Biologicky aktivní látky v medu

This thesis is concerned with biologically active substances in honey. The first part describes the characteristics of honey, its origin and its composition. It also deals with the polyphenols and importance of honey on human health. Polyphenols are the subject of many studies and was therefore chosen as representatives of the major biologically active substances. It describes their characteristics and representations of honey. The second part deals with the determination of polyphenols. For this purpose were selected 14 phenolic acids, which was determined in 8 kinds of honey. Analysis was performed by liquid chromatography mass spectrometry (HPLC-MS). Extraction was carried out by extraction by liquid-liquid and solid-phase extraction using two solvents, diethylether and ethylacetate. These methods were then statistically compared. The results show that the highest average content of phenolic acids was in honey pine honeydew and honeydew mixed. Generally, honeys contain most p-coumaric acid.

The practical part of this thesis consists of free main chapters: the method for the determination of polyunsaturated fatty acids by gas chromatography; the effect of addition of Spanish Sage seeds on the content of PUFA n-3 in the tissues of animals; the effect of EPA and DHA content of blood plasma lipids and fatty acid in the tissues of rats. The aim was to increase the content of PUFA n-3 in animal tissues improving the ratio of n-6/n-3 fatty acids, and reduced levels of total cholesterol and LDL cholesterol levels and to raise HDL cholesterol. The experimental part of this work was supported by the IGA. The effect of addition of Spanish Sage seeds on the content of n-3 PUFA in the tissues of animals was analyzed in quail eggs, chicken meat and free species of insects to qualitative and quantitative analysis of fatty acids.The content of PUFA n-3 in animal tissues was increased in groups with addition of Spanish Sage seeds in the diet (P < 0,05). The addition of Spanish sage seeds to feed the animals had an impact on the sensory properties of their products. The effect of EPA and DHA content of blood lipid levels and fatty acids composition in rat tissues was achieved by the addition of salmon and palm oil to feed animals. The group with the addition of salmon oil in the diet had lowered total cholesterol, LDL cholesterol and triglycerides as compared to the control group and the group with the addition of palm fat in feed (P < 0,05).
