heat insulations. The main entrance is located to the south. It leads to a hall with a reception. On the ground floor we can find a restaurant which is situated in the left part of the cottage. On the ground floor we can also find a room for disabled people and in the north-eastern corner are situated WC for people. The first floor is reachable via stairs from the entry hall. Upstairs there are seven rooms and four bathrooms with toilets. Two rooms of them have a ensuite bathroom. All of the rooms are enterable from the hall. Five of them have a window to the south side and other two rooms have a window to the north side. In the basement there is an utility room a boiler room a laundry a workshop and stocks.

Cottage Cheese from Ultrafiltered Skimmilk by Direct Acidification

Pasteurized skimmilk at 4°C was acidified to pH 5.8 with 85.5% phosphoric acid (136g H3Po4;100 kg skimmilk), then warmed to 54°C and ultrafiltered to a protein concentration 9.1 ± 0.2%. The retentate was heated to 76.5°C for 16 s then cooled to 2°C. Phosphoric acid (85.5%) was added at a rate of 3.41g per kg retentate. The acidified retentate was slowly warmed to 29.5 °C (3°C/5 min) when the pH was checked. The pH at this point was no lower than 5.4. Heating was continued until a temperature of 32.2°C was reached. Glucono delta lactone was added to the retentate (17.6 g/kg retentate) and left undisturbed for approximately 80 min. The curd was cut at pH 4.7 with 0.64 cm curd knives and allowed 10 min for syneresis. Permeate obtained from the same lot of milk was acidified to pH 4.8 (66 g H3Po4;100 kg permeate), then added to the curd at 32.2°C (three parts permeate to four parts retentate) and used as a cooking vehicle. The curd was cooked to 59°C in 90 min. The curd was held at 59°C for 10 min, drained and washed once with ice water. Cream dressing containing 12.5% fat and 3% salt was used at the rate of two parts curd to one part dressing. Control cottage cheese was produced by a direct acid method from the same skimmilk used to produce ultrafiltered curd. Use of ultrafiltered skimmilk retentate for cottage cheese making resulted in 2.24% more curd (corrected to 20% solids) and 2.24% more curd per kg original milk protein than the control. However, satisfactory firmness in UF curd required slightly more than 20% solids in the final product. Sensory evaluations indicated that creamed cottage cheese was not significantly different (p

The master's thesis is divided into two parts. The term „property“ and also terms dealing with segment of the vacation properties are defined in the theoretical part. Then there are defined different types of prices and valuation. This part also deals with the fact, that affect the selling price. Price maps and their importace at present are discussed in the last chapter. The practical part deals with procedure of creation of the price map, whose byproduct is creation a form for the estimation of the usual price. The region is defined here, including charakteristics of individual location, followed by a description of the property market in the region and analysis of the data base for creating price maps. The price map in text and graphic vision and the form are output. Estimation of the selling price of the property is generated after filling the form. The applicability of the form is verified by determination of the selling price of farm house in Slatina nad Zdobnicí. This property is also being valued according to price regulation in parallel. The practical part is completed by comparing of both achieved prices.

The eighteenth century witnessed the expansion of rural industries. One of the more important was the production of linen cloth in the North of France. This study focuses on a village in southeastern Cambresis, Montigny, and examines the relationship between landownership and agricultural occupations on the one hand and artisanal and mercantile activities on the other. Weaving was introduced in the village some time in the seventeenth century but only became a major occupation in the eighteenth and the primary one in the nineteenth. This activity was controlled through numerous parallel channels, but the emergence of rural middlemen constitutes a dynamic breakthrough. They flourished despite constraints until the Revolution which re-channeled some of their energies. Although dependent on a supplementary income, the peasant-weavers did not sever their roots with the land. They continued to work as seasonal agricultural labourers, and were fully integrated within the agrarian community.

Master’s thesis deals with the history and development of the prices of holiday cottages around Brno dam. The introductory part defines the construction for recreation according to the legal regulations, describes the history of Brno dam and its development. The following chapters describe the valuation of holiday cottages according to the previous and present valuation regulations. In the experimental part is performed the analysis of the obtained prices. Two holiday cottages are valued according to the valuation regulations from 1965 until today. For these holiday cottages are performed also market valuation for the period 2014 to 2018. At the end of the master’s thesis is performed discussion of the results and final comprehensive evaluation.
