Effectiveness of a Parent Health Report in Increasing Fruit and Vegetable Consumption Among Preschoolers and Kindergarteners

Patterns of fruit and vegetable consumption begin in childhood and persist into adulthood. Educating parents regarding appropriate dietary requirements for preschoolers is critical to supporting their appropriate growth and development. The purpose of this study was to determine whether a parent health report (including information about the child's fruit and vegetable consumption and recommendations regarding how to increase fruit and vegetable consumption) resulted in a greater fruit and vegetable intake in preschoolers and kindergarteners. Results from both the open trial and the randomized-controlled trial suggest that the parent health report may be a beneficial tool to increase vegetable consumption in preschoolers and kindergarteners. Increases in vegetable consumption can lead to the establishment of lifelong habits of healthy vegetable intake and decrease risk for chronic diseases in the future.

Examination of Adolescent Physical Activity and Overweight Levels

Research suggests declines in physical activity may occur after age 12. The purpose of this study was to determine the relationships between adolescent physical activity, BMI, and nutrition. Adolescents, ages 12-17 (N = 223), wore pedometers for 11 consecutive days and completed a nutrition survey, the Youth Adolescent Questionnaire. Activity levels did not differ among the ages of 12-17 year old adolescents, and boys were more active than girls. There was a low, but significant relationship between BMI and physical activity levels for both boys and girls. Energy intake was not related to BMI or physical activity levels in boys or girls.

The Effect of an Acute Bout of Exercise on Food Motivation, Energy Intake, and Total Physical Activity in Normal-Weight and Obese Woman: An Event-Related Potential Study

This study examined the effect of acute exercise on food motivation, energy intake, and total physical activity in normal-weight and obese women. Participants of both groups were matched (except for Body Mass Index) and conditions (exercise vs. non-exercise) were randomized and counter-balanced. Eighteen normal-weight and 17 obese women completed an exercise and non-exercise day, each performed on the same day of the week. Exercise was performed on a motor-driven treadmill at 3.8 mph and 0% grade for 45 continuous minutes. To test for food motivation, participants were shown a continuous stream of pictures of food and flowers (control) while neural activity was monitored. Data were analyzed using a 2-group x 2-exercise condition x 2-picture type repeated measures analysis of covariance on event-related potential (ERP) amplitude and latency. Dietary records were analyzed using the Food Processor SQL nutrition software. Physical activity was monitored using a GT1M accelerometer. For both groups under both conditions, ERP amplitude was higher and latency was lower for food pictures compared to flower pictures. When normal-weight and obese women were combined, there was a significant condition*picture type interaction for late positive potential (P=0.04) with participants showing less neurological response to food pictures following a 45-minute exercise bout. Exercise did not alter energy intake. However, the exercise condition resulted in significantly more total physical activity, moderate intensity, vigorous intensity, moderate-to-vigorous (MVPA) intensity activity, and less sedentary time than the non-exercise condition. There was a significant group*condition interaction for MVPA (P=0.043) with obese women showing less MVPA than the normal-weight group. The sample of women studied did not show neurological differences in response to pictures of food based upon BMI. However, exercise decreased neurological responses to food, which may indicate lower food motivation. A supervised and planned exercise bout dramatically increased total physical activity in normal-weight and obese women compared to a day without planned exercise. There may be some negative compensation for MVPA in obese women following a 45-minute exercise bout compared to normal-weight women.

Studies on the Dietary Intake of Fluoride and the Concentration of Fluoride in Urine Over the Course of Pregnancy

Indiana University-Purdue University Indianapolis (IUPUI) / The use of maternal urinary fluoride as a biomarker of prenatal fluoride exposure in epidemiology studies is increasing. However, the knowledge on maternal exposure to fluoride and its biomarkers, has not increased alongside. The objective of this dissertation was to improve our understanding of the dietary intake of fluoride (a major source of fluoride exposure), and spot urinary fluoride levels during pregnancy. Two secondary data analyses utilizing data from the Early Life Exposures in Mexico to ENvironmental Toxicants (ELEMENT) project were conducted, in a population of women living in a salt-fluoridated community. The first study estimated the dietary intake of fluoride over the course of pregnancy and assessed the influence of compliance with the dietary recommendations of intake of beneficial nutrients for pregnancy (calcium, iron, folate and protein) on the dietary intake of fluoride. The second study compared spot urinary fluoride in women during pregnancy and non-pregnancy (using one-year postpartum as a proxy for the non-pregnant state) and assessed associations between dietary factors (dietary fluoride intake, addition of table salt, calcium intake from diet and supplements, and dietary acid load) and urinary fluoride levels at each state. Results revealed that the median dietary intake of fluoride in pregnant women was 0.7 mg/day, increased with gestational age and in women who were moderately and highly compliant with recommendations of intake of beneficial nutrients for pregnancy. On the other hand, spot urinary fluoride levels during pregnancy did not significantly differ with those of women one-year postpartum, increased with gestational age, and decreased in calcium-supplemented women only during pregnancy. The dietary intake of fluoride, calcium, and dietary acid load were not associated with urinary fluoride in either state. Finally, reporting the addition of table salt to meals was associated with an increase in urinary fluoride only at one-year postpartum. The studies in this dissertation highlight the need for a deeper understanding of fluoride exposure and its biomarkers in the pregnant population. / 2022-07-01

