This dissertation was aimed at evaluation of growth and basic indicators of carcass value of sumavska sheep lambs and its crossbreeds with texel sheep. In all there were 79 lambs monitored of following genotypes; S100, S 50 T 50, S 75 T 25, T 75 S 25. This research was executed at a family farm in town of Proseč. In scope of this evaluation of lamb growth live weight at birth, in 70 days of age, 100 days of age and before slaughter was observed. Investigation was carried in terms of observation (for full monitored file) effect of genotype, gender, litter size, genotype`s interaction vs. gender and genotype`s interaction vs. litter size on growth ability indicators, more precisely on live weight and lambs` daily weight gain. Genotype impact, gender, litter size, genotype`s interaction vs. gender and genotype`s interaction vs. litter size had highly provable influence on most of monitored live weights. With regards to the daily weight gains, highly provable influence of the above mentioned indicators on majority daily weight gains was recorded here also. Results of check slaughter show that genotype had provable influence on most carcass value's monitored indicators. Highly provable genotype effect was recorded on live weight before slaughter, slaughter age, slaughter ready body weight, skin ratio, kidney ratio and flesh ratio. Conclusive impact was recorded on yield and kidney weight. To conclude this from genotype`s perspective, the highest gain was recorded on S 75 T 25 and the lowest gain on T 75 S 25. From carcass value point of view, relatively best results were ascertained for crossbreeds S 50 T 50.

The findings are verified in the business plan of integrating a particular farm to this commodity chain. Business plan is economically evaluated and contains recommendations.

This thesis deals with the evaluation of qualitative indicators of pork in hybrid combinations (LW x L) x D and (LW x L) x PIC 337. Introduction of the thesis is focused on the importance of pig farming, the importance meat as food, its nutritional value and consumption of pork. A review of literature thesis describes the quality of the meat, the factors acting on it, carcass value and evaluation by the SEUROP system. To experiment was ranked boar breed Duroc and final boar PIC 337. The experiment was conducted in a commercial pig breeding ZOD Žichlínek on the farm Sázava, and evaluated indicators of carcass value and meat quality. Evaluation of the results showed that barrows have more growth ability than gilts. Gilts contrary showed better conformation and were placed in better grades.

The evaluation of the effect of sex on carcass value and chemical composition of lamb meat was the main aim of this disertation. The monitoring was carried out at an orgnic farm in Proseč where 8 ewes and 8 rams of genotype Š 75 T 25 (Š - Šumavská sheep, T - Texel) were involved in the study. The first part of the disertation shortly summarizes history and current situation in sheep breeding in the Czech Republic. Afterwards, there are described sheep and lamb marketing, the slaughter processing and chemical composition of lamb meat. In the next part there are described the other details of our monitoring. Within the frame of our study we determined daily gains of lambs, carcass yield, conformation and fattiness as well as the proportion of leg, shoulder, kidney and kidney fat. The effect of sex on selected offals was evaluated simultaneously. In terms of chemical composition, we determined the contents of dry matter, protein, crude nitrogen, intramuscular fat (IMF) and ash. The rams had a higher daily weight gain and carcass yield, while ewes had higher fattiness, a proportion of kidney fat and a proportion of the leg. In terms of offals evaluation, rams had higher proportion of liver while ewes had higher proportion of spleen. Despite expectations, there was no significant difference in content of IMF, however rams had higher contents of dry matter and protein. Although there have been observed differences between sexes in some indicators, these differences were not statistically significant.

The aim of the thesis was to obtain information on the effect of hybrid combination, gender and weight of cold JUT on carcass ratios in final pig hybrids. 1742 pig carcasses of four hybrid pig combinations were included in the carcass monitoring: PIC, Topigs, Danbred and France Hybrides. The average carcass weight was 89 kg with an average muscle mass of 59.5%, represented mostly by quality classes S and E. The higher fat content of pigs versus gilts was shown. With increasing slaughter weight, the proportion of muscle decreased and the proportion of fat increased.

Obchodní zatřídění jatečných prasat podle SEUROP - systému

The aim of this thesis was a trade classification of slaughter pigs by the SEUROP system in selected utilitarian breed. The experiment was conducted in a farm in Myslejovice. The first part of the thesis deals with the literature review on this topic. An experiment was conducted to assess the slaughter weight, the conformation, the inclusion in classes of the SEUROP system. The integral part of the experiment was to evaluate the production of pigs for slaughter. The obtained data were properly analyzed using mathematical and statistical methods. The experiment was conducted on 314 pigs during the period of 6 months. The results showed that 73% of pigs were classified as a class E, the average price for 1 kg of carcass was 37.82 CZK. The class S included 14% of the slaughter pigs with the average price of 37.3 CZK per 1 kg of carcass. The average conformation for the entire period amounted to 57.6%. The highest conformation of 59.52% was observed in the month of December. The conformation was much lower during the summer months.
