<p>Laws and regulations govern the school kitchens in Sweden. The municipality controls how well the school kitchens obey those laws. An annual fee covers the municipality’s expenses for the public control of the school kitchens. To be able to calculate this annual fee, a risk evaluation needs to be done. Our final project covers on part of the risk evaluation, the third risk factor that is a part of the risk classification model. </p><p>The study is based on a survey among school kitchens at preschools and elementary schools in Halmstad municipality. The purpose of the study is to investigate the knowledge among the employees regarding the handling of special food for allergic children. A survey has been distributed to the employees in the school kitchens and the result shows that the knowledge among the school kitchen employees in Halmstad municipality regarding this type of special food is good. Regardless, many employees still feel a need for further education due to continuous research and updates in their field.</p><p> </p><p>The major difference found between preschools and elementary schools is the amount of working space available in the kitchens. Most preschools lack a separate workspace for special food and shortage of staff and lack of time also contributes to the difficulties to prepare special food for children with allergies. The preschools also lack the ability to prepare the special food before the other food. </p><p>All schools, including both preschools and elementary schools, also need to improve their filing system. Most schools for example did not always file their recipes, which is important to be able to track certain ingredients. </p><p>As conclusion, all schools should look over their filing routines. This is crucial to be able to increase the safety precautions when handling special food at the schools in Halmstad municipality.</p>