Thermodynamics and charge exchange of the new BMW six-cylinder engine

The BMW in-line six-cylinder engine has been modified and introduced to production in the new BMW 3 Series model. Its major features include variable intake and exhaust camshaft timing, a new induction system with resonance charging, a turbulence-generating system in the intake ports and a new exhaust system with two closed-loop, coupled catalysts integrated into the exhaust manifold. The cam timing of both camshafts can be adjusted continuously within a range of 40° crank angle (CA) for the inlet cams and 25° CA for the exhaust cams. The turbulence-generating system supplies combustion air to the engine during part load operation and produces the necessary charge motion to run the engine with greater valve overlap at low loads and speeds. Its combination with variable camshaft timing results in lower fuel consumption and exhaust emissions that meet the LEV emission standard. In addition, the variable cam timing raises the torque curve of the unthrottled engine, particularly at low engine speed. The maximum values for torque and power output are unchanged, but maximum torque is reached 500 r/min earlier than with the previous engine.

Assessing Dietary Nutrient Adequacy and the Effects of Season-Long Training on Body Composition and Metabolic Rates of Men's Division I Collegiate Basketball Player

The success of performance in basketball may rely on both optimal body composition and nutrient intake. To our knowledge this is the first study to examine dietary intake adequacy and season-long effects on body composition and metabolism. The purpose of this study was to examine seasonal changes in body composition (BC), resting metabolic rate (RMR) and respiratory quotient (RQ), while also examining the dietary intake adequacy of NCAA DI male basketball players. BC, RMR and RQ were assessed during pre-season, in-season, and post-season (September, December, and March), while dietary assessment was collected in September and February. Results of this study indicated that players consumed inadequate amounts of energy (ppp< 0.0001) relative to the recommendations for exercising individuals during the October baseline period. However, following analysis and consultations, athletes increased intake and received adequate amounts of energy and protein during follow-up, yet carbohydrate (p=0.0025) was still significantly lower. Results also revealed that there was a decrease in percent body fat (%BF) during season, an increase in Lean Body Mass from preseason to postseason, a peak in RMR during season and an increase in RQ post season. These findings indicate that significant metabolic and body composition changes occur in players over the season and suggest nutritional strategies employed concomitantly may be beneficial.

The Effects of a Vegetarian Diet on Iron Status in Female Students

Iron deficiency anemia is the most common nutritional deficiency disease worldwide (Mahan & Escott-Stump, 2004). Iron deficiency anemia is of major concern especially in women of child bearing age and those who follow a vegetarian diet. The objective of this study was to compare the nutrient and hematological values related to iron status in female university students following a vegetarian versus following a nonvegetarian diet. This study took a cross sectional analysis of 39 female students at California Polytechnic State University (Cal Poly State University) in San Luis Obispo, CA. Of the participants 19 were following a vegetarian diet and 20 were following a nonvegetarian diet. To participate, individuals had to be female, current Cal Poly students, and between the ages of 18 and 22 years old. Those taking vitamin or mineral supplements, medications (including oral contraceptives), smokers, and pregnant women were excluded. Characteristic, demographic, and anthropometric data were collected through interview, nutrient intake was accessed by averaging three day food records, and hematological parameters were measured. Statistical analysis used nonparametric techniques including the Mann-Whitney Wilcoxon statistical test for demographics and baseline characteristics, the Spearman Rank Correlation analysis and Fisher’s Exact statistical test for associations between vegetarians and nonvegetarians. Results found no significant difference in iron intake between vegetarians and nonvegetarians, however nonvegetarians had higher mean intakes of iron at 16.82 (SD 6.36) mg/day compared to vegetarians at 14.84 (SD 7.10) mg/day (p=0.482). A similar percentage of vegetarians at 66.7% (n=8) compared to nonvegetarians at 65% (n=13) were under the Recommended Daily Allowance (18 mg per day for females 19 to 30 years of age) for mean iron consumption. There were slightly more nonvegetarians at 10% (n=2) compared to vegetarians at 8.3% (n=1) under the Estimated Average Requirement (8.1 mg/day for females 19 to 30 years of age) for mean iron intake. No significant difference was found for serum iron, serum ferritin, transferrin saturation, and total iron binding capacity between vegetarians and nonvegetarians. Finding revealed serum ferritin, the most common iron status indicator, was lower for vegetarians at 23.16 (SD15.54) ng/mL compared to nonvegetarians at 27.75 (SD 18.01) ng/mL (p=0.47). When looking at the stages of iron balance, there was greater percentage of vegetarians with hematological results (serum iron <40 µg/dL, total iron binging capacity of >410 µg/dL, transferrin saturation <15%, and serum ferritin <10 ng/mL) indicating iron deficiency anemia or stage IV negative iron balance compared to nonvegetarians. There was no significant correlation between iron intake and serum ferritin, however results showed a positive association (r=0.28, p=0.09). In conclusion, vegetarian participants are believed to be at higher risk of developing negative iron balance compared to nonvegetarians due to lower iron consumption and lower serum ferritin concentrations. Female university students following a vegetarian diet should be educated on iron deficiency anemia and prevention of iron depletion.

Screen use objectively assessed from images captured by a wearable camera and its association with BMI and energy intake

PURPOSE: Television (TV) viewing remains a popular form of screen time for adults. However, it is important to understand the obesity risks associated with other screens, not only TV, in a changing media landscape. This study aimed to examine the association between energy intake, BMI, and screen time using the data obtained from the AIM-2 wearable camera. METHODS: The AIM-2 device was used by (n=18) participants for seven consecutive days. Three days of images from the device were analyzed for energy intake, and 1 of these days was coded for screen use (i.e., TV, phone, and computer), the number of screens, and screen duration while eating. A preliminary analysis of screen use in relation to BMI and energy intake was conducted. Potential confounders (age, sex, race, ethnicity, marital status, and education level) were considered. RESULTS: Phones were the most used screen type, and TV alone was not watched by any participants. While eating, screens were used 73% of the time. Participants with the highest screen time usage consumed more total energy than those with the lowest screen time usage (p<0,.05). This difference was attenuated when controlling for duration of eating, perhaps suggesting that higher screen time usage may lead to an extended eating duration and, thus, higher intakes of energy. There were no statistically significant associations between any screen time variable (type, duration, or number of screens used) and BMI. Screen time usage was examined during four time periods: before 11:00 am; 11:00 am-2:59 pm; 3:00 pm-7:59 pm; 8:00 pm, and later. There was a statistically significant positive association between higher screen time after 8:00 pm and total daily energy intake (P=0.005). CONCLUSION: Eating while using a screen can be objectively assessed using the AIM-2 device. Our data agree with recent studies showing that phones and computers are used more than TV. While there were no significant associations between any of these screen variables and BMI, data from a single day in this study suggests that those with the highest screen time usage tended to have higher energy intakes. In addition, there was also a statistically significant association between screen time usage while eating later in the evening (after 8:00 pm) and total daily energy intake. These preliminary results should be interpreted with caution due to the small sample size and the availability of only one day of screen use and energy intake. Future studies should examine more than one day and use wearable cameras for objective evaluations of screen use.

The Theory of Compromised Eating Behavior

The purpose of this inquiry was to develop substantive theory that describes the social process that influences the eating behavior of hospitalized older adults. Undernutrition or the inadequate intake of dietary nutrients necessary to maintain health, contributes to negative health outcomes such as increased morbidity and mortality in hospitalized older adults. Inadequate dietary intake is a risk factor for undernutrition. Despite the availability of vast resources within the hospital environment, hospitalized older adults have inadequate dietary intake. Undernutrition has been studied from a dietary intake perspective; however, why dietary intake remains inadequate is unknown. Inquiry of eating behavior and the social process that influences eating behavior will provide insight into why dietary intake remains inadequate. The Quality Health Outcomes Model was the conceptual framework that guided this inquiry. A qualitative, grounded theory methodology was used to investigate this phenomenon. Participants included acutely ill, hospitalized older adults and their healthcare providers. Field work included observation, interview, and document review to better understand the actions, interactions and perceptions of participants as to the process that influenced hospitalized older adult eating behavior. Datum was compared, coded, and analyzed using the constant comparative method. The Theory of Compromised Eating Behavior was developed and describes the process of compromise older adults experience related to eating behavior while hospitalized. The Theory has four stages: self-indication, joint-action, negotiation, and action. Hospitalized older adults choose to compromise their health should they eat inadequately or alternatively compromise their acculturated foodways should they eat adequately. Additionally, healthcare providers compromise their beliefs when older adult patients do not eat adequately. Older adults are at risk for negative health outcomes due to inadequate dietary intake while hospitalized. The meaning of hospital food and mealtimes differs from traditional food and mealtimes for the older adult, resulting in compromise. Intervention which enhances the meaning of food and mealtimes for the older adult during hospitalization may improve dietary intake and nutritional outcomes.
